It turns out there's a simple way to guarantee perfect roast potatoes every single time thanks to some top tips from Jamie Robinson, Tesco's head chef - who is here to save your dinner time
Roast potatoes are one of the most versatile side dishes for any meal, and there's a simple trick to get them crisp every time. Crispy and golden with a fluffy inside is what everyone wants, but sometimes you can be left with a soggy mess.
So to ensure everyone gets their roasties perfect every single time, Tesco 's head chef Jamie Robinson is here to help. The expert has shared his best-kept tattie secrets - and you will be sure to impress your guests.

While Jamie's top tips were for Christmas, you can copy his method any time of the year - and it's all thanks to some advice from his mum.

"I've got a proper hack that we do, but I actually learned it from my mum," says Jamie. "My mum always does the roast potatoes, and she blanches them for a week before Christmas to get them really crispy. She'll blanch them in boiling water, take them out and let them cook on a wire rack.
"Then, she bags them up with beef dripping and freezes them before taking them out on Christmas Eve. This process of freezing will mean the starch will really set in place.
"Then, when you take them out of the freezer and cook them, they are the crispiest, fluffiest roast potatoes. It saves messing about on Christmas morning."
Jamie recommends taking all items out of the freezer on Christmas Eve, so they are ready to cook on Christmas Day. "I really maximise my freezer in the lead up to Christmas", he says.
"There's certain things I won't freeze, like carrots, because I like honey roasting them, so I'll do these fresh on the day." For those wanting to save space, Jamie recommends using an air fryer to roast up potatoes on the day.

"I think the key thing for me is if I'm cooking for a few people up to four, you've probably got enough space in the air fry for the roast potatoes," he says. "It's brilliant and saves a lot of time.
"You can even roast some parsnips in there. Put them in boiling water first, cool them down and then put them in the air fryer with some honey or maple syrup. That can save a lot of oven space."
Jamie's ultimate roast potato recipe
Ingredients:

1kg of Tesco Maris Piper or Tesco Finest Red Skin Potatoes
2 heads of garlic
1 bunch of thyme

4 bay leaves
100ml Tesco pure vegetable oil or dripping
Salt and pepper

Instructions:
Peel the potatoes and chop into quarters, then gently boil in unsalted water until tender. Remove from the water and place on a large baking tray - move them around a bit to ruffle the sides and then leave to cool completely. Once cool, pop in the fridge for 1-2 hours. Once chille,d remove and add to a bowl.
While the potatoes are in the fridge, finely chop half the thyme and garlic and add to the bowl of chilled potatoes along with the vegetable oil or dripping. Coat them gently in the bowl and then either add to freezer bags and freeze until needed or add to the roasting tray. Season with salt and pepper and bake in the oven.
Roast at 220°C for around 30-40 mins, giving them a shuffle every 10-15 mins. Finely chop the remaining garlic and thyme and add to the roasties at 30-40 minutes in, then continue cooking at 220°C until they are even and crispy.

"And you have a situation where you have these dog poo bags hanging off various bits of shrubbery like Christmas tree decorations." Article continues below The Plaid councillor said he couldn't understand this mentality, with the bags ending up "languishing" on shrubs and trees for years to come. Cllr Evans wondered if he as a councillor could request owners to put uncontrolled dogs on a lead, and "probably suffer the verbal abuse that will entail afterwards". He asked this as the existing order defined authorised officers of the council as someone who was authorised in writing and not necessarily a council employee. ‌ An officer at the meeting said he would get back to Cllr Evans, adding that at present authorised officers of the council referred to enforcement officers only. The officer said increased enforcement could be looked at for the riverside area in question. The meeting was reminded that there were dog restrictions at a strip of Llansteffan beach between May and September. A one-mile section of Cefn Sidan beach is also a dog-free zone during these months. Further restrictions can be added to public space protection orders but only where there is evidence to do so. Article continues below The order relating to dogs in Carmarthenshire first came into effect in 2016 and has to be renewed every three years. A report before the committee said from 2016 to the end of 2024 there were 3,425 dog fouling complaints and that 136 fixed penalty tickets were issued and seven people prosecuted for not paying the fine.

Jamie Oliver has concocted an effortless cheese and chive scone recipe that promises to go from mixing bowl to plate in less than 20 minutes, making it an ideal companion for your lunchtime soups, salads or an al fresco snack. The celebrated chef introduced these scones in his title 'Jamie's Air Fryer Meals', claiming you can prep them in a mere eight minutes before zipping them into the air fryer for another dozen. The supermarket chain has recently axed its Southern Fried Chicken instant noodles. The packaging described the product as being "packed with flavour". ‌ Fans of the product have recently taken to social media as they were unable to find the product in their local Tesco stores. Writing in a Reddit thread one shopper said: "These are my go to quick food and my local Tesco has none on the shelf and they've disappeared off of the website too. I'll be gutted if they've discontinued them." ‌ Another person responded, confirming that the product had been axed in their local Tesco store just last month. In response, the original poster said: "That sucks. I really struggle to find noodles like this I enjoy, and these are the only ones I've found recently." Another suggested that Tesco might be adjusting the recipe or designing new packaging for the product. They added: "I've noticed it's been happening to a lot of Tesco products recently." Another fan replied: "Probably, if you liked them, these stores always stop what people like! However, Tesco has since confirmed that the Southern Fried Chicken instant noodles had indeed been discontinued across its stores nationwide. The reason behind the axing was that Tesco had replaced it with another product with a Chicken flavour that customers could buy. ‌ Tesco's website shows that it sells a small range of instant noodles under its own-label brand "Hearty Food". As of writing, shoppers can get Chicken flavour instant noodles and Curry flavour instant noodles for 35p thanks to Aldi's price match. Alongside this, customers can grab a pot-noodle inspired Chicken and Mushroom flavour - which comes in a plastic tub - and a Curry flavour for 54p. Recently, Tesco also discontinued its own-brand tomato and basil soup from its chilled range. The soup was described online as "smooth tomato blend finished with basil and a hint of black pepper". It was priced at £1.85 for a 600g tub. A Tesco spokesperson confirmed the news, and said it adjusted its soup range throughout the year, in line with demand.
