If Hong Kong was a dish, what would it be? Top chefs plate up their answers
Pizzas, hamburgers and sushi – these are just some of the foods that have come to define certain cultures. But a cuisine is about more than an iconic dish, and every dish contains much more than its ingredients. It can reflect not only a historic time and place, but also modernity and a chef's creative flair. Advertisement So if Hong Kong was a dish, what would it be? That is the question put to Luke Armstrong, head chef of L'Envol restaurant at The St Regis Hong Kong, and Alicia Castillo, pastry and bakery chef at The Ritz-Carlton, Hong Kong. 'It would be something vibrant,' Armstrong says, acknowledging the city's multicultural dining scene and availability of the finest ingredients. 'But what defines me is saffron and white asparagus.' He continued: 'If Hong Kong was a dish, it would be charcoal-grilled Japanese Wagyu beef from Kagoshima with Loire Valley [French] white asparagus cooked en croute and a nice spring bearnaise. A distinct influence of Hong Kong, Japan and France.' Luke Armstrong, head chef of L'Envol restaurant at The St Regis Hong Kong, acknowledged Hong Kong's multicultural dining scene and global selection of ingredients in the dish he created to represent the city. Originally from Perth, Western Australia, Armstrong – who arrived in Hong Kong last November after working at acclaimed restaurants in Europe, Singapore and Japan – has developed an affinity for the city's mix of calm and frenetic energy. Advertisement 'I like to live my life with order and chaos,' he says. 'That's what you see when you walk through the city; some parts are chaotic, and some parts are very peaceful.'

Motherwell striker bagged glory double but doesn't know where his future lies
Luke Armstrong netted twice in the 3-0 midweek win over Kilmarnock Luke Armstrong played a major role in Motherwell's 3-0 midweek win over 10-man Kilmarnock, but admits he has no idea where his future lies. The on-loan Carlisle United striker took his tally to four for the season with a double either side of Callum Slattery's strike, putting the Lanarkshire side in with a chance of clinching seventh place when they visit Ross County in their finale on Sunday. That was Armstrong's first goals since netting in a 2-1 win over Rangers at Ibrox on March 1, and he says conversations need to be had over the coming days. Carlisle boss Mike Williamson was sacked in February, and Armstrong was brought to Fir Park by former gaffer Stuart Kettlewell, leaving an uncertainty at both clubs. But the 28-year-old has made no secret of his desire to stay at Motherwell. He said: 'I'm not any clearer about what the future holds. There hasn't been any discussions as of yet. 'It could happen over the next few days, it might happen after the last game. 'All I've got to do is focus on the next game and see what's going on. 'From a Carlisle perspective, we still don't have a manager officially appointed. 'I don't know what they want to do with me. So there is discussions that need to be had. 'I've thoroughly enjoyed it here and would definitely be open to something happening next year. 'Recently I haven't played as many minutes as I would've liked. That's obviously a discussion that you've got to have with the gaffer and what his plans are for next season, because I want to play as many minutes as I can. 'That's life as a footballer. The down side is the uncertainty – where you are going to be, what level you're going to be at, if you're going to play under a certain manager. 'There are loads of things that are uncertain – but it's still one of the best job in the world. 'Hopefully coming on and scoring a couple of goals gives him something else to think about.' Armstrong has enjoyed playing under new boss Michael Wimmer, and says his style of play suits him. He said: 'The team looks a bit more like what he wants now; it does take time. 'There is a lot of detail that goes into what he wants to do. He likes his video analysis and he likes to give us as much clarity as possible. 'I just want to be playing and scoring goals at a team that suits me. 'There are discussions to be had. Carlisle are going to be in the National League. 'I'm not saying that I am not going to play National League. You want to play as high a level as possible, but I've just got to go have discussions and see what the future holds.' On breaking his goals drought, Armstrong said: 'I am delighted to get the goals and the win. We were banging on the door for the whole of the second half. 'Some great balls came into the box and I finally got on the end of one. 'It was comfortable after that. We played some good stuff and created loads of chances. 'It's always a feeling of relief for a striker if you haven't scored for a while. 'I've been in and out of the team recently. I haven't played too many minutes of late. 'So to come on and get a goal, I'm delighted. The second one is probably the furthest out I've scored! 'Normally it's in the six-yard box. I can't kick it further out from there! So I'm happy with that.'

'O'Donnell & Slattery shine as Miller signs off in style'
We asked for your views on Motherwell's 3-0 win against what some of you said:Stephen: I thought Luke Armstrong looked fit, strong and powerful when he came on. He was a real menace to Kilmarnock's back line, which was rewarded with two good goals. Fingers crossed we can keep him into next season. Regarding Lennon Miller, he has been a good player for Motherwell, but I think it is best for all parties involved that he leaves to advance his career and provide Michael Wimmer with added cash to carry out the annual rebuild of our squad. Between those on loan and out of contract, we may lose half of the first team this Three good goals against ten men, which helped. Yet again, Callum Slattery was the best player, we need to build a team around him for next season. We do need some players with speed and guile, and robust A shaky first half for Motherwell, struggled in the final third. Second half, Armstrong made a huge difference up top. Stephen O'Donnell and Slattery were brilliant from the back to attack. Amazing send off for Some good first-touch football, and with a man advantage, always looked like scoring. Now time for a clear out and bring in some quality, rather than A very welcome win to end our home season. Killie struggled with a red card and their manager situation, but we eventually got the job done. Miller deserves the accolades, and he's a fantastic example for other young players, as well as parents, when you think about how his Dad has helped him. I really hope we do some decent business in the summer, to replace Miller and also to get a striker who'll get us 20 goals a season.D: A sluggish first half where we had most of the possession but didn't make it count in the final third, red card for Killie absolutely correct, however and thereafter we controlled the game when we have notoriously struggled against 10 men over the years. The introduction of Armstrong for Harry Paton was a masterstroke, going two up front and dominating the second half, and scoring three good quality goals. Look forward to the summer and the recruitment from Wimmer.
