Slimy Comments And Banku: Let's Get Into This Okra Stew 'Food Swap' Today we have 3 Ghanaians making their versions of okra stew – the contestants we have for this episode of 'Food Swap' are Gabriella, David, and Eugenia. They break down the origin of okra stew, with Eugenia putting us on that it 'hails from the Volta region of Ghana' and shares its ingredients: a blend of peppers, okra, and it's the consistency of the sliminess and it must be served with banku. Banku is a half cassava, half corn dough mixture that you can eat with your hands (or if you're bougie like Eugenia, use a spoon. I'll take one please.). Eugenia kicks us off with her okra stew, whose recipe was passed down by her aunt. She keeps the traditional ingredients the same within her stew and also adds cow meat. To get the 'maximum sliminess,' she used baking soda. Time for the bites. Gabriella has her sentiments on the okra stew, calling it 'slippery' while David seems to be ready to eat. Gabriella said she would eat this while David says the banku tastes 'three days old.' Yikes. Now, David has a lot of comments to say so hopefully his okra stew is good. Final score: 14.5 Now, it's David's turn and after running down the ingredients he used from tomatoes, onions, and peppers, he shares he added meat to his and used goat's meat. He also used Welle, which is known as cow tripe made from cow's feet. Take to eat and Eugenia was appalled he had no banku on the plate. Gabriella seemed positive and while she's not a fan of Walle, she still was down to give it a try. Eugenia took her bite and wasn't feeling it, saying it was 'too salty.' Gabriella says while David's is better than Eugenia's, it's not as slimy and it's smoky. Errrrrgh – we were bamboozled folks. Gabriella picked up what was supposed to be meat, and it was just…the cow's skin. Not the food catfishing – a mess. Final score: 10.5 Now, it's Gabriella's turn. She learned how to make okra stew from her mother and she made sure to use palm oil in the stew while adding cow's feet, turkey necks, and goat with crab meat and scotch bonnet for that spice. Time to eat! First looks and they were gagged. It gave 10/10 for the presentation. Okay Gabriella . Now, first bites are in – David jumped up and gagged at how good it was. It was all smiles and positive vibes – David had to go to the green room to finish chile. Final score: 17 NOW WAIT A MINUTE — DUN DUN DUN Before we wrapped the episode, David gets disqualified.
