In the Kitchen with CCE: Maple roasted sweet potato taco
TOWN OF DICKINSON, N.Y. (WIVT/WBGH) – With maple sap tapping season drawing to a close, In The Kitchen with CCE has a recommendation for how to use the syrup in a savory dish.
Nutritionist Tara Kenyon is preparing a maple roasted sweet potato taco. Served on a soft flour taco, the dish also has feta cheese, chipotle peppers, pickled onions and cilantro.
Kenyon says maple syrup has a lower glycemic index than other sweeteners so it won't raise your blood sugar as high or as quickly. She says it's a great alternative to sugar when cooking.
'Maple syrup contains vitamins and minerals which other traditional sweeteners, table sugar do not contain. So, you are getting some nutrition when you consume maple syrup,' Kenyon said.
Kenyon says maple syrup is available year-round at the Broome County Regional Farmers Market and the neighboring Taste New York store.
They even sell maple sugar, maple tea, maple gum and maple meat sticks.

CCE of Broome receives $10,500 for fruit & veggie vouchers
TOWN OF DICKINSON, NY (WIVT/WBGH) – Cornell Cooperative Extension of Broome County received one of nine grants to increase people's access to fresh, locally grown fruits and veggies. To celebrate March as National nutrition month, Fidelis Care gave CCE a grant for $10,500. The money will go to bolster CCE's SNAP Ed Fruit and Vegetable Prescription program. Through the program, 75 people in need will receive weekly vouchers to purchase produce at the Broome County Regional Farmer's Market on Upper Front Street. The associate director of CCE, Tara Kenyon, says to receive the food vouchers, those in the program will take a class, and learn about basic cooking skills, proper eating habits, and how to eat healthy without emptying your wallet. 'We're going to be working very closely with our local healthcare providers who are actually going to be the ones identifying individuals in the community who will benefit from this program. So, once they get enrolled into the program, they're going to participate in six weeks of nutrition education classes with our SNAPed nutritionists. And at each class, they'll receive twenty-dollar vouchers to be able to spend at the farmer's market,' says Kenyon. Local medical student discusses the importance of National Wear Red Day
FARMERSBURG, Ind. (WTWO/WAWV) — This Friday is National Wear Red Day to raise awareness about heart disease. IU School of Medicine student, Taylor Kenyon, said heart disease is the leading cause of death in the U.S. and in Indiana. In fact, 1 in 3 deaths are due to heart disease. However, he said death rates have dropped more than 50 percent in the last 30 years thanks to research, medical advances and education. Kenyon said the impact of seeing everyone wear red on Friday transcends the medical field. Proposed Medicaid cuts could affect autism therapy 'The long-term effects of a heart attack or stroke are lifelong,' said Kenyon. 'Understanding this and seeing the individuals in the communities wear red, is not only great from a healthcare provider standpoint, but from someone who has seen this burden personally.'
