"This recognition marks an important milestone for the Groupe la Tanière, which has continued to evolve since its founding in 1977. Today, this award symbolizes decades of hard work, rigor, and creativity—a dream nurtured over the years, now a reality. It is a source of great collective pride for our entire team, from past to present, and a wonderful recognition of the work of our chefs, their brigade, the artisans, and collaborators across all our establishments. It also underscores the importance of our loyal customers, who always inspire us to excel."
The Groupe la Tanière, comprised of a team of passionate culinary people, who shares common values that serve as the foundation for their inspiration. A true pioneer of boreal cuisine who has successfully reinvented an avant-garde and sensory approach to the gastronomic experience, the Group and all of its establishments strongly value local producers to showcase the terroir and local expertise. Hospitality, attention to detail, and culinary creativity are at the heart of their identity, allowing each of the four signature locations to express their own personality, reflecting the chefs and restaurant directors, who interpret the essence of contemporary Quebec cuisine in their own way. All driven by the same dream of pursuing the development of Quebec's unique cuisine identity inspired by its terroir and history, all teams from the three restaurants still manage to differentiate themselves through their approach and vision, which are reflected in each chef's cuisine.
TANIÈRE3 | 2 MICHELIN StarsTanière3, a two-star MICHELIN restaurant, is run by co-owners Chef François-Emmanuel Nicol and Restaurant Director Roxan Bourdelais, who also received the MICHELIN Outstanding Service Award. Tanière3 is the only restaurant in Quebec province and the second in Canada to hold this distinction, the highest awarded in the country to date, out of a maximum of three stars. The ultimate gastronomic experience allows us to travel, throughout the evening, through three completely different environments where the hidden ingredients of the boreal forest are prepared and narrated for our greatest pleasure. The restaurant's is located 7 rue Don-de-dieu, near Place Royale.
"These two stars are both a recognition and a starting point. We receive them with humility and enthusiasm, and they motivate us to go even further in our mission: to showcase Quebec gastronomy on the world stage."
François-Emmanuel Nicol, Chef-Owner of Tanière3
LEGEND | 1 MICHELIN StarThe Michelin-starred Légende restaurant has now been run by the co-owner chef Elliot Beaudoin for several years. He is the youngest chef to receive a MICHELIN star in Canada. Celebrating its 10th anniversary, with a bistro-meets-gourmet restaurant approach, Légende has become, thanks to its experienced team, a benchmark in the Old Port for local cuisine, enhanced by the exceptional work of Caroline Beaulieu, the sommelier of the year at the 2023 Lauriers de la Gastronomie awards. Drawing on his extensive travels, the chef offers a creative approach that combines overseas culinary techniques with local ingredients for a true gastronomic discovery. The restaurant, located at 255 Saint-Paul Street in Quebec City, is open every evening from 5 p.m.
L'ORYGINE | MICHELIN RecommendationThe Michelin-recommended restaurant l'Orygine is run by co-owners Chef Sabrina Lemay and Restaurant Director Philippe Veilleux. In Quebec City, there are only about fifteen other restaurants that have received this same recognition. Aiming for a more relaxed gastronomy, inspired by the garden, Chef Lemay first creates her dishes around fresh local garden produce to highlight all their colors, textures, and aromas. This is followed by a highly sensory cuisine for a generous and refined culinary experience. The restaurant, located at 36 ½ rue Saint-Pierre in Quebec City, is open every evening from 5 pm. It is also at the same address that you have the opportunity to discover the lounge bar Le Vieux Carré, with the same philosophy as Groupe la Tanière. It is the perfect place for an aperitif or to end the evening with the original cocktail creations of the bartender team, led by Philippe Veilleux.

Michelin-rated chef arrested on domestic violence charges at West Palm Beach home

A renowned chef and the owner of the lone Michelin-starred restaurant in West Palm Beach is facing domestic battery charges after police alleged he assaulted a woman during an incident at his home. Jacob Bickelhaupt, the chef and owner of Konro restaurant, is facing one count each of domestic battery causing bodily harm and domestic battery following his arrest June 2 by West Palm Beach police. According to his arrest report, Bickelhaupt repeatedly punched and kicked the woman, leaving her with two black eyes, and with swelling and bruising on her face. The woman reportedly went to Palm Beach International Airport after the attack to try to buy a flight to her family's home but suffered a seizure at the ticket counter. She received emergency care at St. Mary's Medical Center. During a hearing June 3 at the Palm Beach County Jail, Circuit Judge Daliah Weiss ruled that Bickelhaupt, 41, is indigent and assigned a public defender to represent him. She set his bail at $90,000 and ordered that he be placed on in-house arrest with an ankle monitor if he is released. As a matter of policy, the county Public Defender's Office does not comment on active cases. After his arrest, Bickelhaupt requested to speak to an attorney and did not make other statements to investigators, his arrest report said. More: Dwyer student accused of torching classmate's car faces 2 more 'retaliation' arson charges The arrest marks the second time within the past decade Bickelhaupt has faced an allegation of domestic violence. In June 2017, Chicago police arrested him on charges that he assaulted a woman, throwing her to the ground and striking her in the head with a bottle, according to multiple published reports. He pleaded guilty to a charge of simple battery and was ordered to undergo mandatory drug and alcohol testing, complete a domestic violence program and pay fines. Shortly after the Chicago arrest, Bickelhaupt closed 42 Grams, his popular restaurant on Chicago's north side that at one time also earned Michelin-star status. In 2023, he opened Konro in West Palm Beach, on Park Place off South Dixie Highway near the Norton Museum of Art. It is a menu-free tasting restaurant with 10 counter seats and a steep, three-figure per person price tag for admission. In 2024, the Michelin Guide announced it would be rating Palm Beach County's restaurants, and in April, Konro was awarded a single Michelin star, making it the county's first and only restaurant to carry a star from the vaunted guide. According to Bickelhaupt's arrest report, his current accuser told investigators that he repeatedly attacked her over the span of two hours, even as she tried to leave the home. Once the attack stopped, the woman packed a bag and called for a ride to PBIA, where she collapsed, the arrest report said. Officers detained Bickelhaupt that night and took him to police headquarters for questioning. Julius Whigham II is a criminal justice and public safety reporter for The Palm Beach Post. Michelin may have dinged Virginia's food scene, docs suggest

The $120,000 a year Michelin wanted to charge Virginia to be in its forthcoming Southern restaurant guide was steeply discounted compared with what other Southern states are paying. Why it matters: Virginia's rate may have been a statement on the state's restaurant scene's lack of "maturity," suggest records from the Louisiana Office of Tourism obtained by Axios New Orleans. The big picture: As we reported in April, Virginia opted out of being included in the Michelin Guide to the South largely due to the price tag. The state tourism office would've had to pay $120,000 a year for three years to be included. Yes, but: Six other Southern states opted in — to the tune of $1.65 million a year in a three-year contract, Axios New Orleans' Chelsea Brasted reports. That includes an annual $350,000 each from Louisiana, North Carolina, South Carolina and Tennessee. And $125,000 annually each from Mississippi and Alabama. Zoom in: Why the different amounts? Michelin tells Axios in a statement that the state rates were set by Travel South USA, a regional marketing agency that contracted with Michelin to bring the guide to the South. Travel South USA then subcontracted with tourism agencies across each of the states, including city partners, to pool the funds and hammer out the details. Travel South USA didn't return Axios' request for comment on the rates. Behind the scenes: A slide included in the trove of Michelin documents and emails about expanding to the South may offer a clue. It shows a map of states across the South in varying shades of blue. The colors emphasize each state's " culinary maturity," according to an email from Michelin. That's a key standard for determining whether the guide enters a market, The New York Times reported. Notably, Michelin has Virginia in a medium shade of blue — lighter than the dark blue for Louisiana, North Carolina, South Carolina and Tennessee — suggesting the group views the state's restaurant scene as not yet fully mature. The intrigue: Michelin didn't comment on Virginia's medium-blue shade or its view of the state's scene, but its anonymous chief inspector for the Michelin Guide North America did offer some insight into what makes a scene culinarily mature. "Destinations that prove worthy of establishing a Guide have a high-quality culinary scene along with a density of restaurants," per a statement from the chief inspector. Specifically, when inspectors go out, they're "looking for restaurants that embody the five universal criteria," which are, according to the inspector: Quality products. Harmony of flavors. Mastery of cooking techniques. Voice and personality of the chef as reflected in the cuisine. Consistency between each visit (each restaurant is inspected several times a year) and through the menu as a whole. Plus, according to the inspector, Michelin won't enter into partner conversations if it doesn't think a dining scene — in this case a state — has "the gastronomy maturity to warrant further exploration." The bottom line: It appears Virginia's discounted rate may have come with a side of shade.
