You can use any fish fillet you like for this dish, but firmer types work best – think monkfish, gurnard, brill or even turbot if you're feeling fancy. I sometimes use ray cheeks, too, or cod cheeks, which also have a firm meaty texture. Overview Prep time 10 mins Cook time 5 mins Serves 2 (or 4 as a light main) Ingredients 500-600g firm white fish fillets (such as monkfish, gurnard or turbot), skin removed and cut into approx 60-70g chunks olive oil, for frying 500g mussels, well cleaned 175ml any white wine or cider 2 tbsp chopped parsley 100g samphire, trimmed freshly warmed bread, to serve (optional)

Thunder emerged victorious in an exhilarating netball tournament. The Island Netball League (INL) 'Long Bomb' Tournament, sponsored by Tombleson Associates, took place in Cowes on June 29, attracting eight teams. Advertisement The tournament introduced an exciting twist: the Goal Attack or Goal Shooter could score three points by shooting from outside the area. This rule heightened the excitement of each game, with cheers resonating across all three courts every time a 'Long Bomb' was scored. Thunder wins exhilarating netball tournament (Image: Island Netball League Committee) After a thrilling morning of netball, Thunder clinched the top spot with 35 points, closely followed by Gurnard with 31 points, and Shorwell 1, who secured third place with 27 points. The final standings were as follows: Thunder (35 points), Gurnard (31 points), Shorwell 1 (27 points), Shorwell 2 (23 points), Family Goals (19 points), Storm (15 points), Shorwell 3 (11 points), and Kiss My Pass (6 points).
