Celebrate Eid Al Adha with Revolver's Fiery Take on an Indian Classic This Eid Al Adha, Revolver Dubai – a modern Indian grill – presents a limited-time dish inspired by the grandeur of Kashmiri wazwaan feasts, reimagined with its signature fire-driven flair. Rooted in Kashmiri culture, wazwaan is a traditional multi-course meal typically served at celebratory occasions. Rich, slow-cooked and predominantly meat-based, it is a tribute to generosity, craftsmanship and flavour. Crafted by Chef Jitin Joshi, known for his Michelin-starred pedigree and modern approach to Indian cuisine, this Eid special is a bold celebration of spice, technique and tradition. Available from Friday 6 to Sunday 8 June, during lunch and dinner service, the Meatball Claypot Rice is Chef Jitin's interpretation of a Nargisi Kofta and Kashmiri Goustaba. Priced at AED 175, it features delicately spiced Wagyu mince encasing a soft-boiled egg, slow cooked in a fragrant mint and fennel sauce. It is served atop Japanese Nanatsuboshi rice finished over live embers in a claypot for depth, texture and theatre. Located in The Opus by Zaha Hadid, Revolver brings the spirit one of Singapore's hottest restaurants to Dubai, combining fearless flavour, open-fire cooking and a high-energy dining experience.

Revolver's chef pop-up series continues this June with a collaboration between two acclaimed culinary talents. Chef Hadrien Villedieu of Chez Wam joins Chef Jitin Joshi of Revolver to present a bold French-Indian menu where poetic ingredients meet spice, and precision comes together with fearless flavour. Priced at AED 395 per guest, the one-night only experience unfolds over eight sharing courses and four signature snacks, each dish crafted as a dialogue between two distinct culinary identities. Revolver, led by Chef Jitin Joshi, is a modern Indian grill known for its open-fire kitchen and contemporary approach to spice. With over 27 years of experience across Michelin-starred restaurants in London and landmark venues in Dubai, Jitin reinterprets Indian flavours with precision and depth. Joining him is Chef Hadrien Villedieu, the mastermind behind Chez Wam, recently featured on 50 Best Discovery. Based at St. Regis Gardens, Chez Wam is a Dubai dining destination where French technique meets global curiosity, all anchored by Hadrien's sharp eye for detail and signature unpretentious flair. The collaboration menu features standout creations like the Foie Gras Papadum, where French parfait meets spice-laced chutney and loomi yoghurt; the Tandoori Lamb Chop with coriander chimichurri and reduced lamb jus; and the Chai Masala Crème Caramel, a dessert that marries French structure with the nostalgia of Indian spice and a Parle G crumble. Shaped by intention, this pop-up sees Chef Jitin and Chef Hadrien explore the intersections of French and Indian technique with clarity and purpose, as each dish is thoughtfully developed to reflect their distinct yet complementary perspectives. A menu that commands attention The standout dishes promise an explosion of flavours, like the lobster manchurian, a n original and classic from Revolver Singapore; this dish is made with Australian rock lobster and a sauce from Tangra in Kolkata where immigrants from China / Tibet settled and created a cuisine with their original recipes and local ingredients. The portobello mushroom steak is marinated in ginger garlic paste and house-ground spices for 24 hours, grilled for a smoky depth, and paired with lentil-based brown butter hummus and charred Madras onions. Revolutionary non-alcoholic beverages The concept's Vol. ZERO.1 beverage program, crafted by Beverage Director Vitor Hugo Lourenco, is a deep dive into bold profiles and intricate techniques. Highlights include the crystali-no, a fizzy, creamy mix of cold brew Oolong tea, honey, vanilla, and non-alcoholic bubbles, the bubbli – a crisp and aromatic blend of Tanqueray 0.0, plum verjus, and falernum, and the Serene, a unique umami twist with paprika milk punch and red bell pepper. A one-of-a-kind iftar experience Revolver Dubai introduces an exclusive Iftar menu designed to celebrate Ramadan with a unique fire-driven approach. First look: Inside Revolver, Singapore's sleek experimental Indian export
Find at Revolver, fire, flair and edge… Singapore-born Michelin-select name Revolver is opening its doors in Dubai, bringing the signature open-fire grill dining concept to the city with a menu that honours traditional South Asian culinary heritage with an experimental touch in tow. 3 of 12 Helmed by Chef Jitin Joshi, internationally acclaimed with 27 years of experience under his belt opening and leading several Michelin-select kitchens, including the now two-Michelin-starred Gymkhana in London, Revolver is inspired by fire and flair, and offers an experience that reflects as such. Everything at Revolver is inspired by the theatrics of film and stage, from the name to what it entails and the spice-driven menu, much of which makes masterful use of charcoal. The ingredients are traditional and the techniques, innovative. The interiors are done up to serve the big-and-bold ethos of the concept, with low lighting and sleek interiors, dripping in gilded gold, texture and shine, and fixtures evocative of bullets and revolvers all around. The star of the show is the massive centrepiece – a twisting round of glowing bullets suspended from the ceiling. There is also a private dining room that seats parties of up to 12 and can be booked out for special occasions. The space is complemented by an outdoor terrace that seats up to 40 and a wine cellar with a stock of vintages and pairings. What's On the menu? The focus of the experience lies at the heart of the restaurant – the grill, the brazier and the tandoor, providing smoke, heat and action-packed flavours to every dish. It's placed in the open so every guest has a front-row seat to the spectacle of open-fire cooking. Some of Chef's creations for the menu include the signature smoked chutoro tartare, featuring an eclectic mix of ingredients like fermented mustard leaves, preserved bamboo shoot, akuni and dried anchovies; burrata street style inspired by the spice and nutty profile of the Chinese Dan Dan noodles and served with youtiao or savoury churros, and lobster manchurian, rich and umami with a sauce originating from Tangra, Kolkata. The beverage selection is inspired by the 12 elements of nature, and features a series of signature cocktails drawing from the same smoky profiles. Some of the options include Unlighted, a concoction of Don Julio Reposado, Talisker Storm, Rinomato Deciso Rosso and Campari infused guava, smoked with Palo Santo Wood; and Drift, modern and fruity featuring The Botanist Gin infused ginger, vanilla and hazelnut, complemented by Belle de Brillet Pear Liqueur and Telmont Réserve Brut Champagne.
