A members-only BGC establishment opens doors to public with Filipino tasting menu
For the first time since it opened, Cork Elite, a members-only wine bar and restaurant located at the rooftop of W Building in Bonifacio Global City, invites non-members to experience its main dining room. This new chapter centers on a tasting menu created by chef Gino Catalon. A celebration of Filipino cuisine and heritage, the seven-course lineup opens with warm pandan-sourdough served with Davao honey and kesong puti, and then followed by a prawn puff with annatto, tinapa mousse, and caviar. Diners will get two fish courses: first in a fresh, citrusy plate with lato and pickled radish, then in a richer version with coconut emulsion, burnt onion oil, native garlic, and a crisp cracker. The fourth course is a lemongrass-scented prawn dish with fermented shrimp herbs and cilantro oil follows, before a fermented mango sorbet cleanses the palate. For the mains, there's a native chicken inspired by sinigang, and a wagyu short ribs with tinawon rice. For the dessert, the menu includes a playful take on sorbetes with coconut panna cotta, miso caramel, pandan ice cream, and pili nuts, followed by the chef's surprise course. While its main dining area is now open to the public, Cork Elite retains its exclusivity in private dining rooms and VIP spaces, which are for members only. Cork Elite's tasting menu comes as either a seven-course meal (P6,500) or a five-course meal (P5,500), with optional wine pairing for an additional P2,500 or cocktail pairing for P1,500. It is available Mondays to Saturdays, from 6:00 p.m. to 9:30 p.m. — LA, GMA Integrated News

International Manila Food Festival culminates with LASA x LAHI, a grand feast of Filipino food and more
The first-ever International Manila Food Festival wrapped up on Sunday night with a LASA x LAHI grand tasting event that showcased and honored Filipino cuisine and heritage while pushing the envelope of culinary innovation. Held at the Marriott Grand Ballroom in Pasay City, the finale event gathered 12 world-renowned Filipino chefs, each presenting a signature dish at their respective stations. Leading up to LASA x LAHI, the International Manila Food Festival earlier hosted a culinary congress attended by food content creators such as Erwan Heussaff and Abi Marquez. On Instagram, the Lumpia Queen said she hopes the festival 'becomes a yearly thing' and that Filipino food 'deserves more attention, especially on a global scale.' 'Just today, I learned so much,' Abi said. 'Super many valuable insights from industry experts.' For International Manila Food Festival co-founder Anton Diaz, the event was 'to make Manila a center of culinary excellence in Asia.' 'We really take Filipino food to the next level,' he said. Meanwhile, Chef Nicole Ponseca, also a co-founder of the festival, took pride in bringing Filipino chefs all over the world to one place. 'It's the first time that I think that we are all convening here in Manila to really honor, discover, and innovate Filipino food,' she said. In case you missed LASA x LAHI, here are the dishes presented at the event, with exclusive insights shared with GMA News Online. —CDC, GMA Integrated News
