Hi-tech kitchen sets benchmark in student welfare

Representative Image MANGALURU: In a significant step towards modernising student welfare infrastructure, the Ambika Group of Educational Institutions in Puttur has set up a state-of-the-art kitchen that blends efficiency, hygiene, and technology. Run by the Nattoja Foundation Trust, the institution invested in a fully automated cooking facility designed to serve hostel students with nutritious meals promptly and hygienically. Every task, from chopping vegetables to final food preparation, is mechanised. There are machines to knead dough for chapatis, roll the dough into chapatis, transfer them to the cooking area, and even move the cooked chapatis to a designated tray. The machine can produce about 600 to 800 chapatis per hour. When needed, it can also be used to make pooris instead of chapatis. A steam system has been implemented for cooking rice, enabling boiled rice to be cooked in just 15 minutes and parboiled rice in 30 minutes, saving both time and fuel. Vegetables too can be steamed hygienically and efficiently using this system. It is also used for boiling milk. The mechanisation has helped us streamline operations effectively,' said Ganesh Prasad, Administrator, Ambika Group of Institutions. When thousands of children rely on us, it is our duty to care for them like our own. 'We must never allow even a moment when a child remains hungry. With the intent of ensuring a clean and tasty food supply at all times, we developed this hi-tech kitchen,' said Subrahmanya Nattoja, President, Ambika Group of Educational Institutions.
