Dill Cocktails Take Center Stage At Bars Around The Country

As cocktails become more culinary in nature, and modern bars continue to overlap with kitchens, the bartender's arsenal keeps expanding. Ingredients usually reserved for Greek salads and roast chickens are now stocked alongside bottles of whiskey and gin.
Add dill to the shopping list. The herb once relegated to savory cooking has begun popping up in cocktails, as more bartenders enlist its unique flavor to liven up recipes.
'To me, dill has a little bit of an eye-raising character to it,' says Logan Rodriguez, the head bartender at Smithereens, a seafood restaurant and bar in New York. 'I like to think of it as a flavor underdog, since I'd wager that the main flavor association in popular culture is with pickles and possibly tzatziki.' He says the herb's grassy, anisette brightness can cut through the flavor noise in cocktails like the Goblin, a Gimlet-esque recipe that draws loose inspiration from leche de tigre. Dill is merged with other savory ingredients, including tomatillo, serrano pepper and cilantro, to provide a counterpoint to coconut oil-washed gin and orange.
At Little's Oyster Bar in Houston, mixologist Oliver Brooks features a dill cordial in his Dill Breaker cocktail. The cordial is made with fresh dill, citrus, sugar and water, and then blended and strained before it's eventually shaken with vodka, lemon juice and rich simple syrup. Brooks wanted to use vodka to let the dill shine, but he says that gin can also work nicely with dill.

'The real limit is just how adventurous a drinker you are,' Brooks says. 'I think if you got it just right, rye whiskey would be truly groundbreaking, but it would be tough pairing. I also think some French rhum agricole or Mexican rum would make an interesting Daiquiri–style drink.'
When experimenting with dill, Brooks thinks of complementary, non-spirited ingredients like citrus—specifically lemon and grapefruit—as well as cucumber, mint and parsley. 'Yogurt would also be great, either incorporated into a syrup or as some kind of spirit wash, which would lend a nice creaminess and would soften the dill a bit.' He can even imagine a summery Bloody Mary made with a light tomato base, and suggests consulting Scandinavian, Middle Eastern and Israeli cookbooks to get more inspiration for how to use dill in drinks.
Isai Xolalpa, the director of beverage at W Philadelphia, also mentions Mediterranean cuisines as inspiration for introducing dill's distinctive, aromatic flavor into cocktail programs. 'Dill offers a refreshing and unexpected savory note, perfectly suited to contemporary palates looking for complexity beyond sweetness,' he says.
Patrons of the W Philadelphia's Living Room bar can get a dose of dill in the Oaxacan Negroni, which Xolalpa makes with lemongrass-dill infused mezcal, red Italian bitters, sweet vermouth and super foam, a housemade egg white substitute. The drink is garnished with a trio of pickled onions for an extra kick of savoriness.

If you want to use dill in drinks at home or behind the bar, Xolalpa says that 'infusions work exceptionally well, capturing the dill's vibrant aroma, herbal complexity and subtle sweetness. When infused into spirits, dill highlights refreshing notes of anise and delivers intriguing layers of savory flavor.'
Elsewhere, Michelin-starred Indienne in Chicago serves the Seabass, a dilly drink that repurposes kitchen waste. Head mixologist Akshar Chalwadi starts by infusing gin with steamed and blended smoked salmon and sea bass trimmings, a combo that is macerated for 24 hours and then strained. The cocktail also incorporates lacto-fermented cucumbers, which are steeped with dill for 24 hours and balanced with sugar, and the finished drink is garnished with dill dust.
Dalida in San Francisco turns to nearby Presidio Park for inspiration. Bar director Evan Williams wanted to capture the flavors of the park in his beverage menu, so he incorporates a number of fresh herbs, herbal teas and herbaceous spirits. The Halfdan Was Here cocktail calls for dill aquavit, clarified granny smith apple juice, celery, tarragon, musk willow water and lime. In a bit of cocktail inception, it's topped with a vegan foam made from the same cocktail so drinkers can see how the texture changes the flavor.

Right, so it's not just dill-spiked Gin and Tonics and Tom Collins we're seeing on bar menus. Though, to be clear, both classics are great vehicles for dill. For decades, the herb has taken a backseat to other more common ingredients, and it's still not enjoying the ubiquity of something like mint. But bartenders are taking notice and harnessing dill's unique flavor.
'As we enter an era of mainstream experimentation in cocktail techniques, there's real novelty in branching out from herbaceous staples like mint, basil, rosemary and thyme and getting a little more culinary,' says Rodriguez.

It's thought that the foursome may be staying at a residence owned by King Willem-Alexander and Queen Maxima of the Netherlands. The private property in the Peloponnese region includes a tennis court, a swimming pool, a private beach and an exclusive harbour — perfect for the Spanish King, who loves to sail. Prior to their Greek getaway, the royal family spent time in Mallorca, their traditional summer holiday destination. They hosted a dinner at the Marivent Palace in Palma de Mallorca and attended an exhibition by the artist Joan Miro in La Lonja. However, Andrea Caamano, HELLO!'s Digital Content Director reported that King Felipe, Queen Letizia and their daughters were then looking for a more private getaway, as Mallorca is "very open to the media and the public." "Their vacation in Greece is their real time away from the spotlight, it's ultra-private and where the royals can truly disconnect. They have a warm relationship with the Dutch royals, and have previously stayed at King Willem-Alexander and Queen Maxima's Greek abode, so it's no surprise that they have chosen to travel there again this year," Caamano said. The two royal families share several special connections. King Felipe's mother, Queen Sofia, was born in Athens as Princess Sofia of Greece and Denmark. She renounced her Greek titles when she converted to Catholicism to marry then-Infante Juan Carlos of Spain in 1962. Additionally, the Spanish royal family helped host King Willem-Alexander and Queen Maxima's eldest daughter, Princess Catharina-Amalia, 21, when she studied abroad for a year in Madrid after receiving kidnapping threats at the University of Amsterdam in 2022. Last year, the Dutch King shared his gratitude towards the Spanish royal family for helping his daughter and heir maintain her studies during the tumultuous time. "This was made possible by the kind efforts of many of your compatriots and yourselves. A touching demonstration of friendship at a difficult time. I'd like to express my heartfelt thanks to you and everyone else who helped arrange this," he said during a banquet welcoming the Spanish King and Queen on an official visit. The summer break comes as Princess Leonor is currently in the midst of a three-year military training program as she prepares to follow in her father's footsteps. On July 16, during a ceremony at Escuela Naval in Pontevedra, Spain, the King promoted his daughter to the rank of Midshipman of 2nd grade and awarded her the Grand Cross of Naval Merit. Befitting her status as the future commander of Spain's armed forces, the Princess of Asturias wore a white naval uniform for the ceremony, standing side-by-side with her father. Just check the songwriting credits for rapper-turned-pop-punk-rocker Kelly, whose new album, Lost Americana, features a track titled 'Orpheus' credited to co-writers Kelly and Fox. The gentle piano and strings ballad opens with MGK sighing, 'We grew a tree back in the garden/ With a celestial seed that fell down to us from the stars/ The sun rose high and killed our shadows/ There's more to see under the light than in the dark.' The lyrics allude to the tragic Greek myth of Orpheus and Eurydice via lines about an undying love that cannot be. In the Greek myth, musician Orpheus loses wife Eurydice to a snake bite and travels to the underworld to plead with Hades for her return. The god of the depths offers to let Eurydice return to life if Orpheus agrees not to look back at her until they're both above ground again. When his anxiety about their return overwhelms him, Orpheus looks back and loses Eurydice forever. Similarly, the song that appears to chronicle the on-and-off couple's tumultuous, drama-filled love affair, which seemingly ended for good when they split just before Fox gave birth to their daughter, Saga Blade, in March of this year. It also seems to be a call back to the poem 'Prove it, Orpheus' from Fox's 2023 book of poems Pretty Boys Are Poisonous, which fans at the time suspected was about the singer. In it, she wrote, 'And when they ask you what is your biggest regret/ Don't writ it in a song/ Cut yourself open and write it in blood.' The 'celestial seed' reference in the song also seems like a call-back to a mini-controversy that erupted around the time of the baby's birth when MGK announced the good news by writing, 'She's finally here!! our little celestial seed.' Kelly later clarified that of course they didn't name their daughter Celestial Seed, but it's unclear at this point if the song writing preceded the tweet or if Kelly leaned into the misunderstanding on the track as a wink. At press time it was also unclear if the former couple worked on the song together, or if Fox's songwriting credit is tied to her earlier poem; a spokesperson for Kelly had not returned a request for clarification on the credit at press time. The majority of the songs on the album were written solely by Kelly or Kelly with Emma Rosen, or the pair with LP co-producer Nick Long. However, Third Eye Blind's Stephan Jenkins gets a co-writing credit on 'Starman,' which interpolates the entire chorus to 3EB's breakout 1997 single, 'Semi-Charmed Life.' MGK has been on a full-court press blitz for Lost Americana, with his hometown of Cleveland preparing to celebrate its favorite son with the annual MGK Day celebration this weekend. Events from Friday through Sunday (Aug. 8-10) include the XXCon gathering at Jacobs Pavilion featuring an acoustic performance, DJ set from Emo Night Brooklyn and a celebration of the album tonight. The party will continue on Saturday with a Now That's What I Call Brunch party with music by Bobby Booshay, a street league skateboard takeover and a bar crawl. Fox's Greg Gutfeld appearance with Jimmy Fallon makes liberal media furious

Greg Gutfeld is a pretty funny guy. He's the late-night host on Fox News, which makes him the most well-watched comedian of cable news. Yours truly has been on the show before, and really enjoyed the opportunity to reach such an audience — on the merits, it's the biggest audience there is, as far as late night goes. So, it makes sense that one late-night great would recognize another. To that end, late-night host Jimmy Fallon hosted Gutfeld recently on his show. Gutfeld is a very funny man, and he's also successful — which is why Fallon had him on. In fact, Gutfeld bears the moniker 'king of late night' because his audience, on the conservative news channel Fox News, is higher than his competitors'. It's a no-brainer for Fallon to host him, as a kind of friendly mutual promotion. And yet, liberal mainstream media figures are furious that Fallon did this. Just look at the headlines: 'Jimmy Fallon kisses the conservative ring,' said Vulture, as if bothering to engage a conservative was an explicit endorsement of everything the conservative thinks. The Daily Beast spun it this way: 'Jimmy Fallon Fawns All Over MAGA Late-Night Host Greg Gutfeld in Softball Chat' — as if a humorous late-night show needs to be some vicious skewering of non-liberal perspectives. And of course, what remains of BuzzFeed was eager to attack Fallon for daring to platform Gutfeld. 'This Seals It For Me': People Are Completely Turning On Jimmy Fallon For His Recent Talk Show Guest, And It's Not Pretty.' Remember back when this clickbait tripe actually mattered? When liberals rewarded BuzzFeed-esque content farming with millions of page views? When easily triggered progressives ruled the discourse with an iron fist? Well, those days are over. Now, no one cares what the pearl-clutching liberals of BuzzFeed have to say. Gutfeld has a bigger audience—and for what it's worth, good on Gutfeld for being willing to platform alternative voices. They didn't talk about politics, and that's OK. Not everything needs to be a political confrontation. Gutfeld, for his part, was incredibly magnanimous, and thanked Fallon for having the guts to have him on. It seems like Fallon understands that late night is losing ground, and if he wants to avoid becoming unprofitable and unsuccessful and ultimately unemployable, like the perennially unfunny Stephen Colbert, then he needs to innovate a bit. I'm happy to see it, and probably the country's millions of conservatives were as well. More of this, please!
