Driving ‘zero waste' in Bali
In 2023, the eco-luxury resort clinched a spot in the World's 50 Best Hotels annual list – alongside iconic locations such as Raffles Singapore, Aman Tokyo and Claridge's in London. But what is less known is the fact that it has taken its own plastic ban and compost kitchens a step further, to become a working model of eco-hospitality. For example, it produces only 0.5 per cent landfill waste, and runs a zero-waste restaurant – a claim few other garlanded hotels can make.
In this week's BT Lifestyle, we visit the property in Bali and learn more about how style, nightlife and serious waste management can not only co-exist under the same roof, but actually thrive.
In Health, we ask the question: Is irritable bowel syndrom (IBS) simply caused by stress and not a 'real' condition? This being IBS Awareness month, we explore both the misconceptions and science behind this complex gut-brain disorder, and whether exercise and diet can bring it under control.
In Arts, get a sneak peek at the upcoming production of Macbeth, the latest Shakespeare in the Park production to take place at Fort Canning. And in Dining, we see if Tempura Ensei, the Singapore outpost of a 120-year-old Edo-style tempura restaurant in Japan, lives up to its ancient reputation.

Cooking up success abroad
FOR chef Jimmy Lim, the proudest moment was when he was awarded three Michelin stars for his restaurant JL Studio in Taiwan – the first Singaporean to win that accolade for serving his own interpretation of food from the city-state. It was perhaps the one moment that sealed his pride as a Singaporean, he says in BT Lifestyle's spotlight this week on locals who have made good overseas. In light of SG60, we speak to several Singaporean chefs who have earned their stripes in Michelin-starred restaurants from Norway to Hong Kong, who epitomise the notion that you can take a Singaporean out of Singapore, but you can't take Singapore out of them. Chefs sharing their stories include Mathew Leong of three-Michelin-starred Re-Naa in Norway and Aven Lau of the one-starred Epure. And while their stories differ, their hearts remain at home. Beyond the food and beverage arena, we meet Daren Tang, the first Singaporean to head a UN agency. The Geneva-based Tang, who is director-general of the World Intellectual Property Organization, has spent the past five years working to make the concept of intellectual property more accessible and relevant to the layman. In the Arts, the Republic's 60th anniversary celebrations continue with Singapore Gallery Month, with more than 30 leading local galleries showcasing some of their best artists. Meanwhile in Dining, a revisit to Encore by Rhubarb reveals down-to-earth and affordable Michelin-level French cooking at the former one-starred restaurant in Duxton Hill. Moshe Safdie
THINK Marina Bay Sands (MBS), think Moshe Safdie. The man who designed Singapore's iconic landmark is himself an icon in the world of architecture. Now, he's lending his name to MBS Part 2, or rather IR2 – the as-yet-unnamed US$8 billion development being built next to the integrated resort. The stakes are high for the 55-storey, 570-suite luxury hotel tower. The building has to be 'substantial in its own right and have an identity that complements and, in a sense, improves on the existing icon', says the celebrated architect who was in town for the groundbreaking ceremony. Read what Safdie has to say about the impact that MBS has made on the Singapore skyline, and on his career, in an exclusive interview with BT Lifestyle this week. We also head across to Singapore's other integrated resort, Resorts World Sentosa, where another groundbreaking attraction is about to open. We give you a sneak peek of the Singapore Oceanarium – in which the former SEA Aquarium has been completely transformed into a mega marine institute that's three times the size of the original and devoted to the conservation of sea life. Dive into a world of sharks, sea horses and sea jellies in vivid colour, in our pictorial essay of these enchanting sea creatures. Finally in Dining, French cooking goes casual at The Plump Frenchman, a new bistro that serves up affordable classics in cosy surroundings. For all this and more, don't miss this week's BT Lifestyle.
