On a recent farm tour of one of the country's most prestigious organic operations, an agricultural scientist made a point that opened my eyes to better farming standards: free-range chickens, he explained, need cover. Chickens descend from the red jungle fowl of south-east Asia, so it's no surprise they feel safer under a canopy. Trees provide shade from the sun, shelter from rain and protection from predators, but, more than that, they also encourage birds to roam and express natural behaviour and reduce welfare issues such as feather pecking, resulting in genuinely healthier, happier hens.

When it comes to welfare, forest-reared chickens are the gold standard, so when an egg packer commits to planting trees or providing meaningful canopy cover, as several UK egg brands do, I know the quality is likely to be superior. It's also worth noting that, while free-range chickens gain outdoor access at only 21 weeks, organic hens are allowed out from 12 weeks – an important distinction in their welfare.
This was one of the toughest taste tests I've done so far. When judging egg quality, I look at shell strength, the viscosity of the whites and the richness of the yolk, but freshness affects the albumen, and yolk colour is now largely engineered through beta carotene-rich feeds such as maize, paprika and marigold. Interestingly, the organic options all had classic sunshine-yellow yolks, in contrast to the vivid orange seen in several non-organic brands. A bold, marigold-orange yolk might be striking, but ultimately it doesn't tell us all that much about the egg's flavour.
With freshness varying by the box, I boiled all the eggs and scored them instead on what truly counts: taste, provenance and welfare. If you want the best flavour and nutrition, choose eggs with the longest sell-by date in the store. Just be warned, the fresher the egg, the more stubborn it is to peel when boiled. To overcome this, cool it under running water and peel immediately.

The Business Benchmark on Farm Animal Welfare ranks Waitrose as a tier-two leader, and while no specific farm origin is listed, the breed itself is impressive. Outstanding value with premium taste and trusted sourcing.

Thick, deep brown, speckled shells with glowing orange yolks and the most layered flavour in the bunch – rich, savoury and complex. A WOMAN who spent thousands renovating her Victorian home has been ordered to tear down her loft conversion after it was branded a "monstrosity". Rozia Hussian, 43, built a large extension on top of her 125-year-old terraced property in Worcester. 4 4 Records show the mid-terraced house was bought for £100,000 in 2003 and pictures show the outside was in a shabby condition with peeling paint and chipped brick work. Over the last four years, the three-bedroom house on Wyld's Lane, has undergone a complete makeover and according to Rightmove it is now worth up to £320,000. A wall and intercom system has been installed at the front of the house while a large dormer was built on top of the two-storey house. Mrs Hussain now faces having to demolish the dormer after Worcester City Council rejected her retrospective planning application. The council stated: "By virtue of its size, design and position, the addition of the large box dormer to the front of the property results in detrimental impact and creates significant harm to the character and appearance of the existing property and wider street scene in which it sits. "The dormer at Wylds Lane is much more visually intrusive than the approved, well-designed, more subtle addition." Mrs Hussain, who owns a newsagents in the city, said: "I don't know anything about the planning application being rejected. "I don't think it looks too big." Her neighbours have been mixed in their reaction to the council decision. One said: "I think the house looks much better now. Our pretty town has become a ghetto plagued by machete-wielding yobs "It was in a terrible state a few years ago but it now looks modern and clean. "The dormer doesn't really bother me but I think some people are concerned because it looks right onto their properties." Another resident, who lives nearby in a similar property, said: "A few years ago I applied to have a dormer on my house but it was refused. "The reason the council gave was because it would not be in keeping with the area or sympathetic to the age and heritage of the property. "In my view I just think that it would be grossly unfair if this woman was allowed to have a large dormer on her property when I was not. "I mean the extension is very big. It looks like an executive box you get at Premier League football grounds. "When my friend visited he asked what the monstrosity was on one of the houses so it's clearly noticeable to people." Mrs Hussain has three months to tear down the dormer or face enforcement action. A city spokesperson said: "An enforcement notice was served on 17 June that comes into effect on 17 July. "This requires the applicant to remove the dormer and restore the roof or adapt the current dormer so that it complies with the planning permission given. "They have three months to carry out the works. "They have until 17 July to appeal against the notice." Sunday mornings for the Church of England parish priest are hectic. As the sun shoots through the edges of the curtains and many of us edge under the duvet, the vicar is up and about preparing for flock administration. In rural areas, such as ours, that can mean services in a handful of some seven churches. So they must prepare to chug along the lanes and then warmly greet the noble volunteers who have cleaned and decorated the church and then officiate for 14 odd souls who have bothered to turn up. Later that day, there might be more services and some private visits to elderly parishioners who request the sacrament at home. The visiting priest, a throwback to the days – now hard to imagine – when a doctor did home visits. She might already be wearing a clerical shirt and stiff dog collar, black trousers and black shoes, but onto the back seat goes the cassock, surplice, the seasonal stole, then maybe some wellies to get up that muddy church track. As there are communion services today, there's also a Tupperware box of communion wafers, as delivered by post from FA Dumont Church Supplies and a bottle of Poterian Fair Trade Communion Wine (a light South African bottle, fortified to 15 per cent and with a balancing sweetness, akin, but not as heavy, to port). Then, onto the front seat goes their Bible, prayer book and the little black book with their sermons in and their phone with the list of churches waiting for their officiating. But then, what's this? Their other half calls from the house: 'Darling, you left the dietaries on the kitchen table.' Lest they forget! There's four gluten-free in the first church, one in the second, one non-alc in the third. If dealing with declining attendance, rudderless leadership, poverty, leaking roofs and a visceral culture clash of modernity and tradition wasn't enough, the vicar must now cater for varying dietary requirements. Ahead of the General Synod, which began on Friday in York – an annual event of discussion and debate by the church's governing body – one Abigail Ogier, a lay synod member from the Diocese of Manchester, posted an official question as to what progress had been made to enable parishioners unable to consume alcohol or gluten to take communion. After all, Canon B17 of the Canons of the Church of England stipulates that bread for Communion must be made from 'the best and purest wheat flour that conveniently may be gotten' and that wine should be 'the fermented juice of the grape, good and wholesome'. And the Church's official view is that while you can water down the wine and fiddle with the bread recipe, it must still contain minimal wheat and the wine must still be made of fermented grape juice. Which is a red flag for the gluten-averse or non-alc purist. Many of whom have had enormous fun in recent years marauding their way through the hospitality sector parading their intolerances, often at the very last minute, just as the chef calls, 'Service!' at the pass. And, while I wouldn't for a moment doubt the likes of the genuine coeliac, nut-allergic, or alcohol-intolerant, everyone in hospitality knows that many people take pleasure in gloriously labelling themselves as intolerant as they worship the latest food fad, paraded by some pesky irritant on TikTok. But the intolerant minority have sway, which is why whenever you order in a UK restaurant the server must ask, 'Does anyone have any allergies?' in spite of the fact that the overwhelming answer is 'no', and that if you have an intolerance the responsibility to remember and voice it should be on you. So will the intolerance purists cry foul if the C of E sticks by its guns? A blessing isn't quite the same as a full-on bit of Sunday morning transubstantiation. So doubtless to appease the shrieking few, the vicar must add to his burden of duties at the altar rail. 'Blood of Christ, Non-alc or 15 per cent ABV… Body of Christ, single cross, sealed edge, diameter special wholemeal or individually-wrapped gluten free?' As a restaurant critic with a diagnosed intolerance of wheat, dairy and alcohol, which I studiedly ignore as the fun of consumption outweighs the ensuing dodgy tummy, I'll never waver from a wheat-based wafer. And I demand the 15 per cent ABV. The reward of slogging through a service being that little morning hit of alcohol. I'm not sure if it's the blood of Christ, but my own spirits certainly soar.

The operator of a waste recycling site which was stripped of its licence over concerns the facility was causing a health hazard has appealed against the Environment Agency (EA) issued a permit revocation notice in June against Minore, which runs the site, in Hacking Lane, South Elmsall, which came into effect on 4 July.A planning inspector said excessive amounts of hazardous material stored at the land had created multiple health risks, while residents also complained about a foul smell coming from the Chambers, area manager for the EA in Yorkshire, confirmed Minore, also known as Mineral Processing Ltd, had launched an appeal. She said: "The environmental permit will now stay in place until the Planning Inspectorate has announced the outcome of this appeal."The suspension notice, however, remains in place during this time. [This will] prevent more waste being brought onto the site and requires the removal of waste that is in breach of the permit conditions."If the operator does not comply with the suspension notice, it will be committing an offence."She added the EA "understood the impact this site is having on the community and our increased regulatory response continues". Last month, Wakefield Council refused permission for the facility to continue to documents, almost five times the permitted amount of materials had been stored on the permit had allowed a maximum of 50,000 tonnes to be stored at the information provided by Minore between 2016 and 2023 revealed there were 233,772 tonnes at the site, according to the Local Democracy Reporting Service. The EA has called for the removal of at least 180,000 tonnes of non-inert material.A planning inspector said in a report published last month that the facility also posed a risk to nearby watercourses, including Frickley previously said it was "disappointed" with the decision from the company added it planned to transform the land into wildflower meadow, wetland, ponds and public open space.A spokesperson for the firm said: "Currently the site is excavating materials and processing them, which is not in contravention of the notices issued by the EA but in compliance with them."The site has been here since the late 19th century as Victorian brickworks, ash pit and council tip for the deposit of coal ash from domestic fires, up until the late 1950s."The company samples the water regularly as part of the monitoring regime and has found no effect on Frickley Beck when taking water samples."Our employees have been working at the site for over 12 years and now fear for their jobs due to this escalation."
