'Outstanding' Scottish restaurant added to Michelin Guide

Every month the inspectors for the coveted guide reveal the restaurants that have caught their attention and are worthy of inclusion in the Michelin Guide for the UK and Ireland.
While new stars and bib gourmands were revealed in Glasgow in February, the inspectors are on the road all year round, eating their way around some of the country's best restaurants.
The most recent Scottish addition to the guide is Moss, which opened in Edinburgh's Stockbridge in March this year.
Of this farm to table eatery, which is headed up by ex Noma chef Henry Dobson, the inspectors said: 'Stockbridge has become a go-to neighbourhood for Edinburgh's foodies in recent years – and Moss is certainly playing its part in the trend.
'Key to the ethos here is that the menu only uses Scottish produce and the drinks list is exclusively British; many of the ingredients even come from the owner's family farm in Angus.
'These are crafted into pure, natural dishes that chime with the dining room's pared-back aesthetic. It's the little touches that will put a smile on your face, like the complimentary Irn Bru candyfloss at the end of your meal.'
The a la carte menu at Moss is based on the best of the fresh and preserved harvest from the farm in Angus and a network of local producers including Phantassie Organic Farm in East Lothian, Butchery at Bowhouse in the East Neuk of Fife with foragables, game, meat, vegetables and herbs sourced from the farm.
Taking inspiration from his travels in Scandinavia and East Asia, as well as from the diverse cultures in his team, the dishes are ingredient-led and will constantly evolve depending on what produce is available.
All of this work in sourcing and ensuring the best local and Scottish produce has clearly paid off, given the Michelin recognition so soon after opening. Online reviews call Moss outstanding, further cementing Edinburgh's place as one of the best cities in Scotland for food.
Of his restaurant, Henry said: Of the new restaurant Henry Dobson said: 'Moss is the culmination of two years of solid research and development and I can't wait to open our doors and share our perspective on what we think is possible with Scotland's diverse palette of ingredients.
'My team and I are excited to amalgamate the best of Scotland's local makers and producers and find our niche amongst the incredible scene of restaurants in Edinburgh.
'This project has already been such a personal journey for my family and I. From our six-month research and development trip to Japan, to Akiko and I digging clay out of ditches for the tableware, to sieving ash for the paint, to bucking, milling and joining the table tops all the way to foraging our vast library of preserved ingredients from my family farm.'

Dozens of passengers were taken to hospital with injuries suffered when their flight experienced severe turbulence. Delta Airlines flight DL56 had to divert to Minneapolis-Saint Paul International Airport in Minnesota following the significant turbulence after leaving Salt Lake City, Utah. The Airbus A330-900 landed at Minneapolis-Saint Paul International Airport at around 10pm Wednesday local time (4am Thursday UK time). But 25 of the 275 passengers needed care in hospitals following the difficulties the flight had encountered in the air. They were taken to local hospitals, the airline confirmed. A spokesperson said: "Delta flight DL56 - flying from Salt Lake City to Amsterdam - diverted to Minneapolis-Saint Paul International Airport Wednesday after the flight encountered significant turbulence while enroute." It comes after one expert claimed "I'm a pilot with 10,000 flight hours but I won't go near this place". The Delta Airlines spokesperson continued: "The aircraft, an Airbus A330-900, landed safely at MSP, and medical personnel met the flight upon arrival to evaluate customers and crew. Twenty-five of those on board were transported to local hospitals for evaluation and care. We are grateful for the support of all emergency responders involved. Safety is our No. 1 value at Delta, and our Delta Care Team is working directly with customers to support their immediate needs." Firefighters and paramedics were waiting for the plane before it landed. The nature and extent of the injuries are unclear at this stage. The passengers will head for Amsterdam at the next safest opportunity, it is understood. Research conducted this year by Turbli, a turbulence forecast site, found the world's most turbulent route is between Mendoza in Argentina and Santiago in Chile, which achieved a 24.684 eddy dissipation rate (edr). Turbulence levels are split into categories, with light measuring between zero and 20 edr, moderate measuring between 20 and 40 edr, severe measuring between 60 and 80 and extreme measuring between 80 and 100 edr. The second most turbulent route was found to be Cordoba in Spain to Santiago, which measured 20.214 edr. For the airports with the most turbulence, Santiago in Chile took the number one spot, followed by Mendoza in Argentina and Salta, in Argentina. Turbulence is irregular and often unpredictable movements of the aircraft caused by disturbances in the air. It can range from mild to severe and is typically associated with changes in air pressure, atmospheric conditions, and wind patterns. In May 2024, Singapore Airlines Flight 321 experienced severe turbulence which caused unrestrained passengers and flight crew onboard the flight to be thrown about the cabin. A 73-year-old British male passenger suffered a suspected heart attack during the incident and was pronounced dead upon arrival in Bangkok.

Helen Garner has praised Dua Lipa as a 'serious and sensitive' interviewer after being announced as the British superstar added Garner's 2014 courtroom drama to her monthly book club. The Melbourne author's This House of Grief will be the first Australian inclusion on the popular list, taking Garner's 2014 non-fiction courtroom drama to the singer's growing global audience. Lipa said Garner's book offered a 'sharp and forensic analysis of the human condition,' announcing the selection in an Instagram post. 'Although Helen has been writing for almost 50 years, her work is new to me and it's a thrilling discovery,' Lipa wrote. 'She's one of the most fascinating writers I have come across in recent years, and I'm sure that, like me, you'll find yourself diving into her back catalogue.' Garner will join 23 high-profile authors championed by Lipa after the August publication of the interview, which the author described as 'fruitful'. Garner won international acclaim for This House of Grief, a retelling of the trial of Victorian man Robert Farquharson over the murder of his three sons. Farquharson drove his three children into a dam in south-western Victoria in 2005. The book received special mention in Garner's 2016 win of the US$150,000 (A$207,633) Windham-Campbell literary prize. The author first thought the award was hoax after an email in her junk folder from someone at Yale University who had 'good news' and wanted her phone number, she said at the time. New editions of several of Garner's books were republished in the UK and US in 2023 and 2024. Lipa shared a preview of her analysis announcing This House of Grief's selection on Instagram. '[Garner's] not looking for monsters – her interest lies with ordinary people who seem to have been pushed beyond their emotional limits,' Lipa wrote. Authors of each of Lipa's monthly book picks have sat for extended interviews with the singer, analysing their work and sharing music recommendations. The lone exception is Gabriel Garcia Marquez, author of 1967's One Hundred Years of Solitude, who died in 2014. Garner's is the 24th book to be included and the first by an Australian author, in a list dominated by American books but spanning Patrick Radden Keefe's Say Nothing to Guadalupe Nettel's Still Born. Lipa has previously singled out Albanian author Ismail Kadare as a personal inspiration, saying the novelist's work encouraged her connection with her Kosovan-Albanian heritage in a keynote speech for the Booker Prize 2022 ceremony. 'I often wonder if authors realise just how many gifts they give us,' she said.
