Food sold at gas station explodes into health-focused restaurant chain

A Cuban-born chef who fled to the United States with his family when he was 5 years old is now at the helm of Carrot Express, a health-conscious restaurant with almost 30 locations throughout South Florida and New York.
Mario Laufer's introduction to America began in 1961. But his taste of the industry that would become his career didn't take root until the early 1990s, when he started selling food at his cousin's gas station in Miami Beach.
The original Carrot Express opened in 2012, not far from the gas station where he got his start making "simple but great" food, Laufer told Fox News Digital in an interview. (See the video at the top of this article.)
At the gas station, Laufer would serve "simple stuff" like pita sandwiches and chicken or tuna salads.
When he opened a true eatery of his own eventually, Laufer was determined to offer fresh, healthy and delicious foods.
Laufer chose the name as an ode to The Last Carrot, a restaurant in Miami's Coconut Grove neighborhood that he used to frequent in high school.
"I was obsessed with that place," he recalled.
It was also "fresh and simple" – a formula he's tried to replicate with his menu offerings, he said.
"I'm very conscious of the quality of my food and about the ingredients that I use and about the fish that I use and about the oils that I use," Laufer said.
One menu item that's become a favorite at Carrot Express is Mario's Favorite Chicken Bowl.
"Everybody loved it. That's how it started."
It's inspired by a meal Laufer would often throw together while at work.
"Everybody was wanting to know what I was eating – all my employees and all my customers," Laufer said.
"So, everybody loved it. That's how it started."
1 tablespoon olive oil
5 ounces cubed chicken
4 ounces pre-cooked brown rice
4 ounces pre-cooked quinoa
1 handful spinach
1 teaspoon chopped scallions
1 tablespoon chopped almonds
Salt and pepper, to taste
4 ounces citrus sauce (see below)
1 ounce sesame seeds (for garnish)
(Note: The chicken can be substituted with 1 portion of tofu or ahi tuna poke.)
1. Heat olive oil in a skillet at medium heat.
2. Add scallions and sauté. Add the chicken and sauté until cooked through, about 5-7 minutes. Add spinach.
3. Add 1 ounce of citrus sauce, stirring until the greens are slightly wilted. Add brown rice, quinoa, 2 ounces of citrus sauce, salt and pepper and mix until everything is evenly coated.
4. Cook for 5 minutes.
5. Serve in a bowl and top with 1 ounce of citrus sauce and chopped almonds. Garnish with sesame seeds (optional).
1½ ounces orange juice
1 teaspoon lemon juice
1 teaspoon lime juice
1⁄3 teaspoon honey
2 teaspoons Dijon mustard
3 tablespoons olive oil
Salt and pepper, to taste
1. Whisk all ingredients together until fully combined.
2. Use immediately or store in the refrigerator.

A recent study in the Canadian Journal of Cardiology even found that Champagne could reduce the risk of sudden cardiac arrest. Yet according to the World Health Organization and others, no alcohol is considered healthy for the body. A few factors, however, such as the amount consumed and its sugar content, could offer drinkers a slightly less damaging choice. "There was a time when studies showed that the French had less heart disease than we do in the U.S.," Dr. John Flores, a board-certified internal medicine specialist based in Dallas, Texas, told Fox News Digital. IS RED WINE GOOD FOR YOUR HEART? CONSIDER THIS WISDOM FROM A CARDIAC SURGEON "But now we realize they just weren't drinking as much, and now we know that any amount of alcohol can be damaging to you." Ethanol is the intoxicating agent in all alcoholic beverages. It's a central nervous system depressant that produces effects like euphoria, decreased anxiety and impaired cognitive and motor function, according to the National Institutes of Health (NIH). "In the short term, the alcohol goes to your brain, slows your thinking and alters your mood by changing the neurotransmitters in your brain," Flores said. "Long term, we know there's an increased risk for certain cancers with any amount of alcohol, even one a day. People who have inherited risk from family history and that kind of thing are going to have more risk." WINE SALES SLIPPING IN US AS MORE AMERICANS LEAVE ALCOHOL BEHIND Some of the risks increased by alcohol, said Flores, include colorectal cancer, breast cancer, liver cancer, oral and pharyngeal cancer – and damage to the heart that is associated with drinking. "There's no reason to think that one's better than the other," Flores said. "Except for maybe calories or how fast you drink them." Kelly Springer, a registered dietitian based in Skaneateles, New York, shared her recommendations for drinking wine, liquor and beer. "Dry red wine in moderation ranks highest with me because it is lower in sugar compared to other wines," Springer told Fox News Digital. "It does contain the polyphenol antioxidants like resveratrol, which has a little bit of that heart-protective benefit." "Moderation means one 15-ounce glass for women or two for men," she said. Springer said her runner-up to dry red wine is clear liquor, such as vodka, gin and tequila. "The reason that's a solid choice is because it is going to be lower in calories – only about 95 to 100 calories per 1 1/2 ounce shot. And it doesn't have any sugar or carbs if served straight." "Think margaritas, frozen drinks, anything neon-colored," she said. "These kinds of things are the worst for overall health. A lot of people are unaware that those are going to bring in a ton of extra calories." Sugar leads back to chronic disease by way of inflammation, Springer said. "That can add up over time and that can cause some inflammatory markers." When it comes to beer, there's a wide range of options in terms of calories, said Springer. A Texas woman became enraged after hearing a man playing bagpipes at her local park — allegedly assaulting the musician's wife and threatening to sic her judge husband on the couple, according to a report. Eunice Isgur, 76, became inconsolably irate when she heard Scotland native Scott Gibb playing the bagpipes in Houston's Terry Hershey Park on Monday, and confronted him aggressively with her cell phone, KTRK reported. Advertisement 3 A Texas woman is accused of aggressively confronting a bagpipe player and his wife at a park. ABC13 'She said I had no right to play here in this public park,' Gibb told the outlet. 'She said, 'I'm gonna call my husband. He's a federal judge and he's gonna make you stop.'' Isgur has the same last name as US District Bankruptcy Judge Marvin Isgur of the Southern District of Texas, the outlet reported. Advertisement Gibb's wife came upon the fraught scene, spotting Isgur holding her phone inches from her husband's face, and started filming the elderly woman in return, according to KTRK. Isgur then allegedly took a swipe at the bagpiper's wife — hitting her cell phone, the outlet reported. Isgur's husband then showed up at the scene but was not accused of any wrongdoing. However, the couple menacingly followed the bagpiper and his wife as they were leaving the park, video showed. Advertisement 3 Eunice Isgur allegedly stuck her phone in the musician's face and assaulted his wife. ABC13 3 Isgur suffered a black eye after she tripped during the incident. ABC13 'As [my wife] was walking, she was videoing behind her and this big guy and the woman were chasing after her,' Gibb said. During the confrontation, Isgur suffered a black eye after she tripped while attempting to grab Gibb's backpack, the report stated. Advertisement Despite the dreadful encounter, Gibb said the Scottish-isle-born instrument is typically welcomed in the Deep South. 'Texans just love the sound of the pipe,' Gibb told the outlet, stressing this was one of the few negative responses he's received. The 76-year-old was arrested for Assault-Bodily Injury, according to the report.
