It's pretty earth-shattering to realise something cooked about your favourite childhood shows, especially when there's something involved.

To sum up the realisation — Choppa put crab meat on a burger and finally understood why Mr. Krabs was gatekeeping the Krabby Patty Secret Formula. The money-hungry restaurant mogul would put his own species (crabs) into burgers to "make a killing on the expensive market-priced delicacy". Chilling stuff.
This would explain why we don't really see other crabs on the show beside the group known as the Penny Pinchers.
