Tate Dining Room collaborates with LMO Freshly Baked this month for modern Chinese flavours
LMO Freshly Baked brings back its acclaimed The Tastemaker Series for the fourth time, and this time they're doing a collaboration with chef Vicky Lau, the culinary mastermind behind the two-Michelin-starred Tate Dining Room. Known for her East-meets-West approach, Lau has created an exclusive menu for LMO Freshly Baked that's rooted in Chinese heritage but framed through modern techniques and presentation. Four time-limited grab-and-go dishes will be available until August 31, featuring chef Lau's take on the chicken scallion oil rice with the shredded chicken and scallion focaccia sandwich ($78), and a Hong Kong-style sour and spicy borscht soup ($48). Vegetarian friends are well catered for with the yuzu Sichuan pepper mushroom salad ($78), and there's also a sweet taste of Hong Kong with the exotic manga sago drink ($48), an upgraded version of the classic local dessert enhanced with pineapples, bananas, and passion fruit. Curated by chef Richard Ekkebus of Mandarin Oriental The Landmark, Hong Kong, this Tastemaker Series pulls together some of the most influential names in our city's culinary landscape, and has them reinterpret their signature flavours for a new, casual concept. Previous collaborations have included Yardbird, Bar Leone, The Chairman, and Little Bao, and we're excited to see what's next in the months to come. The Chairman x LMO Freshly Baked
For the month of July, the Mandarin Oriental's acclaimed LMO Freshly Baked is presenting one of Hong Kong's most distinguished culinary destinations, The Chairman. We've most recently heard from them when the Cantonese fine-dining venue was ranked in the annual World's 50 Best Restaurants 2025 list. The LMO Freshly Baked's Tastemaker series gets homegrown culinary icons to reimagine some of their most distinctive dishes, and The Chairman has created three time-limited offerings that are an homage to Cantonese flavours, and exclusive to this pop-up. There's the Szechuan Spicy Peppercorn Beef Pie ($98) featuring tender beef short rib, shiitake mushrooms, and spices packed into a flaky pastry; and a Lotus Root and Celtuce Salad ($98) with lily bulb, baby corn, and shrimp in a refreshing pine nut dressing. Finally, there's also the Char Siu Sauce Chicken Thigh Sandwich ($78), where the juicy chicken is glazed in The Chairman's signature char siu sauce, served on fluffy Hokkaido milk bread with caramelised onions. This is the first time that The Chairman has ever translated their award-winning food into a casual, grab-and-go format – and a great opportunity to try out offerings from a Michelin-starred restaurant for under $100! Proceeds from LMO Freshly Baked also go to supporting Mindset, a charity that raises awareness and supports mental health.
