Dive Into This Conch in Sauce Souskaye, the Perfect Summer Seafood Recipe

There are arguments about which dish is most representative of St. Lucia. As an island in the Caribbean, seafood is a must. Although green figs and saltfish is the official national dish, Natalie Compton believes conch in sauce souskaye should also be in the running. It's why she knew she had to include the recipe in her debut cookbook, Kwéyòl / Creole , co-authored by the James Beard Award-winning writer Osayi Endolyn. 'This dish celebrates our beautiful seafood and the bright, earthy souskaye sauce is a fantastic way to enjoy conch,' she says.
For those who have never prepared conch — the giant sea snail with a spiral shell that doubles as a trumpet — Compton likes to treat the ingredient similar to octopus. 'Conch is like a giant clam with the texture of an octopus,' she explains. 'Be patient with it because it is worth it.'
To make the souskaye, Compton's biggest tip is seasoning in layers and tasting as you go. 'Salt brings out the sweetness of the conch and also seasons every element as they come into play,' she says. 'Don't [just] add salt at the end.' And if you truly can't get your hands on conch at the fish monger, calamari or shrimp are also excellent substitutes.
'Caribbean cuisine is having a moment and I am happy to document this,' Compton says. 'I [want to introduce] readers to the Caribbean through my food and [want them] to have fun with all the flavors they may or may not have experienced.'
1 pound conch meat (or 1 pound calamari or 1½ pounds U10-size shrimp, peeled and deveined)
1 red bell pepper, minced
½ cup roughly chopped scallions
1 tablespoon red chile flakes
2 teaspoons minced celery
2 teaspoons marjoram leaves
1 teaspoon peeled and grated ginger
1 tablespoon white wine vinegar
3 limes, zested and juiced
2 teaspoons chopped flat-leaf parsley
1 teaspoon Baron West Indian Hot Sauce
Step 1: Prepare the conch. In a large stockpot, add the conch meat. Cover with water by about 6 inches. Bring to a boil, then reduce to medium heat and simmer for about 3 hours. To check for doneness, use a paring knife to make an incision through the thickest part of the conch. The conch is ready when the meat is tender and there is little resistance.
Step 2: Use a slotted spoon to transfer it to a bowl and allow it to cool. Once the conch has cooled, cut into 1-inch pieces and set aside. (If using calamari or shrimp, bring a large stockpot of water to boil, then poach for 2 minutes. Use a slotted spoon to remove the calamari or shrimp and set aside.)
Step 3: For the souskaye: Place a medium saute pan over low heat. Warm the coconut oil, and then add the red bell pepper, scallion, red chile flakes, garlic, celery, thyme, marjoram, and ginger. Saute and stir just long enough to combine the ingredients, about 1 minute.
Step 4: Season with the salt, add the white wine vinegar, and stir to combine. Remove from the heat. Add the conch (or calamari or shrimp), then add the lime zest and juice, parsley, and hot sauce. Return the mixture to low heat and gently warm through for 1 minute.
Step 5: To serve: Enjoy right away with the dasheen (taro) chips.

That are identifying every single thing they wear,' Rogers added. Hathaway and her co-stars have been identified as wearing clothing from Dries Van Noten, Saint Laurent, Stella McCartney, Dior, Coach, and more. 'It's just such a shame,' Rogers said. 'A lot of times, you feel like you've already seen the movie just by the exterior shots.' It's become an unavoidable part of modern social media culture. The original 'The Devil Wears Prada' had costume designer Patricia Field, but Rogers, who has worked on 'Sex and the City' and the spinoff 'And Just Like That,' also worked on that film. Rogers has long been known as Field's protegee. EXCLUSIVE: Israel's Sipur Studios has formalized its relationship with Emmy-winning We Will Dance Again director Yariv Mozer. The pair have struck an exclusive first-look for all Mozer's new projects and development. The 2024 co-production between Sipur and factual producer Bitachon 365, in collaboration with MGM Television, appeared on Paramount+ in the U.S., BBC Storyville in the UK, RTL Germany and Israel's HOT 8. Mozer also directed the documentary Ben-Gurion, Epilogue (2017) and garnered critical acclaim for The Devil's Confession: The Lost Eichmann Tapes (2022), which Sipur co-produced with KAN11 and MGM Television. Like We Will Dance Again, both films received Israeli Academy Awards. Sipur boss Emilio Schenker said the move 'cements a longstanding partnership' between Sipur and Mozer. 'Yariv's talent, sensitivity, heart and unwavering commitment to telling the truth – no matter how difficult – make him such a brilliant filmmaker,' he added. We Will Dance Again won the recent Emmy for Best Current Affairs Documentary and Schenker dedicated the award to the late Sipur President Michael Peter Schmidt. Spike Lee says he won't shop around his scrapped ESPN Colin Kaepernick doc: 'That thing fell apart a year ago'

The news that Spike Lee 's ESPN documentary about former NFL quarterback Colin Kaepernick is being scrapped may have only broken yesterday, but to Lee, it's old hat. "That thing fell apart a year ago," Lee, 68, told Business Insider in an interview on Tuesday while promoting his latest movie, "Highest 2 Lowest." "No one had ever asked me about it. I was on a red carpet and a guy asked me the question, I wasn't going to lie." On Friday, Reuters asked the Oscar-winning director about the docuseries, to which Lee responded, "It's not coming out. That's all I can say." ESPN confirmed the news in a statement, which it also provided to Business Insider for this story. "ESPN, Colin Kaepernick and Spike Lee have collectively decided to no longer proceed with this project as a result of certain creative differences," the statement read. "Despite not reaching finality, we appreciate all the hard work and collaboration that went into this film." Lee also told Business Insider that he has no plans to try to sell the project to another network or streaming service. "No, it's unfortunate, but I mean, I've moved on," Lee said. "That was a year ago." Business Insider reached out to Kaepernick for comment but didn't get an immediate response. The docuseries was first announced in 2020, and Lee became attached to the project in 2022. It was touted as delivering an extensive look at the former QB through never-before-seen archival footage and new interviews. Kaepernick, 37, who played for the San Francisco 49ers from 2011 to 2016, was at the center of a media firestorm when he began kneeling during the national anthem to protest police brutality and racism. In 2017, he opted out of his contract with the 49ers and was never signed by another team, essentially ending his NFL career. In 2019, he privately settled his grievance against the NFL for collusion among the team owners.
