On May 30 and 31, indulge in an exclusive 7-course menu crafted by Yuho Hozumi, Chef at Kimpton Shinjuku Tokyo, in collaboration with Haflidi Halldórsson, an Iceland-certified Master Chef. This limited-time experience showcases signature Icelandic ingredients such as seafood, lamb and Ísey Skyr. From cured Greenland halibut and redfish matsukasa-yaki to grilled lamb heart and Skyr ganache with whey caramel, each course blends tradition and innovation, with subtle Japanese influences.
