Chefs explain why restaurant mashed potato always tastes better than homemade
Many agree the answer is lashings of salt and butter, but some chefs insist there is far more to the art of a velvety mash.
Inspired by a popular Reddit thread calling on professionals to reveal their secrets, chefs have now spilled on how to master a mash that's both creamy and indulgent.
The post began: 'I'm still figuring out how to cook, but one thing that always confuses me is mashed potatoes at restaurants.
'They're so creamy, smooth and buttery without tasting too heavy. I don't know what they're doing differently, but mine never turn out like that... it still feels like something's missing.
'Just wondering what makes restaurant mashed potatoes hit different?'
A fine dining cook who claimed to have worked under Michelin star chefs for many years immediately jumped in to share the method he's been using for years.
He said: '[We use] either a tamis with a plastic bench scraper or a China cap with a ladle used to push it through.'
A tamis - pronounced 'tammy' - is a drum-shaped sieve with fine mesh attached. A China cap is a cone-shaped strainer with perforated metal on the inside.
He continued: 'When we'd make Pomme Puree [velvety mash] we would do about 16 cups of peeled Yukon gold potatoes soaked (in water to prevent oxidization) and cut up to an even size.
'Bring them to boil in a pot with just enough salted (and I mean pretty flavorful) water to cover the surface. Less water = better texture mash.
'Once it was boiling I'd reduce it to a simmer until a cake tester came out clean but not where the potatoes got over cooked/mealy. You don't want that either.'
The chef then advises immediately draining the water, 'tamising or ricing' the potatoes into a large bowl and adding simmered heavy cream to the desired texture. Follow that with about 500g of cubed-up good quality cold butter.
He said: 'The cold butter helps mount and emulsify the potatoes so that they have an incredibly smooth texture.
'After emulsification we'd sometimes add some garlic thyme brown butter we'd prepped earlier and quickly stir it in so it would stay emulsified. Salt and season to taste.
'Most places I've worked have done this or similar.'
Multiple users agreed with this chef's approach, while others weighed in with their own tips - mostly involving excessive amounts of butter and cream.
One confessed: 'So much butter and cream. Way more than you would imagine. Like some of the fancier and more luxurious places are doing their mashed potatoes 50 per cent butter by weight.'
Another agreed: 'I'm a chef. It's what everyone else said. A s*** load of butter, salt, white pepper and cream. Like an amount you've never considered because most normal people can't comprehend it.'
One more admitted: 'So much more butter. Like a comical amount.'
Others offered a little more substance with specific tips they've always sworn by.
One chef said: 'Bake the potatoes in the oven in their skin, scoop out flesh, put through potato ricer, add hot milk flavored with bay leaf, add lots of butter and salt.'
A second suggested: 'Another tip to level up your mash is to steep garlic and herbs in the cream, then strain them out before you add it. It's awesome.'
A third added: 'Use a potato ricer, better butter and higher fat dairy. Make sure you're using the right potato. Mix them to amalgamate and no more.
Don't overwork them, they'll get pasty. Rest them, they're often made towards start of shift and reheated as needed... and I don't know why sitting for an hour-plus helps, but it makes a difference.'

Whale killed and passenger thrown overboard after boat collision in New Jersey
A whale was killed after it was struck by a motorboat off the New Jersey shore, with the forceful collision sending one passenger overboard. Video footage shared online of the sudden collision showed the motorboat rocking back and forth as the 20-foot-long minke whale swam away in Barnegat Bay on Saturday afternoon. The crash nearly tipped the boat over and sent one passenger flying overboard into the water. The person who went overboard was able to tread water next to the boat until they were saved, authorities said. The whale was later found dead after it went to rest on a sandbar in shallow water, the Marine Mammal Stranding Center, a non-profit rescue and release organization, said. Officials with the organization weren't able to reach within 30 yards of the whale due to tidal conditions and were therefore unable to conduct a more in-depth examination of the animal, the organization said in a statement. 'At this point, we really don't have much to go on,' Jay Pagel, the stranding coordinator at the center, told the Associated Press. 'The side of the animal that we were able to observe had no obvious marks on it that we could see. But again, our visibility was very limited.' Pagel said there were reports that the whale had been injured before the collision. He also noted other video footage shows the whale appearing to make contact with a pontoon boat after the first accident. The whale will be towed to a state park on Monday for a necropsy, which will determine its official cause of death. The necropsy is expected to take several hours to complete. The agency is now urging boaters to use caution in the area and to keep at least 150 feet away from the whale carcass for the time being.

The poster explained the extensive work she carried out in beautifying her front garden, focusing on wild flowers. "I've been trying to make a native yard. I have several sage and monkey flowers, yarrow, coyote bush, etc. I also spread baby blue eyes and clarkia seeds," she wrote. While the woman admitted she had been battling numerous weeds, she was proud with the transformation. While her progress had been interrupted due to various life circumstances, she said: "I've been learning as I go and my neighbours have seen me trying." From digging up turf to laying mulch, planting shrubs, and watering, the Reddit user carried out the entire project by herself. "I watched some die, I replanted at a better time of year, I spread seeds", she continued. "Many neighbors are encouraging to my face when they see me out there." However, she received word from one of her neightbours that people in the area were concerned about the appearance of her garden. 'I was quoted £10,000 for a garden renovation but did it MYSELF for £1,000 using ChatGPT to show my kids what single mums can do' In fact, some residents had even reached out to him to ask about the Reddit user's well-being. "One neighbour who is kind of like the 'neighbourhood watchdog' just told me that people text him all the time asking if I have died or if I'm a renter and letting weeds take over," she said. She explained that she didn't know why this assumption bothered her so much. "I live in an old neighborhood and the crowd is of an older generation that prefers lawns, but like all this effort and people assume [I'm] a renter trashing the place or that I've died... really?" she said. The Reddit user concluded that the lack of appreciation for her flourishing garden "just hurts". "You're doing a very cool thing - don't let haters give you doubt," one Reddit user wrote. "Put a sign in the front yard - 'pardon the weeds - native garden in progress!' It's worked for my son and DIL," suggested another person. "No matter what you do... Someone won't like it," pointed out a third commenter. More on gardening One homeowner turned their garden into a Bridgerton paradise with a charity shop find. Construction worker killed after getting buried alive by ‘shifting dirt' in horror accident on site
A CONSTRUCTION worker tragically died after becoming trapped beneath six feet of collapsing earth in Arizona. Ronald Andrew Baquera Jr., known as Ronnie, 44, was working on a site in Goodyear on Monday when a trench suddenly collapsed. 3 3 3 Emergency crews were called to a construction site near Citrus and Lower Buckeye roads soon after 1pm on July 28, reports ABC15 News. They saw workers desperately using equipment to free Ronnie, who was trapped in a six-foot hole filled with fast-moving dirt. When crews took over, they noticed that as more dirt was being pulled out, more collapsed inward. Sensitive infrastructure on the site - including gas lines - meant crews had to use specialised equipment. Tragically, within half an hour, the rescue turned into a gruelling 13-hour-long recovery mission. At around 2am on July 29, crews retrieved his body from the trench. Melissa Prado, the mum of two of Ronnie's children, told ABC15 News that the family is shocked. She said: "My daughter is really torn up. She spends almost every day with him. She's a little distraught, and my son's angry.' Melissa said she is setting aside questions about what happened on that day. 'I'm sure it will come out,' she said. 'But I don't care to know right now.' Oasis fan plunges to his death 'from upper tier' of Wembley stadium during reunion gig as witness reveals horror Ronnie leaves behind two sons and a daughter. His childhood friend Nate Costly organised a vigil on Friday. He wrote in a tribute posted on Facebook: 'Ronnie was a loving father and a loyal friend - brutally honest, endlessly caring, and unforgettable.' The state's worker-safety agency, ADOSH, told ABC15 that an investigation has been launched into whether there were safety violations at the site. The outlet added that a safety report could take four to five months to complete. A GoFundMe page has been set up to support Ronnie's family with funeral and memorial expenses. It comes as a child died after becoming trapped in a storm drain during flash floods while playing outside with friends. Mason Kearns, 13, from Mount Airy, Maryland, was swept into the pipe on July 31 - just 20 feet from his home - after being caught in strong floodwaters.
