Where there's smoke, there's Fervor
Chef Paul 'Yoda' Iskov worked in some of the world's best restaurants before founding Indigenous food pop-up, Fervor. Last year, the food collective took the concept to guests of The Ritz-Carlton, Perth for a degustation at Hearth restaurant, followed with a series of bespoke luxury food itineraries in remote parts of Western Australia. Now Iskov is teaming up with Hearth's chef de cuisine, Brian Cole, once again for a series of fire-driven dining events in June, October and November. See hearthrestaurant.com.au/news

Luxury hotel Aman Rosa Alpina opens in ski village of San Cassiano in Italy's Dolomites

A famed mountain retreat with an 85-year history seems a fitting choice for the world's most exclusive hotel brand to make its base in the Dolomites. The Aman Group has opened its latest property in the Italian ski village of San Cassiano, taking over the longtime home of family-run hotel the Rosa Alpina. Now reimagined as Aman Rosa Alpina, the hotel features all the trimmings loyalists have come to expect from the brand including new dining concepts, elevated wellness amenities and exclusive adventure experiences, while honouring the UNESCO-protected location. The retreat's former life dates back to 1939 and it has been passed through the Pizzinini family for generations, becoming synonymous with the Dolomites and alpine luxury in the process. While Aman has essentially rebuilt the property as part of its takeover, architect Jean-Michel Gathy of Denniston used the original design as inspiration and the result seamlessly blends understated European elegance with the signature minimalism the brand is known for. The 51 guestrooms aim to bring the great outdoors in, boasting floor-to-ceiling windows to show off the mountain setting and artisanal craftsmanship that reflects the natural environment. As with other Aman properties, the wellness offering is a major drawcard for the hotel. Aman Rosa Alpina's two-level spa covers a massive 1684sqm and features a 20m heated outdoor infinity pool, indoor pool, Finnish sauna, cold plunge and even a zen garden. The treatment menu is geared around adventure: after a day hitting the slopes, snow bunnies can partake in an Alpine Muscle Relief Massage or one of Aman's many other wellness rituals. And the hotel is well appointed to explore the splendour of the Dolomites, whether that's by offering guided hikes in the summer months or a ski butler service come winter to provide seamless access to the Dolomiti Superski area. Despite all the modern upgrades, the heart of Rosa Alpina remains with Hugo and Ursula Pizzinini still at the helm. 'As custodians of this beloved mountain retreat, it is a privilege to see it evolve under Aman — a brand that shares our deep reverence for place and commitment to excellence,' they said. 'This partnership allows us to celebrate our family's legacy and three generations of hospitality, while embracing a future shaped by Aman's uncompromising attention to detail and global perspective. 'Our mission remains the same: to preserve the authenticity and spirit of the region and for guests, past and future, to experience the timeless beauty of the Dolomites.' Aman's stable of award-winning resorts and branded residences has now swelled to encompass 36 properties in 20 destinations from Thailand to Utah, with even more projects in the works. + Bookings are via

Port guide: Napier, New Zealand

Napier is a showcase of art deco architecture, with more than 140 buildings, built after a devastating 1931 earthquake, giving the city centre a remarkably uniform style. If you happen to sail in during February, the Art Deco Festival features jazz, vintage cars and special events. It's well worth heading to MTG Hawke's Bay for its museum exhibits on Maori heritage, earthquakes and local history. You can also tour Napier Prison for stories of ghosts and infamous jailbirds. Don't miss The National Aquarium of New Zealand on the waterfront, a short walk along Marine Parade from the town centre, has a splendid collection of creatures to admire in tanks and from see-through tunnels underwater. You can see tuataras (a species of lizard), little penguins and kiwis too. If you have children, they'll love the hands-on displays and 2.30pm feeding time. Get active Napier is compact, but its seashore promenades are a good place for a run. You can keep going for kilometres beyond down if you head south. Ahuriri Estuary Walking Track runs four kilometres in a loop, and you can birdwatch as you go: get there on a short bus ride, or add another few kilometres through town onto your running route. Best bites Loading The degustation menu at three-hatted chef Jeremy Rameka's Pacifica Restaurant is a brilliant showcase of contemporary New Zealand cuisine. For a more informal meal, head to Central Fire Station Bistro for delicious French and Italian-influenced dishes such as sweet corn dumplings, gnocchi with gorgonzola, and beef sirloin in a rich shiitake bordelaise sauce. Wine lovers should get beyond town to investigate the region's Chardonnay, Syrah and Merlot-Cabernet blends at any of 70 cellar doors, including New Zealand's oldest winery Mission Estate, prestigious Te Mata Estate, and scenic Elephant Hill. Further afield Napier is centred on fertile farmland, orchards and river valleys and sits in the middle of the Hawke's Bay wine region, with many excursions focused on cellar doors or local chocolate and honey producers. Nearby Cape Kidnappers is renowned both for golf and one of the world's largest gannet colonies, a remarkable sight as the wide-winged birds swoop and screech. From the top of Te Mata, spectacular views unfold over the landscape and Napier's twin town Hastings. If you're interested in Maori history, head to Hakikino Conservation Reserve.
