Spot with ‘best sandwiches in T-Town' closes. New owner plans to revamp menu

Outpost Sandwiches at Court House Square, one of the city's best lunch restaurants, closed its most recent chapter last week, as a new owner — a chef with many years of experience in the local industry and beyond — plans to revamp the space and concept.
Partners Adolfo 'Fito' Calles and Lauren Hernandez said goodbye to their sandwich shop after service on May 15, ending a journey that began in 2017. They did not immediately respond to a request for comment, but in an Instagram post the next day, it appeared that personal reasons drove the decision.
'Well we are speechless. 8 years. 120,000 sandwiches, a pandemic, a baby… and shortly another baby. Thank you everyone who has come by this week or reached out. It really means the world to us,' they wrote under a photo of toasted and untoasted bread — likely Macrina Bakery sourdough, the shop's loaf of choice. 'We get asked by friends and family, why we decided to move to Tacoma and this is clearly one of the reasons … we've really felt the love of the community.'
Dave Cooper, most recently of the venerable Marzano in Parkland and Le Pichet at Pike Place Market, has bought the business. Like en Rama and Liftbridge Coffee upstairs, the developer of Court House Square, A Street Associates, built the restaurant spaces and contracted out the management of them to industry professionals. Last year, the building owner sold en Rama to new owners, and now Outpost has followed a similar path.
The News Tribune also reached out to the building owner's representative for more information.
Court House Square was originally built in 1919 for the U.S. Postal Service. It was renovated in the early 1980s, according to county property records, but its modern life really began in 2012 when A Street Associates purchased it 'with the intention of bringing its 72,000 square feet back to life,' according to the organization's website.
In addition to the food and drink businesses (which, years ago, included Ice Cream Social's production facility and an Infinite Soups next to Outpost — then called The Countertop), the five-floor structure is also home to a few dozen small businesses, from tattoo shops to recording studios, florists to therapy. The fourth-floor holds a desirable ballroom event space and the third floor co-working office The Pioneer Collective. There is still a working post office on the main floor.
Outpost was beloved not only as a top choice for a quick lunch downtown but also as a destination for sandwiches made with care.
Calles comes from a family of restaurant-industry professionals and worked for many years in kitchens around the Bay Area and food trucks in Los Angeles before settling in Tacoma. In an interview with The News Tribune in 2022, he said the shop had offered relatively 'safe food' when he and Hernandez took over in 2017. They kicked things up several notches, focusing on homemade touches by roasting beef, pickling onions, whipping lemon-herb mayo and fresh basil pesto.
'Homemade is our biggest push as a sandwich shop,' said Calles in 2022. 'I want it to be comforting.'
In the downtime of 2020, they developed a Friday pizza ritual, perfecting the recipe for their Grandma-style pie — available only by the slice, and only on Fridays — over the next few years.
Outpost shared many Instagram stories last week from fans. 'Best sandwiches in T-Town. Period,' said one. 'Y'all were seriously so good at what you did,' said another. On Reddit, a Fircrest resident said, 'I eat lunch there every time I work from downtown Tacoma.'
Cooper anticipates various updates, both aesthetic and menu-wise, he confirmed in an email to The News Tribune. Bringing years of experience in the kitchen, including at respected restaurants in Chicago, he hopes to share more details next month.

New council homes approved on former sea cadet site

New council homes have been approved at a former Surrey sea cadet site. A planning application to demolish the existing buildings and replace them with 16 houses, each with a back garden, was approved by Tandridge District Council. The planned development at The Grove and Hawarden Road in Caterham, which currently includes a former barracks, will have 35 car parking spaces. Plans were green-lit on Thursday, with proposals for more social housing supported, but both councillors and residents were frustrated with the design. Marilyn Payne MBE argued at the meeting that plans were "akin to inner city development rather than on the edge of the green belt". She said the homes were too cramped together in the plot, according to the Local Democracy Reporting Service. The small, north-facing gardens would not be big enough for children to play in and would not get any sunshine, she added. Councillor Jeremy Pursehouse said there were 44 families living in B&Bs on the council's urgent need list. He said they wouldn't "care about the size of the back garden, they want to be out of there". The council bought the land from the Ministry of Defence in 2023. Planning documents said the proposed new builds would look "contemporary and minimal" to reflect the residential area and the previous army barracks. All the homes will be kept by the council and rented to families on its housing list. A millennial CEO called out Gen Z's work ethic — and got flamed for it. Lindsey Carter, founder of activewear company Set Active, said she wasn't prepared for the backlash she faced after critiquing Gen Z's take on work-life balance in a now-deleted TikTok video. 'Now all I see are people sprinting out of their offices at 5pm like it's a fire drill and then wondering why they feel so unfulfilled in their careers,' Carter posted last week. 'Balance is important, but balance without ambition. That's just coasting,' Carter continued. 'You don't build something great by just doing the bare minimum.' The backlash was fast — and furious. Critics slammed Carter, suggesting she was promoting unpaid work and ignoring burnout. 'Staying past 5pm working for a company I have no equity in doesn't sound like the path to fulfillment, ' one TikToker responded. 'How can I be active if I have to be strapped to my desk after 5pm?' another wrote. Carter quickly deleted the post — then blasted her critics on her Instagram story and claimed she'd been cancelled. 'What followed wasn't dialogue. It was a pile-on,' Carter wrote. 'It doesn't leave room for the thing we all say we believe in . . . growth.' She didn't stop there. 'I'm a millennial. I grew up in a culture where 'hard work pays off' wasn't just a phrase . . . it was a promise,' Carter said in a May 30 Substack essay defending her position. 'Two truths can coexist . . . we can honor ambition and protect our peace.' But for many online, that didn't cut it. Haters noted Set Active's negative Glassdoor reviews and Carter's 2023 decision to restructure her social media team, which some interpreted as layoffs. 'She just had a bad take and is out of touch,' one Reddit user wrote. 'That's consequences, not cancellation.' The controversy has since evolved into a larger debate over what ambition should look like in today's workforce and whether Gen Z is lazy — or simply redefining success on their own terms. Younger workers are no longer buying into the hustle mindset pushed by older generations, said Gabrielle Judge, an influencer known as the 'anti work girlboss.' 'Gen Z isn't unambitious,' Judge told The Post. 'We're just done sacrificing our mental health for companies that reward burnout with pizza parties. 'Logging off at 5 isn't laziness. It's a boundary.' Career strategist J.T. O'Donnell, founder of Work It Daily, said she understands both sides. Rather than trading hours for pay, younger workers are more focused on leveraging skills and knowledge in a changing economy. 'Working long hours is less productive,' said Celeste Headlee, author of 'Do Nothing: How to Break Away from Overworking, Overdoing, and Underliving.' 'I'm not irritated that Lindsey used the word 'coasting,' I have great empathy for her. She is still gripped by the delusion that work is what gives her life purpose and value.' Studies show Gen Z is noticeably less focused on work than young people were just five years ago, said psychologist Jean Twenge, author of 'Generations: The Real Differences between Gen Z, Millennials, Gen X, Boomers and Silents — and What They Mean for America's Future.' 'It's a rejection of the idea that work is the most important thing in life,' Twenge said.
