Scientists discover why some hot peppers are total wild cards
To get a sense of the spectrum, bell peppers rank around a 0 on Scoville Heat Units (SHUs), while notorious hybrids like the Carolina reaper measure as much as 2,500,000 SHUs. But even the Carolina reaper pales in comparison to Pepper X, the Guinness World Record holder for hottest hot pepper, ranking in at a bear spray-like 2,693,000 SHUs.
As you may have already worried, even a trained human taste tester can offer subjective assessments, making the Scoville scale more of an approximation than a science. Sometimes a highly rated pepper feels like a dud, or what should be a moderate jalapeno results in gulping down multiple glasses of milk. But even modern methodologies based on high-performance liquid chromatography (HPLC) can rate peppers in ways that confound a sweating hot sauce enthusiast.
If the capsaicinoids—particularly capsaicin and dihydrocapsaicin—are tallied accurately, then why the varying perceived heat levels? That's what a team of researchers recently set out to determine. Their conclusions, published in the American Chemical Society's Journal of Agricultural and Food Chemistry, identifies a trio of separate compounds that can essentially function as an 'anti-spice' weapon. And the ramifications go far beyond the palette.
To get to the bottom of the spice mystery, experts at The Ohio State University collected powdered samples from 10 pepper varieties including serrano, Scotch bonnet, and Chile de árbol. They then measured each fruit's capsaicin and dihydrocapsaicin levels using a process known as liquid chromatography mass spectrometry. A trained group of taste testers next tried each pepper powder after mixing them into tomato juice. Don't worry—no volunteers were harmed during the experiment. Instead, the concoctions featured just enough of each respective powder to bring the heat up to 800 SHU. That's around the spice of a Cuban pepper, but less than a poblano.
While each sample contained the same levels of capsaicin and dihydrocapsaicin, participants reported a significantly wide range of perceived heat across the 10 peppers. Their hot takes (sorry) implied more than just the capsaicinoids were at play.
Researchers then ran multiple more chemical composition analyses including nuclear magnetic resonance imaging to ultimately pinpoint another five naturally occurring compounds suspected of influencing each pepper's perceived spice level. The team next asked another group of taste testers to judge whether those compounds altered capsaicin and dihydrocapsaicin pungency, either on their own or in combination with one another.
Scientists ultimately determined that while three of those compounds—capsianoside I, roseoside, and gingerglycolipid A—reduced intensity, they didn't do so in combination with one another. Notably, none of them also offered a discernible flavor when mixed into water. According to study corresponding author Devin Peterson, these newly identified compounds can serve as key additives to fine-tune everyday cuisine.
'These advancements could enable the customization of desirable spicy flavor profiles or lead to the creation of a household ingredient designed to tone down excessive heat in dishes—the anti-spice,' Peterson said in an accompanying statement.
The possibilities extend far beyond the kitchen. Aside from food customization, pharmaceutical designers may soon turn to capsianoside I, roseoside, and gingerglycolipid A while creating new medications and treatments. Peterson suggests 'significant medical potential' could come by leveraging these compounds' ability to reduce perceived discomfort into novel non-opioid analgesic agents for managing pain
In the meantime, the new study serves as a good reminder to always take Scoville levels with a grain of salt—not that sodium would help ease unintended pepper pains, of course.

With help from Aaron Mak The rivalry between the United States and China over who will dominate artificial intelligence has moved to an obscure battlefield: A Geneva-based United Nations agency most people have never heard of. The Trump administration announced in June — a full year early — that it will push for a second term for American diplomat Doreen Bogdan-Martin as secretary general of the International Telecommunication Union, the organization that sets voluntary international standards for technology ranging from radio frequencies and broadband to 6G mobile phones. This is the earliest the State Department has ever made this kind of push at the ITU, an indication of the growing urgency of the U.S.-China technological rivalry. The Trump AI Action Plan, released earlier this month, specifically names the ITU as key to America's global tech dominance. But some observers worry that Trump's tough-minded foreign policy approach may already be hurting the U.S. in its quest to keep Bogdan-Martin in office. The ITU has been a great-power battleground before. In 2022, with Huawei turning telecom into a global contest, America and China waged a proxy battle for control over the agency. The Chinese backed Russian candidate Rashid Ismailov, a former Russian telecom minister who lost decisively to Bogdan. Government and tech insiders say the stakes are even higher now because the ITU is setting standards for AI —more than 150 to date — for how governments and countries integrate the technology across existing operations. That's included standards for testing and evaluation of AI systems in areas like conversational AI tools and computer network diagnostics. So whoever controls the ITU will shape the global standards for AI development and integration. Founded more than 150 years ago to standardize telegraph systems, the ITU today includes the U.N.'s 193 members along with representatives of corporations including AT&T, China Unicom, Nokia and Sony. Over the years, the agency has become central to the growth of telecom technology, negotiating international agreements on everything from radio spectrum allocations to the orbital paths of satellites in outer space. ITU added AI to its suite of technologies with the launch of its AI For Good program in 2017. U.N. members vote every four years to select the agency's secretary general, and that vote has grown more loaded each election. Bogdan-Martin's predecessor, China's Houlin Zhao, developed a reputation among Americans of using his position to bend the ITU toward Beijing. 'What you saw over and over again was him trying to align the ITU with endorsing Chinese technology and downplaying U.S. complaints about the potential for security breaches by using ZTE or Huawei technology, or endorsing Chinese Belt and Road Initiative telecommunications projects in developing countries,' said Brett Schaefer, an expert on the U.N. at the American Enterprise Institute, and a former member of U.N. General Assembly's Committee on Contributions. The U.S. blacklisted Huawei and ZTE in 2020 as 'companies posing a national security threat'. China's Washington embassy and New York U.N. mission did not answer DFD's questions. Nor did the State Department or Bogdan-Martin. Notably, for a White House that rejects much of the world order, it calls for the U.S. to leverage its positions in international bodies, including the ITU. 'Everyone in the world should be using our technology, and we should make it easy for the world to use it,' White House Office of Science and Technology Policy Director Michael Kratsios said last week in Washington. Observers say Bogdan-Martin's early re-entry into the race shows American officials are wary of China's growing influence. Bogdan-Martin easily defeated her rival in 2022, but Mark Lambert, a State Department veteran of the Biden and first Trump administrations, anticipated Bogdan-Martin's rivals would start their campaign ahead of time as well. 'If the Chinese and Russians are crafty, they'll find a like-minded candidate from Africa or Latin America to put forward to line up lesser developed country votes,' said Lambert. Mark Beall, who directed AI strategy in the Pentagon in the first Trump administration, said the U.S. would likely contest China's influence by appealing to the same voters from the lesser developed world, with the early announcement giving 'time to counter potential infrastructure-for-votes deals that some competitors might offer.' Recent signals in the wonky world of global telecom diplomacy may give the U.S. some cause for concern. Regarding 'A Teachers Union's Dangerous Embrace of AI' (op-ed, Aug. 1), I agree with Rebecca Zimmerman's prescription for helping students flourish—focusing on mental health initiatives, cellphone bans during the school day and science-based reading curriculums—all priorities the American Federation of Teachers champions. Where we disagree is over the effect of artificial intelligence in education, specifically Ms. Zimmerman's assertion that AI is 'another fad that will distract teachers.' AI already has an inescapable influence on nearly every part of our lives. I believe, for better or worse, that it will be as transcendent as the printing press.

These Markers May Predict Risk for Bone Loss in SLE
TOPLINE: Osteoporosis was prevalent in 41% of patients with systemic lupus erythematosus (SLE). Factors such as lupus nephritis classes III and IV, U1-ribonucleoprotein (RNP) antibodies, and longer disease duration were associated with lower areal bone mineral density (BMD), and active lupus nephritis was associated with osteoporosis. METHODOLOGY: Researchers analysed data of a subcohort of patients from a prospective observational study to identify factors associated with BMD and the risk for osteoporosis. They included 110 patients with SLE (mean age, 48 years; 92% women) from a hospital in Berlin between July 2015 and January 2022 who fulfilled the American College of Rheumatology/ European League Against Rheumatism 2019 SLE classification criteria and had current or prior glucocorticoid treatment. The analysis included SLE disease activity and a standardised bone health assessment with the DEXA scan and trabecular bone score measurement according to national guidelines. BMD- and osteoporosis-related factors were assessed. The following three co-primary endpoints were assessed: Areal BMD, expressed as the lowest DEXA-derived T score at the lumbar spine (L1-L4), total hip, or femoral neck A composite osteoporosis outcome (a femoral or lumbar spine T score ≤ -2.5 and/or history of a major fragility fracture and/or antiosteoporotic treatment) The prevalence of fragility fractures (any, vertebral, and non-vertebral). TAKEAWAY: Overall, 41% and 35% of patients with SLE had osteoporosis and lupus nephritis, respectively. Factors significantly associated with lower areal BMD included lupus nephritis classes III and IV (P = .025), U1-RNP antibodies (P = .009), higher C-reactive protein levels (P = .015), and longer disease duration (P = .001). Clinical remission (P = .033) and higher Health Assessment Questionnaire scores (P = .009) were positively correlated with areal BMD. Active lupus nephritis was strongly associated with osteoporosis in patients with SLE (odds ratio [OR], 7.42; P = .027), along with other factors such as older age (OR, 1.06; P = .003) and lower Health Assessment Questionnaire scores (OR, 0.29; P = .005). IN PRACTICE: "The identification of SLE-specific risk factors allows us to recognize patients at particular high risk for OP [osteoporosis]. This prompts us to suggest a thorough osteoporosis check-up in patients with high CRP [C-reactive protein], LN [lupus nephritis], or U1-RNP-antibodies," the authors wrote.
