To boil or not to boil is often a dilemma that faces those who use packets and cartons of pasteurised milk. To address the age-old question of whether pasteurised milk needs boiling, indianexpress.com spoke with G Sushma, clinical dietician at CARE Hospitals, Banjara Hills, Hyderabad.
Sushma said that there is no need to boil pasteurised milk before consumption. 'Pasteurised milk undergoes a heating process to kill harmful bacteria,' she explained. In fact, boiling may compromise its nutritional value. 'Prolonged heating can cause the loss of heat-sensitive vitamins like B12 and C,' Sushma said.
She also confirmed that pasteurised milk available at convenience stores can be safely consumed directly before the expiry date, provided it is stored at an appropriate temperature to maintain its shelf life.
Packets and cartons of pasteurized milk are an everyday staple in our kitchen cabinets. According to Sushma, the texture and taste of milk may change when it is boiled. 'Boiling pasteurised milk is not known to cause negative health impacts on the body. However, alterations in the protein structure of milk may cause difficulty in digestion. Denatured proteins are hard for the body to break down and lead to increased waste formation,' said Sushma.
'This may even result in inflammation and other digestive health-related issues. Calcium present in pasteurised milk is also believed to be of poor quality and may cause severe risks such as kidney stones,' she said.
According to Sushma, individuals prone to allergic reactions or sensitivity to milk protein, and those diagnosed with lactose intolerance, should avoid pasteurised milk.
'If you have been advised to cut out milk from your diet by the advice of a healthcare professional, or if consumption of pasteurised milk aggravates your pre-existing medical conditions, such as galactosemia, you should avoid drinking such milk,' she said.
'And of course, those more prone to a sensitive digestive system may experience difficulty in digesting proteins present in pasteurised milk,' she added.

The mother delivered food on an electric bicycle in the summer heat, carrying her daughter in a box attached to it. According to Zhu, her four-year-old daughter was diagnosed with a tumour two years ago. Her child had undergone three surgeries, nine chemotherapies, and twelve radiotherapies. Zhu And Her Husband's Struggle Zhu and her husband, Guan, who is also a delivery rider, are finding it challenging to balance work and childcare. They can't afford childcare services, so Zhu takes Nuoxi with her on her delivery rides, placing her in a box attached to her electric bicycle. Guan works full-time and thus is unable to look after his daughter. Response From The Public and Authorities The video has sparked an outpouring of donations and sympathy from the public. Dr Pranav Honnavara Srinivasan, consultant surgical gastroenterologist at Fortis Hospitals, tells 'No, there is currently no scientific evidence supporting the claim that chips with a burnt appearance are contaminated with a specific mould that targets the throat. A darker appearance in chips is most often due to overcooking or the caramelisation of sugars during frying, especially in chips made from potatoes with high sugar content.' Dr Jagadish Hiremath, a public health intellectual, concurs, 'There is currently no scientific evidence to support the idea that chips with a burnt look are contaminated with mould that specifically targets the throat.' He adds that mould, which can affect respiratory or throat health, typically grows in moist, poorly ventilated environments. The manufacturing process for chips involves high temperatures that significantly reduce the possibility of microbial growth, including mould. 'Unless a packet has been compromised after production, the chances of chips carrying throat-targeting mould are extremely low,' he states. According to Dr. Srinivasan, signs of contamination in packaged snacks include a musty or unusual odor when the packet is opened, visible discoloration resembling green, blue, black, or white mold growth, and an off or stale taste. Swollen packaging, punctures, or broken seals can also indicate exposure to moisture or bacteria, increasing the risk of spoilage. 'If the chips smell odd, feel unusually soft or damp, or show any powdery residue, they should be discarded. Consumers should also check the expiration date and avoid consuming snacks stored in hot, humid conditions,' he suggests. If a chip looks darker than usual, Dr Hiremath stresses, it is most likely overcooked and not harmful in itself. However, if it also smells odd or tastes unusually bitter or chemical-like, 'it is best to stop eating it.' Such changes could indicate oil degradation or rare instances of contamination. Dr Srinivasan assures, 'While burnt chips may contain higher levels of acrylamide — a chemical formed when starchy foods are cooked at high temperatures — occasional consumption of such chips is unlikely to pose significant health risks.' Although eating one or two overcooked chips is unlikely to cause health issues, it is always safer to trust your senses. 'If there is any doubt, it is better to discard the product. Consumers should also take note of expiration dates, storage conditions, and the overall quality of the packaging before consumption,' concludes Dr Hiremath.
