A talented new chef takes the reins at the MCA's beautiful rooftop restaurant, Canvas

Time Out6 hours ago

Last year, we brought you the news that the beloved rooftop café atop Sydney's MCA transformed into a bold fine-diner called Canvas. Spearheaded by hospitality professionals The Big Group, Canvas' concept is new to Sydney: instead of a fixed kitchen team and head chef, there will be seasonal residencies featuring fresh talent. Josh Raine, the former executive chef of Sydney's now-closed icon Tetsuya's, was the opening gun. (Raine has since gone on to open the excellent Surry Hills wine bar, 40Res.)
Now, Scottish-born James Scott has taken over the reins from Raine, bringing a wealth of experience: he trained under British chef Michael Caines at the two-Michelin-star Gidleigh Park before moving to Sydney in 2013. He then worked with Martin Benn at the award-winning Sepia, before rising to head chef at waterfront LuMi Dining. Phew – talk about a strong CV.
Scott says: 'I'm incredibly excited to take the reins at Canvas. The space, the views, the philosophy – everything about this restaurant invites creativity and storytelling. My new menu reflects where I've come from, where I am now, and the inspiration provided by this extraordinary location.'
So, what's on the menu? Highlights include cappelletti (a type of hat-shaped pasta) filled with sea-sweet crab meat and paired with a light, creamy sauce flavoured with lemon myrtle, basil and pops of ruby-coloured finger lime. Wagyu tartare comes with zippy pickled shallots, fried saltbush, a rich confit egg yolk and a Sydney Opera House–shaped Jerusalem artichoke crisp in celebration of Sydney's favourite house.

For mains, our pick is the 'Lambington' – a riff on the classic Wellington and made with haggis in a nod to Scott's heritage. Desserts include a desert-lime parfait with meringue and coconut sorbet; a Bakewell tart with Davidson plum and crème fraîche; and a tarte Tatin with Granny Smith apples, native thyme and vanilla gelato.
Canvas' chef concept isn't the only thing we're fans of. The sun-drenched restaurant offers a two-course menu for $95 per person and a three-course option for $120. While it's not cheap, compared with its neighbours who share similar 'wow' views (looking at you, Quay), it's solid value in our books – a slice of luxury at a more accessible price point.
Oh, and one more thing: Canvas is lunch-only (the space morphs into an event venue at night) – so if you've got a birthday, date with your nan or an anniversary coming up, book in for the day.

Giant boombox toilet co-designed by Sir Rod Stewart unveiled at Glastonbury

WaterAid's Boombox Bog houses a toilet that sits behind the tape deck of a giant blue boombox decorated with leopard print, a pattern often worn by Sir Rod. The veteran rockstar, 80, will perform in front of thousands of music fans on Sunday when he plays the coveted tea-time legends slot on the Pyramid Stage, which sits nearby to the toilet. The Maggie May singer said: 'I've spent my life singing to packed arenas and festival crowds, but nothing hits a high note quite like clean water and a decent loo. 'They might not be sexy, but they're life-changing. 'That's why I've teamed up with WaterAid to bring our funky Boombox Bog to Glastonbury Festival and shine a light on the importance of these everyday essentials that millions still live without. 'Together, we're creating change that's gonna last forever.' Festival-goers will be able to hear some of Sir Rod's hits from the Boombox Bog including Da Ya Think I'm Sexy? and Sailing while also listening to specially recorded water-themed messages from the singer. Jennie York, executive director of communications and fundraising, WaterAid, said: 'We're so grateful to Rod for helping share the amazing power of clean water and a decent toilet with the funkiest loo at Glastonbury Festival. 'It's a fun and engaging way to celebrate the wonderful things that can happen if everyone has these basic needs met. 'Our fantastic volunteers are onsite keeping the water flowing and the toilets gleaming, so Festival-goers can focus on the magic that makes Glastonbury unforgettable. 'But when the music stops, we don't. We're bringing people together to help build a world where everyone has the water they need to stay healthy, learn and thrive. Change really does start with water.' Non-profit organisation WaterAid has been a charity partner of Glastonbury since 1994, supporting water and sanitation services on site while also highlighting the work it does across the globe. Thousands of revellers are descending onto Worthy Farm in Pilton, Somerset, which opened its doors on Wednesday, for five-days of music and performing arts. This year's event will see headline performances from British rock/pop band The 1975, veteran singer Neil Young and his band the Chrome Hearts, and US pop star Olivia Rodrigo. Sir Rod's performance will come after the singer postponed a string of concerts in the US, due to take place this month, while he recovered from flu. The singer has teased he will welcome a number of guests to the stage during his set, including his former Faces bandmember Ronnie Wood.

Shearer to attempt British solo shearing record in Powys

A 27-year-old Mid Wales shearer will attempt to beat a solo shearing record in Powys next month. Huw Jones, from Abergynolwyn, near Tywyn, will attempt the eight-hour solo ewe British record. Huw's record attempt will take place at Hendreseifion Farm, Llanwrin, near Machynlleth, on Saturday, July 5, beginning at 5am. Live streaming will be available through the Huw Jones - 8 hours British Shearing Record Attempt Facebook page, where Huw explains that he will try to beat the solo record currently held by Martin Howlett. In recent years, many shearing record attempts have been attempted, including Lloyd Rees in 2022, who broke the nine-hour British solo record at Blaenbwch Farm, near Builth Wells. These feats have inspired Huw, who said: 'Seeing Matt Smith, Rowland Smith, Gareth Daniel and Ian Jones achieve their records planted a thought in my mind that I would like to do something like that one day, but realised I was years away from it. 'I finally achieved a long-term goal two years ago in New Zealand, shearing 554 lambs in eight hours. 'But I still wasn't satisfied. I wanted to do 600, so when I got home, I asked my brother if I could try and do a personal best on his sheep. He agreed and in July 2023, I shorn 704 ewes in nine hours. 'That was the big motivation to attempt a record. I set my goal for about two years and chose the record I wanted to attempt to break.' For approximately six months of the year, Huw's normal shearing routine sees him split time between the UK and New Zealand. The rest of the year he is on the family farm, along with some contract sheep dipping alongside his brother. 'Farming has always been my main passion,' said Huw. 'I would always be outside farming with my parents and when staying with my grandparents. Luckily for us, mum and dad have always included me and my brother in a lot of farming decisions from a young age (sometimes too young), but it helped us learn how important it is to consider all aspects before making a decision.' Shearing normally starts for Huw at the end of April, in England, before coming back home to Wales to shear from the end of May. Huw shears with his friend Gwydion and they've shorn together for several years on local farms. The aim is always to finish shearing at the Royal Welsh Show just outside Builth so he can enjoy the week. An agricultural engineering graduate from Harper Adams University, Huw added: 'I have a few proud moments in shearing, and winning the Senior Championship in Corwen Shears was a personal highlight. 'There are many shearers and people outside of shearing who have inspired me in different ways, but for me, Rowland Smith has always been a big inspiration. 'Not only is he an outstanding shearer in shows, records and in the shed, but he also has an incredible work ethic. 'I could never manage lamb shearing until I watched 'Rowly' shear lambs in front of me; that is when I finally stopped making excuses of being too tall for lambs and found a way to get it done.' Proceeds from the event will be shared between the Wales Air Ambulance and Aberdyfi Search and Rescue charities.
