Crack of dawn delights at Eggbreak as the pop-up scrambles into the Spence
Egg-cuse the egg puns, but there's a rather 'egg-citing' pop-up at The Spence at Gleneagles Townhouse – London brunch hotspot Eggbreak has hatched a plan to conquer Scottish appetites.
For those early birds like me, this one is definitely worth cracking out of bed for and is guaranteed to set you up for the day. I didn't need to eat anything until dinner – now that's what I call staying power!
Running until 30 August, locals, visitors, hotel guests and members can indulge in Eggbreak's signature bold breakfast plates beneath the elegance of The Spence's glass-domed atrium.
This London institution is so egg-ceptional it's known for queues stretching out the door, but there's no waiting at The Spence – just the chance to enjoy their famously feel-good menu. On weekdays (0700-1030), selected Eggbreak favourites join The Spence's breakfast classics – keep an eye out for the little egg illustration to spot them.
Weekday (0700-1030) highlights include:

My Spicy Chicken Sandwich was the stuff dreams are made of – buttermilk-fried chicken, scotch bonnet jam, pickled ginger, cream cheese, a fried egg, all nestled in a potato brioche bun – that can only be described as 'clucking bun-derful!'
The drinks deserve equal billing. While the cool young things gravitate toward iced matchas, I was smitten with Eggbreak's legendary strawberry sunshine tea – a beautifully hydrating blend of strawberry purée, lemon juice and soda water. It was so refreshing, I ordered two.
Eggbreak takes their 'egg-pertise' seriously, serving over half a million annually using only free-range beauties from Fenton Farm, suppliers focused on sustainability and happy hens. In Edinburgh, The Spence champions local heroes – sourcing eggs from Nith Valley, smoked salmon from George Campbell's Glen & Co, and Perthshire berries from Raith Fruits.
Even though we were completely satisfied, we couldn't resist a taster of their Nutella French Toast. This wonderfully sinful creation is generous with Nutella, encrusted in cornflakes, and accompanied by mascarpone plus an indulgent maple syrup drizzle that oozed like a perfectly soft-centred yolk. Complete 'degg-cadence'.
Whether you're a committed early bird or weekend warrior, Eggbreak's Edinburgh debut proves that sometimes the best things come to those who wake. With impeccable sourcing, playful presentations, and flavours that'll have you coming back for more, this pop-up is no yolk – it's the breakfast experience Edinburgh's been waiting for. Don't let this one fly the coop.
