The Genius Way to Turn a Box of Jiffy Cornbread Mix Into Dinner
The Genius Way to Turn a Box of Jiffy Cornbread Mix Into Dinner originally appeared on Parade. Summer is quickly wrapping up and the back-to-school scramble will soon be here (or maybe it's already here for you and your family). Transitioning from lazy summer days to a new fall schedule can be a little bit rough. Between bus schedules, lunch planning, homework helping and more, dinnertime can feel like a full-on sprint. That's why it's essential to have a few quick, satisfying meals in your rotation, ones that don't require a ton of prep but still deliver big on flavor and recipes you know your family will enjoy. Cookbook author Matthew Bounds (@yourbarefootneighbor), one of our favorite food creators, is also feeling the fall crunch and shared a genius solution for those hectic weeknights: Corn Dog Casserole. This nostalgic, hearty meal is perfect for a weeknight win when your schedule is anything but relaxing. Instead of individually battering and frying each hot dog or heating up a frozen version, you simply stir everything together in a bowl, pour into a baking dish and stick it in the oven. It's easy, clever and guaranteed to make your kitchen smell amazing. Start by combining milk, eggs and Jiffy cornbread mix. This classic box mix gives the casserole its soft, slightly sweet base and keeps the prep super simple. To punch up the flavor, stir in some hot sauce, a bit of mustard and a dash of black pepper. If you want to add a little extra texture and a bit of sweetness, you can also add a can of corn to the batter, but that's totally optional. Next up, the star of the show: hot dogs! Slice them up, give them a quick fry in a skillet to crisp up the edges and fold them into the cornbread mixture along with diced green onions and shredded cheddar cheese. The fried hot dogs bring a smoky, savory depth to the casserole, the green onions brighten everything up and the cheese, well, you know what the cheese does. Once it's all mixed together, pour the batter into a greased 9-by-13-inch baking dish and sprinkle with more shredded cheese. Bake uncovered at 400° until the top is golden and bubbly and a toothpick comes out clean from the center, which should take about 30 minutes. Related: Family Dinner, but Make It Fun This isn't just a time-saving recipe. It's a dinner the whole family will actually want to eat. Kids love the corn dog flavor and parents love how easy it is to get on the table. Plus, you can customize it to fit your crew's taste buds. Want more spice? Add extra hot sauce or a pinch of cayenne. Prefer beef or turkey hot dogs? Go for it. Need to sneak in veggies? Stir in some finely diced bell peppers or tomatoes. The casserole is perfect served with mustard and ketchup on the side for dipping. You could even pair it with a simple side salad or some steamed green beans if you're feeling ambitious, but honestly, it's a full meal on its own. Whether you're feeding picky eaters, teenagers with bottomless appetites or just trying to survive the midweek madness, this Corn Dog Casserole is a total winner. It's warm, cheesy and ready in less than an hour with barely any cleanup. Readers Really, Really Love This Spicy, Creamy Weeknight Bolognese
'Time is a weird thing,' writes Margaux Laskey in her roundup of our 25 most popular recipes of the year so far. 'It's been more than six months since the new year began, but some days it feels like it's been six minutes, and other days? Six years.' Boy, can I relate to this, the way time zigs and zags and gets all twisted up in itself. My mother always said that a task expands to fill the amount of time you give it, but, for me, it usually overflows, particularly when I'm writing a column — or making dinner. Unsurprisingly, a majority of our most popular dishes are on the relatively speedy side, ready in an hour or less. And the ones that do take more time are entirely worth it (oh Dubai chocolate, you're worth every pistachio-filled minute). Then there are the recipes that trick time. Genevieve Ko's spicy, creamy weeknight Bolognese tastes like it's been simmering all day, but only takes half an hour. Her brilliant hack is to sear ground beef with curry paste to give it caramelization and depth, adding heavy cream to mellow the bite. Time may be weird, but dinnertime starring a Genevieve recipe is always going to be delicious. Featured Recipe View Recipe → Want all of The Times? Subscribe.

Angry Cat Trio Gangs Up on Mom Because Dinner Is ‘5 Minutes Late' and It's Priceless
Angry Cat Trio Gangs Up on Mom Because Dinner Is '5 Minutes Late' and It's Priceless originally appeared on PetHelpful. Just about any cat parent will tell you that serving their furry little children dinner late, even if it is just by a few minutes, is a big no-no. Because the thing about cats is that when it comes to their dinnertime, they don't mess around. As this video shows, our feline companions are not above letting us know when we have messed up. This cat mom certainly found that out the hard way. As soon as she walked in the door, it was clear that she had violated the most important unspoken rule between cats and their humans: don't serve dinner late! Three of her very agitated fur babies were waiting on the kitchen counter to greet her as she entered the room. It was clear that this cat trio was not okay. No one spoke at first. This human likely did not want to upset her feline companions by making excuses, while these cats just stared her down like a couple of gangsters to let her know that she was in deep do-do for missing their dinnertime by five whole the orange cat, who goes by the name of Peach, broke the silence. If you turn up the volume a bit, you can hear this sassy orange cat really laying it on, giving their human mama a good talking to. After rightfully chastising her, this adorable little orange cat asks the questions that everyone has been wondering, 'Where have you been? Do you know what time it is? And most importantly of all, where is our dinner!?' With all that being said, don't worry about these kitties too much because, as this other video shows, they are incredibly well fed. They get to feast on special cat food from Turkey, cute custom candy-looking treats specially ordered from Japan, and they even get their own special Hello Kitty plates. Of course, Peach disrupts her human mama while she is preparing her food with all kinds of rambunctious shenanigans. We're pretty sure that she stopped everything no less than 12 times. That cat really knows what she wants, and when she wants something, she wants it now! Looking for more PetHelpful updates? Follow us on YouTube for more entertaining videos. What families with ‘successful' children can teach us about parenting
When Susan Dominus was in the fourth grade, she spent two weeks living with close family friends whose dinnertime rituals she found both intimidating and intriguing. At the end of each meal, the father would grill his children about current events or ask them to solve math problems. Dominus, included once in this rite, burst into tears.
