Denver food truck owner ready to see more industry growth following new law
DENVER (KDVR) — Indian food with a modern twist: That is how Chef Charles Mani, the mind behind Mile High Tikka Express, describes what he brings to the streets of Denver. 'My philosophy for cooking is I brought the fine dining, street food into fine dining. That is how I had my sit-down restaurant, now I try to bring that same fine dining into the streets,' Mani said. It cuts out extra paperwork for things like fire safety — requiring food truck operators to have just one license across all areas of operation. Mani says it's interacting with the customers and making food how they want, which got his food truck up and running a year and a half ago. 'Over here, you come out and you meet a different kind of people and you get a different kind of opinion and our job is to provide exactly what people want to eat,' Mani said. Mani says he hopes this will lead to more growth in the industry. 'In a very short period of time, I created a lot of friends. People recognize each other by name and we support each other,' Mani said. Polis weighed in on the bill signing, saying: 'I'm excited that we are making it easier for food trucks to serve up delicious food in different cities and towns across the state. Charity issues update following theft of food truck Oasis' beloved food truck was stolen in the early hours of the morning Oasis' food truck has returned to its rightful home after it was stolen in early April (Image: John Myers ) After weeks of uncertainty and distress Cardiff-based charity Oasis has announced the recovery of its stolen food trailer thanks to the efforts of South Wales Police and widespread support from the local community. The distinctive bright blue trailer – an integral part of Oasis' mission to support asylum seekers and refugees – was stolen from the charity's headquarters in Splott during the early hours of Saturday, April 5. The theft left staff, volunteers, and supporters devastated, especially as the trailer had become both a beloved local fixture and a vital source of income. In a Facebook post shared on May 15, more than a month after the theft, Oasis said: "Many people will know our Oasis Food Truck was stolen a few weeks ago... We are delighted to share that South Wales Police have been successful in tracking down our food truck and brought it back to Oasis today. We hope this will lead to justice for those who stole it. The food trailer, known for serving Middle Eastern and Latin American cuisine, has played a dual role in recent years – raising funds through sales at festivals and events, including the Green Man Festival, while also providing refugees and asylum seekers with valuable work experience and skills development. First acquired in 2022 the trailer quickly became a lunchtime staple at Oasis' headquarters in Splott and across community events. CEO of Oasis, Susie Ventris-Field, previously told WalesOnline the theft had been discovered by staff the morning after the trailer disappeared. She said: "A colleague came onto site on Sunday morning and noticed that the trailer was not there… It's a real shame right now – it's so sunny out so we would've been reopening this week. We are coming into the time of year when our food trailer would be going out to events, weddings, and festivals." The loss affected not just the charity's financial stability but also its community presence and volunteer morale. "It's been a bit of a staple of Oasis, an opportunity for us to make really good connections with not just local communities but communities across Wales," Susie said. Although Oasis is still assessing the condition of the recovered trailer the charity remains hopeful. In their Facebook statement they thanked both South Wales Police and the public for their support, noting that community sharing of the appeal had been "essential" to the recovery. "Food is and always will be at the heart of Oasis," Susie added. "Our commitment to providing food will continue to be a big part of what we do." MIDLAND, Texas (KMID/KPEJ)—In this week's Basin Bites, we visited Ana's Cuisine, a food truck in Midland that is one of the few spots offering authentic Filipino dishes. Owner Ana Capule opened up shop about a year ago when she told her husband that she wanted to have her food truck. Her motivation was to see if she could really do it and spread Filipino culture to West Texas. Basin Bites: Permian Basin Bakery 'Anna's Cuisine is really an authentic Filipino food,' says Capule. 'I told my husband, I want to open one. I want to see how it goes. If West Texas people like it, well, there you go. We have a Filipino food in Midland.' Menu items that Ana's Cuisine has are pancit, lumpia, BBQ skewers, caldereta, halo halo, and much more. In addition, Ana also takes pre-orders for cake. Newport News Excellent Educator allows students to create a business plan
Newport News, Va. (WAVY) — WAVY-TV 10 is celebrating excellent educators all month long! In Newport News, Tanesha Koonce works to prepare her middle schoolers for life long after grade school. 'Ms. Koonce knew at a young age that she wanted to be a teacher. She takes an active role in cultivating student leadership. During her career, she has worked tirelessly to connect students with entrepreneurship opportunities,' according to school leaders. Mrs. Koonce is the family and consumer sciences teacher at Booker T. Washington Middle School. 'We're preparing them for careers and preparing them to be good contributors to society,' said Koonce. For the past 22 years, Mrs. Koonce has made learning fun by creating classes to review nutrition while cooking, or methods to pay off student loan debt. 'It gives them life skills, and they see the bigger picture. We get them the bigger picture thinking, critical skills and things that are essential for them in their life, along with their education,' said Koonce. The eighth-grade class created business plans. 'They got to choose what type of food truck they wanted to open. We had Caribbean, dessert and Mexican food. They pretty much demo the recipes, like the Food Truck challenge. I just wanted to give them another perspective on if you didn't go to college, you could be an entrepreneur or in entrepreneurship, and how much money you could make,' said Koonce. 'For the project, they had to turn in a business plan. They had to create a menu, price their menu out and create a budget for opening the business. They had to research other businesses. It's a complete business plan. If they wanted to, they could take it to the SBA and get a loan!' It's life lessons like this that earned Koonce the 2024-2025 Newport News Middle School Teacher title. 'It's nice to see students take advantage of the opportunities I offer them,' said Koonce. 'You don't have to learn what's in the curriculum, but if you learn something, I feel like I've done my job perfectly!' Koonce is also the Athletic Director at the middle school. She works to prepare students to make strategic decisions ahead of high school. 'I talk to them about academic scholarships and keeping up with their grades. I also talk to them about other scholarships, opportunities that are available, not just sports scholarships. I do encourage them to participate in extracurricular activities to be well-rounded students, so if they choose college, if they choose other career fields,' said Koonce. Many of her students are taking what they learn in the classroom into their future. 'It's awesome to see them excel every day. A few of them have become entrepreneurs. I have had students start businesses, and they say it's a result of my class, so it's nice to see a lot of them say they went to college because of some of the things I expose them to in my class,' said Koonce. Downtown Cleveland Inc. 's popular summer food truck series returns this week. State of play: What began as Walnut Wednesday more than a decade ago has grown into a downtown lunchtime staple that this year will appear at different locations each weekday. The "delicious medley of local eats and live local music" runs through Sept. 30. What they're saying: The summer food truck series "supports efforts to bring employees back to work, recruit and grow businesses, attract new residents and welcome visitors," Downtown Cleveland president and CEO Michael Deemer said in a statement. "The combination of local cuisine and live music turns downtown into a destination — not just a place to clock in and leave."
