The summer's biggest trend is a tariff-proof indulgence
The color of the summer is here, and it started with a chocolate bar. Pistachio (both the food and the color) is all the rage right now. The nut entered the limelight over the past several months after various food creators on TikTok popularized 'Dubai chocolate,' an indulgent chocolate bar filled with pistachio cream, tahini, and shredded phyllo dough. This spring, Dubai chocolate officially made its way into the mainstream, appearing as a cookie at Crumbl, a shake at Shake Shack, a chocolate bar at Trader Joe's, a donut at Krispy Kreme, and a returning latte flavor at Dunkin'. Demand for Dubai chocolate has spiked so high that pistachio producers in Iran exported 40% more nuts to the United Arab Emirates in the six months leading to March 2025 than they did in the entire 12 months before. Some stores have had to limit sales of the bars due to disruptions of the global pistachio supply chain. But it turns out that for customers in the U.S., there's a bonus to the trend besides an influx of tasty treats: The nut is relatively shielded from potential tariffs. Come what may, chances are that it's about to be a very nutty—and very green—summer. America dominates the pistachio market The U.S. is the top producer of pistachios globally, accounting for about 75% of the world's supply, according to Zachary Fraser, president and CEO of American Pistachio Growers (APG). The second-largest producer is Iran. The 2024-2025 U.S. pistachio crop harvest, Fraser says, was 1.1 billion pounds in-shell—'the third-largest harvest in the history of the industry.' So far, Fraser reports, the Trump administration's tariffs have not had an immediate impact on the nut's production. 'The industry is closely monitoring tariffs as the situation evolves, and we are active in the conversations with government officials to stay on top of the changing dynamics,' Fraser says. 'Continuing to invest in market development and new countries to drive demand is part of that strategy.' From APG's perspective, there's been a marked rise in interest in pistachios over the past several months. 'Recognizing the trending Dubai chocolate bar, it's been exciting to see the popularity of pistachios grow across many other food and beverage products,' Fraser says. 'We're seeing pistachios incorporated across baked goods, spreads, snacks, ice cream and more.' Pistachio goes beyond the bar Pistachios aren't staying confined to sweet treats, either. As the nut's flavor profile has risen into stardom, so, too, has its signature sage-green hue. In the past two months or so, pistachio green has exploded from the chocolate wrapper to fashion runways, mood boards, and even interior design. In March, Homes & Gardens called the hue designers' 'go-to color for spring and summer 2025.' In May, Harper's Bazaar noted that the 'gastronomic shade' defined recent fashion shows by Miu Miu, Prada, Alexander McQueen, Gucci, and others. The average American is also becoming enamored with the color. According to Pinterest global data from January to March 2025, searches for 'pistachio chocolate bar' surged 1,989%, while searches for 'pistachio outfit ideas' jumped 361% and those for 'pistachio green weddings' were up 285%.

Aromatic afternoon tea for 40th anniversary
TEAS from London Tea Exchange go beyond the usual blends. Instead, these offer something new to the palate. Executive chef Scott Brands has also curated an Afternoon Tea set paired with eight London Tea Exchange offerings. Drawing inspiration from Shangri-La's culinary roots and Malaysia's rich tea culture, Brands' menu weaves together delicate flavours and aromatic infusions. 'Infusing handpicked teas into the menu allowed us to add depth and subtle flavour. 'It's a celebration of craftsmanship, tradition and creativity, all in honour of the hotel's 40th anniversary,' he said. The three-tier afternoon tea set showcases savoury and sweet treats, some of which incorporate tea flavours. Brands with the tiered set serving sweet and savoury delights that honour the hotel's culinary roots and Malaysia's rich tea culture. On the savoury side, rectangular rillettes of fresh and smoked salmon were subtly lifted with the use of gently-roasted Lapsang Souchong tea offering a tinge of earthiness. A winning combination is the Eclair of Truffle Egg Salad topped with Trout Caviar and infused with Pistachio and Truffle Tea. The flavourful caviar and creamy egg salad are appetising. As for the Caramelised Onion Mini Quiche with Charcoal Goat's Cheese, the slightly tart, earthy flavours might be an acquired taste for some but I loved it. Other savoury delights included the Lobster Chive with Avocado and Cauliflower Cream, and Porcini and Oyster Mushroom in Baked Vol-Au-Vent. For a sweet indulgence, the Lavender Pear with Spiced Honeycomb is infused with fresh hints of lavender tea. The pear-shaped dessert with a floral aroma and soothing sweetness pairs well with the selection of teas. Meanwhile, the bittersweet chocolate slice is rich in flavour. Made using peach and apricot teas, the chocolate treat offered lovely citrusy notes contrasting beautifully with the deep cocoa finish. The duet of Salted Caramel Cheesecake Macaron plus Lemon Verbena and Chia Panna Cotta is a sweet-and-sour finale. As afternoon tea is not complete without scones, the classic Sultana and Vanilla Scones are served warm with clotted cream, raspberry jam and whipped butter in a nod to a timeless tradition. Tea selections on the afternoon tea set are Premium Rose Buds, Premium Bora Bora, Peach and Apricot, Premium Emperor's Palace Tea, Premium Sencha Sakura, Premium Milk Oolong, Pistachio and Truffle, and Premium Sea of Blossoms. Besides this, guests can delight in 40 types of exceptional teas. Among the highlights was the Premium Milk Oolong which I found quite memorable. The tea leaves are steamed with milk water to release a signature creamy and fruity complexity. Simply speaking, it tasted like milk tea without the milk or calories. Another unforgettable herbal tea is the Premium Cool Mint. The infusion of peppermint, lemongrass and sweet apples gave the drink a layered complexity that I found rather interesting. Fragrant peppermint and refreshing lemongrass dance on the taste buds at first sip before lingering sweetness of apple and liquorice root step in. The Afternoon Tea set is priced at RM220 nett for two persons with free flow of coffee and tea. It is available, at the Lobby Lounge, from 3pm to 6pm daily until June 30. Pista and Mango Sabudana Kheer by Chef Meghna Kamdar (on behalf of American Pistachio Growers) Ingredients: Milk – 1 litre Cardamom Powder – 4-5 pinches Sabudana – ½ cup soaked (soaked for 4–5 hours) Pistachio – ½ cup Mangoes – 2, chopped Method: Almond Mango Cake with Mango Cheese Cream by Chef Gopalasamy S Ingredients: For the Cake For the Cheese Base Cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Fold in the almond powder, then add the vanilla essence and mango purée. Pour the mixture into a mould and bake at 180°C for 15 to 20 minutes. Once baked, allow the cake to cool to room temperature. In a separate bowl, mix cream cheese, mango purée, and whipped cream until a thick cream forms. Pipe the cream mixture onto the cooled cake. Top with Alphonso mango chunks and serve. Summer Chilli Mango Brownie Pudding by Chef Gopalasamy S Ingredients: Method: Take fresh, well-ripened mangoes and extract the pulp. Mix the pulp with sugar and let it chill in the refrigerator. Dissolve agar agar in a little water and fold it into the mango purée. Pour the mixture into serving glasses and set them in the refrigerator to chill. Cut homemade brownies into cubes. Once the mango layer is set, remove the glasses and add brownie cubes to one side. Place the glasses back in the refrigerator to firm up further. Working from home is making companies more vulnerable to M&S-style cyberattacks, experts have warned. Joe Jones, boss of cybersecurity firm Pistachio, has told how the rise of hybrid working along with tools like AI voice simulation have 'changed the game' for hackers. He highlighted cases where workers have been tricked by AI into thinking they're speaking to their boss or finance team as scams become ever more sophisticated. It comes amid reports the hack on the major retailer, thought to have been carried out by notorious cyber criminals Scattered Spider, saw IT help desk workers duped into handing over access to company systems. So-called 'social engineering' attacks - targeting human vulnerabilities rather than system flaws - have become the preferred tactic of hackers, with a Mimecast study finding 95 per cent of data breaches last year were linked to human error. Jones, whose firm runs cyberattack simulations for companies, warned a new £16million UK Government package to ramp up cyber defences was only part of the equation. He said: 'AI voice simulation can now trick you into thinking you're speaking to your finance director, or an email can write exactly like your boss. 'Some of these hacks are very sophisticated and the increase of working from home since the pandemic has left us more vulnerable. 'While added investment into cybersecurity can help reduce attacks like this in the future, far, far more important than that is educating people on how to avoid an attack. 'Buying cybersecurity technology but not training human beings is like putting an expensive security camera and alarm system on your house and then leaving all the doors open.' The late April attack, which also affected Co-op and Harrod's, caused panic among the retailers with online orders suspended and store shelves lying empty. Experts including Jones and Jude McCorry, boss of Scotland's Cyber and Fraud Centre, warned the M&S hack - which the retail giant has now admitted saw personal data stolen - will likely lead to a 'wave' of phishing attacks targeting customers. McCorry said: 'We need to start thinking outside the box around this. 'Staff training (on cyber security) I think should be mandatory in organisations, and it should be mandatory in government as well. 'We should do cyber exercises the same way as we do fire drills. 'We rely on technology for everything - our internet banking, our shopping and how we pay, how we order things, how we click and collect and even how we get our food onto the shelves and into restaurants. 'This should be a wake up call. We hope maybe people will realise how delicate the system is.' She advised all M&S customers to change their password and ensure they're using different passwords on different sites, as well as two-factor or multi-factor authentication. 'Anyone with an M&S account should be extra cautious and stay alert for emails or texts claiming to be from the retailer.'
