Fried Chicken Tenders with Honey Pecan Glaze

Ingredients
1 ½ pounds chicken tenders (about 18)
1 cup flour
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 large eggs
1 cup Panko bread crumbs
Unsalted butter
Extra Virgin olive oil
Glaze:
1 cup butter
¾ cup honey
¾ cup coarsely chopped pecans
Directions:
Combine the flour, salt, and pepper in a shallow bowl. Beat the eggs with 1 tablespoon of water in another shallow bowl. Place the breadcrumbs in another shallow bowl. Dredge the chicken tenders on both sides in the flour mixture, then dip both sides into the egg mixture and roll in the bread crumbs, pressing lightly to coat.
Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large sauté pan and cook the chicken tenders on medium-low heat for about 3 minutes on each side, until just cooked through. Don't crowd the pan. Add more butter and oil and cook the rest of the chicken tenders.
Glaze:
Melt butter in heavy small saucepan over low heat. Stir in honey and bring to boil. Add pecans and simmer for 15 minutes.
Arrange fried chicken tenders on platter. Pour glaze over the hot chicken. Serve immediately.

Bear breaks through window at western Pennsylvania retirement community
A retirement community in western Pennsylvania had a surprise visitor this week. St. Andrew's Village said a juvenile black bear broke through a window and had to be lured back out with Rice Krispies treats. Presbyterian Senior Living, which runs the "life plan community" in Indiana, Pennsylvania, said the break-in happened a little after 11 p.m. on Tuesday. To prevent future wildlife encounters, the game warden safely relocated the bear to a more suitable habitat today and all bird feeders on our campus were removed," Presbyterian Senior Living said in a news release. If there are food sources like bird feeders or garbage cans, bears that are used to people can be drawn to backyards. The Game Commission says Pennsylvania's black bears are rather non-confrontational, and attacks are rare. Most of the time, black bears are just looking for an easy meal.

Wildfire smoke continues into the Pittsburgh region along with multiple storm chances
Thursday begins on a very warm and smoky note across most of Western Pennsylvania and Northern West Virginia. Wildfire smoke and haze have mixed down to this surface, resulting in code yellow to code orange air quality, meaning that the condition of the air is unhealthy for those with any underlying health conditions. WEATHER LINKS: Current Conditions | School Closings & Delays | Submit Your Weather Photos This wildfire smoke and haze will continue to be in place across our area through 2-3 p.m. this afternoon before thunderstorms develop. The outflow winds from these thunderstorms should finally help to stir up the atmosphere a bit and mix out the smoke. Severe weather chances over the next three days KDKA Weather Center Ahead of the storms, high temperatures will easily reach the low to mid-80s, which is a few degrees above normal for this time of year. Speaking of storms, the SPC has most of our area in a level 1 out of 5 severe risk for today and tomorrow. Storms should form in the increasingly moist air ahead of a cold front and a weak disturbance moving in from the northwest. We should see development around 3 p.m. Thursday, with the highest coverage generally in our northwest zones, although some models suggest there could be simultaneous development in the Laurel Highlands and Ridges as well. Initially, coverage will be isolated, but as storm tops collapse and weaken, this may spawn new development in different areas. Low temperatures and rain chances on Thursday evening KDKA Weather Center Storm coverage should diminish after 8-9 p.m. with only scattered showers overnight, but another disturbance moving in during the mid-morning hours of Friday will likely re-ignite storms during the midday and afternoon hours. There will not be a ton of wind shear today and tomorrow, so these will be more pulse-like, disorganized storms with a localized "microburst" wind threat along with hail. Winds could gust upwards of 60-70mph in isolated spots along with pea to quarter-sized hail. Rain chances over the next week KDKA Weather Center The cold front will eventually sag south into the region by early Saturday with a chance of early morning showers. Most of Saturday into Saturday night is trending drier as we will be in between systems. On Sunday, moisture will return north ahead of a strong low system and cold front poised to arrive on Monday. We could see storm chances increase as early as Sunday afternoon, with the higher chances moving in on Monday. This system will have much stronger winds aloft accompanied by sufficient moisture and some instability, so we will need to keep an eye on the severe weather threat with next Monday's system. Hundreds celebrate life of 19-year-old Jack Constable from Norton Fitzwarren
HUNDREDS of people celebrated the life of 19-year-old Jack Constable at a "beautiful" funeral last month, with his parents announcing a memorial fund in his honour. Over 425 people turned out to pay their respects to Jack, from Norton Fitzwarren, who died on April 10 after an 18-month fight with extremely rare Ewing Sarcoma cancer. The service was held at Taunton Crematorium on May 9, with Silk Mills Road temporarily closed as a funeral procession led by 16 supercars travelled through Taunton, marking Jack's "passion for cars" — including Lamborghinis, Ferraris, Aston Martins, and McLarens. Katie Constable, Jack's mother, said: "It was such an amazing funeral, it was just lovely that everyone was there who should have been. On arrival at the crematorium, it was truly overwhelming as so many people had travelled from every direction to support us and, more importantly, to show their respect for Jack and the battle he endured with dignity and grace — including my best friend from Oz. Jack loved our family and his friends and everyone that supported us, he made everyone laugh with his quirky way, and constantly checked in on all around him." She added: "Jack's four best friends and two cousins were pallbearers and carried him into his favourite drum and bass tune, Sweet Carolina. His other besties walked Jack in, and his beautiful girlfriend Poppy walked behind." There were "no dry eyes" at Jack's final goodbye, which included a rendition of All Things Bright And Beautiful and readings from his girlfriend, Poppy Charles, 19, and friends Kira, Dave, and Fin. Katie wishes to share a "special thank you" to trumpeter Elliott Coles, who performed a "wonderful solo of Amazing Grace". The service was then shown "35 pics of Jack's wonderful fulfilled life with everyone that mattered". Jack's adored dogs, two Blue Staffies, Ivy and Olive, attended the ceremony. In his honour, Jack's parents are launching The Jack Constable Memory Fund, which will be the only UK charity dedicated to raising funds for the fight against Ewing Sarcoma cancer. Jack's charity will become his "legacy for eternity", Katie said. Donations can be made at with fundraising events planned. Jack's parents, Katie and Jeremy Constable, said: "As the days and weeks pass, our hearts still in pieces with an emptiness never to be filled, we realise that keeping busy is the wisest option and still with so many wonderful friends holding fundraising events which will now go into The Jack Constable Memory Fund once up and running. "This charity is super important as it will be the only Ewing sarcoma charity in the UK. Jem, myself and the incredible people we have surrounding us will forever more raise money to help other families not feel the pain from broken hearts as we are having to. So please help us with any ideas, and let's together continue to help others as this would be what our super kind-hearted son would want. "We are grateful for all the money raised that helped Jack beyond words during his 18-month battle, and let's pull together and help as many others as possible."
