Nutritionist urges safer meat practices during Eidul Azha celebrations

As red meat takes centre stage during Eidul Azha celebrations, health experts are warning the public to be mindful of their consumption habits to avoid potential health risks, particularly for those with chronic conditions.
Professor H. Merve Bayram, head of the Nutrition and Dietetics Department at Istanbul Gelişim University, highlighted the health implications of overeating red meat, urging celebrants to adopt safer cooking and storage practices during the holiday.
Health first
While red meat is a valuable source of nutrients such as high-quality protein, iron, zinc, phosphorus, and vitamin B12, its saturated fat and cholesterol content make moderation essential.
'Freshly slaughtered meat undergoes rigor mortis, which can make it harder to digest,' Prof Bayram explained. 'It's best to let the meat rest for at least 12 to 24 hours before consumption.'
Healthier cooking choices
Prof Bayram advised limiting red meat intake to two to three times a week, with portion sizes not exceeding 90 to 120 grams for healthy individuals. The method of preparation is also crucial. 'Avoid frying and sautéing. Opt instead for boiling, baking, or grilling,' she said.
Grilling should be done with care. She recommends keeping the meat at least 15–20 centimetres away from the fire. 'Too much heat can char the outside while leaving the inside undercooked, resulting in nutrient loss and potentially harmful compounds,' she warned.
Special precautions for chronic conditions
People with cardiovascular disease, high blood pressure, diabetes, or other chronic illnesses should be particularly vigilant. Prof Bayram advises avoiding saturated fats like internal and tail fat, and recommends leaner cuts cooked in their own fat without added oil.
She also discouraged eating meat on an empty stomach early in the morning. 'Begin the day with a balanced breakfast of whole-grain bread, low-fat cheese, and fresh greens to support digestion,' she suggested.
Safe handling and storage
Proper storage is equally important during the holiday. Prof Bayram advised dividing meat into meal-sized portions and freezing them immediately. Thawing should be done in the refrigerator, not at room temperature, to avoid contamination. Raw meat, she added, must be kept separate from fruits and vegetables to maintain food safety.
Celebrating mindfully
Prof Bayram concluded with a reminder that Eid al-Adha is not only a time of sharing and celebration but also an opportunity to promote health-conscious habits.
'Through balanced eating, hygienic practices, and portion control, families can enjoy festive meals while protecting their health,' she said. 'This holiday should be remembered not only for its joy, but also for the care we take in preserving well-being.'
Other Experts also advises to avoid fizzy drinks with eating meat cooked in oil and to eat vegetables with every meal.

Massive heaps of waste, including animal entrails, blood and trash from Eidul Azha sacrifices, have piled up to 15-20 feet high at the Losar dumping ground in Rawalpindi. The site, already overwhelmed, is now emitting a foul stench worsened by recent monsoon rains and sunshine. Animal remains dumped over the past month have become a breeding ground for disease. Residents report outbreaks of eye infections, stomach and throat ailments, hepatitis, cancer, and various skin diseases in surrounding areas. In addition to Rawalpindi's waste, garbage from the newly formed Murree district and its Kotli Sattian tehsil is also being dumped at Losar. Around 20-30 garbage trucks from Islamabad and 30-40 from Rawalpindi offload waste here daily, without proper disposal — vehicles simply dump the trash in open areas. The 1,200-kanal landfill has turned into a mountain range of filth. Attempts by locals to prevent Islamabad's waste from being dumped in Rawalpindi have failed. The Environmental Protection and Climate Change Department has upheld the practice, and court battles initiated by residents have also ended in defeat. Locals Chaudhry Raheel, Fayaz Gilani, and Haji Ibrahim said they set up a medical camp near the dumping ground and conducted check-ups for area residents. Results claimed that 65 per cent of the people were infected with hepatitis, with cases also found among children. Eye and throat diseases were widespread. They added that during the previous PTI-led Punjab government, plans were approved to shift the dumping ground to Chak Beli Khan — a remote area. Land covering 1,000 kanals was acquired for this purpose, and a modern waste disposal plant, including a project to generate electricity from residual waste, was approved. The current government has shelved the project. Deputy Medical Superintendent of Benazir Bhutto General Hospital, Dr Inayat, stated that medical and lab waste often ends up in the dumping ground and must be treated with special equipment. If not, it poses serious health risks. He emphasised that chemical sprays should be applied daily at the site and that waste should be buried in dug-out pits rather than dumped openly. Fayaz Gilani, chairman of a local action committee, said surveys show the waste has contaminated underground water. The group now plans to file a petition in the Rawalpindi bench of the High Court.

Health experts have advised citizens to adopt proper meat preservation methods, have the know-how to consume fresh meat to keep their health intact, and avoid risks of saving it from heat and loadshedding. The ritual of Sunnah Ibrahimi (RA) is performed on Eidul Azha by Muslims as a prerequisite for Hajj each year, which is considered the greatest sacrifice in Islam. Talking to a private news channel, Associate Professor and Gastroenterologist Dr Abdullah bin Khalid of the Aga Khan University Hospital has recommended that the citizens should consume sacrificial meat in the form of steaming or boiling, not in processed form. He said that the use of red meat in processed form is not good for humans adding that World Health Organization (WHO) had already declared the consumption of red meat can cause many harmful effects on humans' health and quoted American Heart Disease department estimate that only 350 gram of meat per week can be consumed. Dr Abdullah recommended different precautionary measures i.e. from cutting of qurbani meat till the process of its cooking such as, 1) the meat should be cleared of all the fats, 2) cook the meat in healthy oils i.e. olive oil that is extra virgin oil, canola oil or sunflower oil etc, 3) red meat should not be cooked on high flame, or till prolonged time as it will decrease its nutritive value adding that he said cooking the meat on high flame may be tasty but would be low in nutrition wise, 4) cook meat on low flame will retain its the nutrition value, 5) use meat with salads and chutnies. Replying to a question, he said that patients with heart issues, angina, and high cholesterol should use red meat in moderate quantity, adding that we do not advise them not to eat meat anyway.

The latest victim in Sindh was a 25-year-old fisherman from Ibrahim Hyderi, while the K-P toll includes patients from Karak and North Waziristan. According to health officials, Muhammad Zubair, a resident of Malir district, first exhibited symptoms including high fever, muscle pain, abdominal discomfort, coughing, diarrhea, bleeding, and loss of consciousness on June 16. He was admitted to Jinnah Hospital, where doctors suspected Congo virus infection. Due to the lack of specialized treatment facilities, he was transferred to the Sindh Infectious Diseases Hospital, where he died at 7 am on June 19. Contact tracing efforts have been carried out, with all individuals who had close contact with the deceased identified and monitored. So far, no other cases have been reported. Local residents and the victim's family have been advised to follow strict precautionary measures to prevent further spread. This death follows the province's first reported fatality from the virus earlier this year, when a 42-year-old man from Malir district was admitted to Indus Hospital in Korangi on June 16 and died the next day. In K-P, two Congo virus patients from Karak and North Waziristan districts died at Hayatabad Medical Complex. These fatalities have raised the provincial death toll to three. Health Advisor Ehtesham Ali said contact tracing and sanitization operations have been initiated at the homes of the deceased and the infected. He added that an advisory regarding Congo virus had been circulated to all hospitals across Pakistan prior to Eidul Azha, as the increased movement and slaughter of sacrificial animals heighten the risk of transmission. Congo virus is a severe viral disease transmitted primarily through tick bites or contact with the blood and tissues of infected animals, particularly during and immediately after slaughter. The World Health Organization (WHO) reports a case fatality rate of 10-40 per cent, with no vaccine currently available. In April, the National Institute of Health (NIH) issued an advisory urging preventive measures ahead of Eidul Azha, when the movement of sacrificial animals increases.
