The vegan chef and writer talks bouncing back from burnout, break-up and anxiety, and the Hoffman Process Holly White, vegan chef and writer, could not look anymore the maven of a perfect life. She's just turning 42 and has bought a house in the past year – she's full of the joys of TikTok house-cleaning hacks – and today she's giving a talk at Bloom, listed alongside the likes of Diarmuid Gavin and Rachel Allen. Her vegan recipes are available at the Merrion Hotel and she has collaborated with, among others, Insomnia and Camile Thai. Right now, she looks settled and happy in her life. But she would be the first to admit that the last few years have been challenging.

Meet the mum and daughter uniting the worlds of fashion and farming: ‘I love that people don't really understand what we're at – there isn't anything else like this'
Fashionistas and farmers Mareta Doyle and Ciara Hunt have combined their two loves to create a unique festival in Kinsale that they hope will kickstart a farm-to-fashion movement It sounds like it might have something to do with fancy wellies, perhaps, or maybe a glitzy offshoot of the National Ploughing Championships. 'Fashion & Farming' is an unusual combination of words, agree Mareta Doyle and her daughter Ciara Hunt, but there is method to their apparent madness. The pair arrive at Dublin's Merrion Hotel unintentionally coordinated, each as chic and subtly glam as the other. Doyle has arrived off the train from Cork, while Hunt is fresh off a plane from London. They immediately launch into excited chatter about their accidentally matching black outfits — not a welly in sight — and their new joint venture: a festival that aims to bridge the gap between the worlds of fashion and farming, exploring how they complement each other and sparking conversations about how both industries can be more sustainable going forward.

Patrick Guilbaud on bringing fine dining to Ireland, retirement plans, and not getting that third Michelin star
This week's episode features Patrick Guilbaud , the French chef who brought fine dining to Ireland 44 years ago. Situated beside the Merrion Hotel in central Dublin, Restaurant Patrick Guilbaud continues to thrive with two Michelin stars. Guilbaud moved to Ireland in the early 1980s when the country was in recession, and it wasn't always plain sailing. A visit from the sheriff for unpaid debts led to a partnership with successful businessmen Lochlann Quinn and Martin Naughton that helped put the restaurant on a sound financial footing. It also led him to relocate the restaurant to the Merrion Hotel site which was developed by Quinn and Naughton. A move that he considers to be the making of the business. In February Guilbaud received the Distinguished Leader in Business award at the Irish Times Business Awards.
