Forget tired stereotypes, Mumbai's Hunger Inc reveals how a new generation is crafting the future of Indian food, rooted in tradition but fearlessly innovative
Across Asia's vibrant food landscape, culinary innovation is constant. Yet, there's a particular energy crackling around Indian cuisine lately, an evolution moving far beyond the familiar comfort food narratives. While diasporic interpretations have long enriched our cities, a powerful movement within India is redefining the cuisine on its own terms, merging deep-rooted traditions with a confident, contemporary vision.

Leading the charge is Hunger Inc Hospitality, the dynamic Mumbai group behind game-changers such as The Bombay Canteen, a 2024 Tatler Best Asia 100 Restaurants and 100 Bars winner; Veronica's, an all-day sandwich shop and deli; confectionery venture Bombay Sweet Shop; O Pedro, a Goa-inspired bar and restaurant; contemporary Indian restaurant Papa's which offers a 12-seat chef's table experience, among others. To understand this shift, we spoke with Sameer Seth, the Founder and CEO of Hunger Inc, and Hussain Shahzad, the group's executive chef, to find out more.
Co-founder and CEO Sameer Seth experienced the earlier perception firsthand while working abroad years ago, where Indian food was often simplified or used merely as flavour accents. 'What's happening now,' Seth explains, 'is this amazing moment where so many of us who went abroad and came back to India are feeling proud—proud enough to take risks and do things with our culture and cuisine in ways we couldn't have imagined were possible in India even just ten years ago.'

This isn't just about bringing global experience home; it's about shattering old moulds. 'We are being able to interpret things beyond the stereotype,' Seth emphasises. 'Indian food was considered very specifically, around certain curries... and we are getting to challenge all of that today. And that's the interesting and exciting part.'
For Hunger Inc's executive chef Hussain Shahzad, a key challenge lies in escaping what he calls the 'trap of authenticity.' In cuisines with long histories, he argues, 'that trap... just prevents a cuisine from evolving.' The breakthrough? 'Today, that trap of authenticity is being broken because we're trying to define what authenticity means to us.' It's about informed evolution, not discarding the past. 'As chefs today, we're putting out more of those stories—our experiences on a plate—rather than just trying to create a better version of a dish that was created back in the day.'
Seth crystallises their philosophy memorably: 'We're creating the traditions of tomorrow, today—what will become someone's flavour memories, someone's nostalgia, ten years from now.'
When Hunger Inc opened The Bombay Canteen a decade ago, the mission was simple: 'to celebrate India,' recalls Seth. That founding 'war cry' has since evolved. 'Today, it's about understanding what new India wants—and how we can serve that in a way that truly excites them.' That ethos finds perhaps its clearest expression at Papa's, a 12-seater chefs' counter restaurant in Mumbai. Shahzad avoids the label 'modern Indian'. 'I feel it's forward-thinking Indian food,' he says. 'It's Indian food rooted in today—just more forward-thinking in how we approach it.'

This forward momentum extends to every detail of the dining experience. Forget hushed tones and neutral palettes. 'Why does it have to be white tablecloths or greys and blue...?' Seth asks. 'India is about colour. India is about celebration.' At Papa's, that spirit translates into a setting that feels more like a dinner party at Hussain's home than a traditional fine dining room. It's an approach grounded in respect for origins, echoing the philosophy of their late co-founder, chef Floyd Cardoz. 'Until you take time to understand tradition, you can't innovate,' Seth reflects. 'It's about bringing that forward into new India—without veering into gimmickry.'
The depth of Indian tradition offers an almost limitless canvas. 'Ten years in, I feel we're just scratching the surface,' Shahzad says with relish. 'Every 100 kilometres, the cuisine changes—the emotion of eating changes.' That spirit of exploration surfaces in strikingly inventive ways on their menus: take Bugs Bunny, a rabbit shawarma laced with chaprah (red weaver ants used by tribal communities), or a meticulously layered Wellington that channels the intricate flavours of a Kashmiri Wazwan feast. 'The flavours remain true to the Wazwan,' Shahzad explains, 'but the form is that of a Wellington. And to me, there's nothing about that that isn't Indian.' Even the rhythm of the meal at Papa's—beginning with savoury riffs on classic desserts—draws from Shahzad's own Bohri Muslim heritage.
This blend of audacity and reverence is captivating diners. While international guests are intrigued, Papa's has also become 'a source of pride' for Indians, who see in it a reflection of their cuisine's bold new trajectory. Storytelling is key—the team ensures guests understand the why behind each dish. It might be the unexpected pleasure of encountering distinctly Indian flavours in a globally recognisable ceviche or decoding the playful irony of an Ahi tuna samosa, or as Shahzad describes it, 'a samosa in spirit—but not in essence'.
Looking across the continent, both Seth and Shahzad see India's dining scene on a sharp upward trajectory, joining the ranks of Asia's established culinary powerhouses. 'I feel like the game in India is levelling up,' says Shahzad. 'All boats rise with the tide—and that's exactly what's happening right now.' He believes the country is entering a new phase: 'an era of innovation, as opposed to that era of refinement… For years, we were just focused on making better versions of butter chicken.'
Hunger Inc is actively shaping the next generation of Indian hospitality through initiatives such as Canteen Class and the Canteen Open House. The former began as a series of Saturday afternoon sessions at The Bombay Canteen—later moving online—designed to bridge the gap between academic theory and industry reality. The latter builds on that ethos, bringing together over a thousand attendees for workshops, mentorship sessions, and real-world insights. At the heart of both is a mission, as Seth puts it, to share 'the story of India, of today—the new India.'

When asked about the biggest misconception they hope to challenge, their responses cut deeper than the usual clichés. For Shahzad, it's about freeing Indian cuisine from the narrow definitions imposed on it. 'It's the shackles of authenticity that people put on it,' he says. 'What we're trying to do is open people's minds to the idea of India as a whole.'
Seth adds a vital point about contemporary India's capabilities. 'Come to India, you will find some of the best cheese, some of the best whiskey, some of the best gin. All being made here now,' he says. 'What it means to be an Indian restaurant today isn't limited to using the same ingredients we've relied on for the past hundred years.'
Indian cuisine today is a living, breathing entity, steered by innovators who honour their roots while boldly charting new territory. As Seth points out, much of this heritage remains undocumented, waiting to be uncovered through curiosity and connection. 'The only way you will discover more is to ask more questions and showcase that curiosity,' he says. 'It's only through travel that you'll see—and be inspired by—what the India of tomorrow could be.' For diners across Asia and beyond, embracing that curiosity promises delicious revelations. Mumbai, it seems, is calling.

Congratulations on 20 years. Did you imagine the brand would grow to this point when you started? The last 20 years for Bell & Ross have been bold in terms of creation, taking risks and innovating. I didn't expect the square watch would become so popular. It was a watch from the cockpit (instrument)—a watch that made a statement. And today, it is an icon. Take us back to the beginning. How insane was it to launch a luxury sport watch in a square shape? It was absolutely insane! But I asked, how could we differentiate ourselves in the competitive market? What would make us different? We were—and still are—influenced by the airplane, by its cockpit. So Bruno (Belamich, co-founder and creative director) took up the challenge to design a watch that corresponded to the cockpit instrument. It was simple, straightforward, no superfluous details. And since then, he was able to regenerate, innovate and come up with something that always surprises every year. Just look at the new BR-03 Astro—timekeeping is indicated with the help of a satellite. It's weird but you could tell it's a Bell & Ross by its case shape. Bold, to us, is the ability to be creative without fear. It's having the capacity to be different and defy expectations. I'd go as far as to say that the Bell & Ross square shape is a classic. Why do you think it has endured? Probably because it's a very simple design. It's a combination of two strong shapes—the square and the circle. Do you often have conversations with Bruno about design? Bruno is a talented designer—he knows how to be consistent but also always be surprising. We have a product meeting every week where we discuss how to innovate by combining different aspects such as design, engineering, manufacturing, and professional use. What is your favourite moment from the last 20 years? It's a difficult question to answer because I've had many important moments. I remember the first reaction [to our square watch] from a Japanese collector who told us we had made a big creative jump. There have been many more memorable moments after that, but I will never ever forget that first reaction because it was a big surprise.

'In Lamitan, Basilan, most goods came directly from the area or nearby Malaysia—no big brands or outside products, aside from maybe candy from Zamboanga. Tawi-Tawi's markets were especially eye-opening during Ramadan. There were stalls selling unexpected dishes like mi goreng with hot dogs and murtabak with Milo. Very Malaysian-inspired. It felt like a different world.' The team approached their challenge with deep respect, understanding that every recipe carries the weight of tradition, that every flavour tells a story about place and people. They recognised that authentic representation meant understanding not just what people eat, but why they eat it and what it means to their identity. This commitment becomes evident in every carefully orchestrated course, each dish functioning as both culinary achievement and respectful cultural translation. But one sip of the soothing, flavourful elixir washed all worries away. Made with beef bones, burnt coconut and aromatics, the smoky, blackened broth provided a warm welcome to Hapag and set the tone for the meal ahead. Accompanying the dish was a colourful platter of the aromatics infused into the broth: ginger, lemongrass, lasona (native shallots) and most interestingly, galangal and turmeric—ingredients more commonly found in Malaysian and Indonesian cuisines. During their time in Zamboanga, the Hapag team learned that satti skewers—closely related to the satay of Indonesia—are most commonly enjoyed as breakfast fare, with shops opening as early as 4 am. Hapag's take on satti was a simple preparation of grilled beef tongue, beef rump, chicken isol (tail) and chicken skin, highlighting the nuances of flavour and texture between each cut of meat, paired with a thick sauce of reduced chicken broth and spices. Commonly served as a salad with soy sauce, calamansi and bubuk (toasted spiced coconut), the crisp, slightly salty seaweed was a favourite among the chefs during their trip. At Hapag, they utilise their housemade two-year-old shoyu and adorn the salad with juicy Aiko tomatoes, sour green mangoes and sharp red onion, plus generous slices of yellowfin tuna kinilaw. Although mee goreng naturally invokes images of Malaysia and Indonesia, the Hapag team soon learned that this tasty noodle dish is also a highly favoured delicacy in Western Mindanao, specifically along Zamboanga's seaside markets. Hapag's mee goreng was a highlight of the menu: firm noodles with a toothsome chew coated in a delectable sauce—umami-rich, slightly sweet and almost caramelised—using Hapag's own kecap manis. Wok-fried oyster mushrooms and a glistening quail egg yolk emphasised its umami and richness, while fried egg whites and dahon ng sili lent textural interest. In a brilliant lightbulb moment, the chefs asked, 'What if we put them together?' This unexpected pairing later inspired their fifth course: meaty swordfish cooked in burnt coconut and aromatics, delicately laid upon a flaky roti martabak stuffed with an herbaceous pesto and seared to achieve a crisp, golden exterior, and finished with caviar and a local cheese similar in flavour to a mild parmesan. Have you ever had leche flan as a palate cleanser? In many parts of Western Mindanao, this silky, decadent custard is not enjoyed as a dessert, but rather as a sweet and creamy relief from the rich and spicy flavours that define their cuisine. Hapag pays homage to this custom by serving the flan atop a bed of refreshing calamansi and lemongrass granita, plus pickled scoby, its texture and tang reminiscent of nata de coco. There's a palpable excitement that fills the room as Hapag's service team brings out each dish, setting the table with a festive spread, moving in unison like a choreographed dance. This season's salu-salo is a quartet of regional specialities, including the camaron alavar: meaty prawns dipped in a light tempura batter and coated in pinipig, then fried to a crisp, served with alavar (curry) sauce. In the white bowl, beneath a bed of fried leeks and curry leaves lay the riyandang—the Maranao counterpart to the world-famous rendang, made with tender beef short ribs slow-cooked for eight hours in a spiced coconut milk. To cut through the riyandang's richness and spice, the chefs complemented the salu-salo with a bright and punchy pomelo salad with calamansi, ginger and pickled jalapeno, plus cashew for added texture. Of course, no salu-salo is complete without rice. This time around, they look to Basilan for inspiration, serving their interpretation of junay: a rice cake cooked in burnt coconut, turmeric and chicken stock, wrapped in banana leaves and finished at the table with calamansi, crispy shallots and puffed black rice. Finally, the petit fours reimagine bang-bang sug, a platter of Tausug kakanin, as chocolate bonbons. There's the explosive putli mandi (palitaw) covered in coconut, the palikambing (banana fritter) with a luxurious smoked banana caramel, the wadjit (coconut sticky rice cake) with biko and latik and the Bbyaki (corn tamales) with corn mousse and juicy corn kernels. Since bang-bang sug is typically enjoyed in coffee houses, they've paired the petit fours with a refined pourover coffee using beans from Miarayon, Bukidnon, sourced from Good Cup Coffee. Their intention to represent Western Mindanao with respect and responsibility extends beyond the dishes in their tasting menu, colouring their beverage programme, too. With respect for Western Mindanao's Muslim heritage, Ganuelas-Recto took the opportunity to curate a non-alcoholic pairing—a first for Hapag. Both their wine and zero-ABV pairings echo the complexity and depth of the tasting menu, leaning on full Champagne rosés, sweeter rieslings and structured expressions of syrah and Left Bank Bordeaux for the wines, while the non-alcoholic pairings build intrigue with fermented probiotic sodas and nuanced alcohol-free wines. 'Western Mindanao's flavours are unapologetically bold, so our pairings had to meet that energy,' explains Ganuelas-Recto. "We leaned into spice, smoke and richness, both in the wines and the fermented beverages, to create harmony with the menu.' It reframes Filipino cuisine as fundamentally regional—and celebrates the diversity too often overlooked. 'This isn't just about showcasing dishes,' added Dolatre. 'It's about recognising how much of the Philippines we've yet to explore and giving that food the care and respect it deserves.' A state of emergency was declared in Israel in anticipation of retaliatory missile and drone attacks. Iranian state media confirmed the death of Hossein Salami, Commander of Iran's Revolutionary Guards. Israeli officials also claimed that several senior Iranian military officials and nuclear scientists were likely killed. U.S. Secretary of State Marco Rubio called the strike a "unilateral action" by Israel and clarified that Washington was not involved. The attack comes amid stalled nuclear talks, with a sixth round of negotiations between the U.S. and Iran scheduled in Oman on Sunday. 2) Oil prices surge on supply fears Brent crude futures jumped $6.29, or 9.07%, to $75.65 a barrel by 03:15 GMT after touching an intraday high of $78.50 — the highest since January 27. U.S. West Texas Intermediate (WTI) crude climbed $6.43, or 9.45%, to $74.47 a barrel, after hitting $77.62, the highest since January 21. These were the sharpest intraday gains for both benchmarks since 2022, when Russia invaded Ukraine, leading to a spike in energy prices.
