The secret to making the smoothest hot chocolate at home this winter

The secret to making the smoothest hot chocolate at home this winter

The Agea day ago

One of Australia's top chocolatiers reveals the one step you cannot skip when making a velvety cup.
It's hot chocolate season; the drink as decadent as a velvet suit. But with so many options – from powders to syrups – how do we master a creamy cup to rival Parisian cafes?
What's the difference?
'There's basically three types of chocolate that we drink; drinking chocolate, cocoa and cacao,' says Casey Castro, founder of Casa del Cacao ceremonial drinking cacao.
'Cacao is the original bean in its purest form – [it's] minimally processed, rich in antioxidants and deeply nourishing,' she says.
A block of pure cacao is made from fermented and dried beans and then ground into a rich velvety paste, with the grated or powdered result used for making drinks that can be incorporated into spiritual or ceremonial practices, Castro says.
Cocoa – which is the powder that we use in cooking – is very versatile, and is often roasted at high heat and stripped of its natural fats or the cacao butter. Drinking chocolate, Castro says, can be anything from cocoa powders with added sugar, milk solids and flavours, to finely grated pieces of chocolate, or even syrups.
As top Australian chocolatier and director of Savour School, Kirsten Tibballs, explains: 'There's variations on that too. If you're lucky you'll get a ganache-based hot chocolate, and the Italian style often has starch to thicken it even more.'
According to Tibballs, ganache bases (see below) make the smoothest kind of hot chocolate and are best made of melted chocolate pieces. They're thick and velvety with extra milk or cream for serving, and it's this kind that the expert seeks out when in Paris, heading to destinations such as Angelina or Ladurée for her fix.
How to make the best at home
'Melting some very good quality chocolate pieces is the best way to get a delicious result,' Tibballs says. She's not fussy on type (milk or dark), but advocates for the best within your budget, and suggests checking the ingredients.
'If it says vegetable oil or vegetable fat, put it back! If it says cocoa butter, it'll be brilliant for hot chocolate.'
Then it's time to make a ganache base. 'Warm a little milk or cream [of your choice] until hot and pour it over that finely chopped chocolate. Then you'll need to emulsify it – mix it thoroughly – to a thick paste,' Tibballs says.
After that, simply add warm milk or cream as you like. But it's that ganache starting point that's all-important for a smooth finish.
After that, simply add warm milk or cream as you like. But it's that ganache starting point that's all-important for a smooth finish, allowing the chocolate to blend completely and thoroughly with the milk to avoid any chocolatey lumps.
It's the same with ceremonial cacao, with initial emulsification the non-negotiable step.
'Pour some warmed milk of your choice over grated cacao and blitz it with a stick blender for the smoothest result,' says Castro, adding that cacao won't melt the same way chocolate does, so needs that extra blitz.
Tibballs explains that adding a little liquid to begin with to create the ganache, before adding more, is essential.
'Chocolate doesn't contain water, so when you initially add liquid to it – like hot milk – and give it a good stir before you add the rest, it brings it together. If you add it all at once, it won't become smooth and no one likes lumpy hot chocolate.'
Serving suggestion
For a lush, French-style experience, Tibballs recommends serving your hot chocolate in a pot with extra cream on the side. 'You can self-dose,' she laughs. She's also enthusiastic about extra chocolate toppings and marshmallows: 'Give them a moment so they melt a bit.'
For Castro, ceremonial hot chocolate is about self-nourishment as well as decadence. She recommends setting an intention to acknowledge the moment. 'Cacao is full of 'bliss' compounds like [the neurotransmitter] anandamide,' so lean in to that mindset.
The takeaway
Make sure you mix well, starting with a ganache base
Use your milk of choice (or non-dairy mylk such as almond or soy drinks), but start with a small amount
Choose chocolate with high cocoa butter content, not vegetable oil
Don't be afraid to make the moment special or add decadent toppings
Smooth hot chocolate recipe
INGREDIENTS
100g chocolate of your choice (I like 50:50 milk and dark), finely grated
100ml cream
200ml milk
To serve
100ml thickened cream, whipped
marshmallows, optional
2 tbsp grated chocolate, to garnish
METHOD
Chop your chocolate finely and add it to a jug or bowl suitable for mixing.
In a small saucepan, gently warm your milk and cream together until hot but not boiling.
Pour ⅓ cup of the hot milk and cream mix over the chopped chocolate and whisk thoroughly to create a smooth ganache. Once there are no lumps and it's velvety smooth, pour in the rest of the warm milk mix, whisking as you go for a nice, smooth finish.
Pour into two cups and serve with a marshmallow on top and a scattering of extra grated chocolate. Serve with whipped cream on the side.
Note: You can multiply the recipe for larger batches and use any milk/mylk or cream you prefer. Opt for chocolate with a higher cocoa butter content. Avoid chocolate that contains vegetable oil.

These are the best-selling shorts every Aussie bloke is wearing, even in winter

For decades, shorts have been the wardrobe afterthought. A last-minute grab from the drawer while the real energy went into selecting the shirt, grooming the hair and deciding whether the sneakers were 'cool enough'. But one Aussie brand is turning that logic on its head, and the results are catching on fast. That's where Frankster comes in, the new go-to for guys who wear shorts like a second skin. For just $89.95, you can score a pair of 'The Everydays' shorts to wear every day. Created by former Adidas and 2XU heavyweight Niels Hoeben, Frankster has hit a nerve with Australian men by solving a problem most didn't even realise they had. Because while there's no shortage of boardshorts, gym shorts or golf shorts in the men's fashion space, none of them really tick every box. Especially not for the bloke who wants to wear the same shorts from brunch to beers to the beach without a second thought. Frankster was made for that guy. The brand launched earlier this year, but thanks to word of mouth and thousands of glowing five-star reviews, it's fast becoming one of the most talked-about men's fashion brands in the country. Designed for men who wear shorts year-round Whether it's the dead of winter or the height of summer, every friendship group has that mate who rocks up in shorts. Rain, shine or sideways hail, his knees are out. And chances are, he's now wearing Frankster. The appeal is obvious. These shorts are flattering on all body types, thanks to a carefully engineered blend of 98 per cent cotton and two per cent spandex. That means they move with you, breathe like activewear and look polished enough to wear to dinner. They're tailored just enough to feel elevated, but not so fitted that you need a six-pack to pull them off. And they land in that sweet spot between casual and smart, so you can throw them on with a T-shirt or a button-down without feeling over or underdressed. And even though it's winter, now's actually the perfect time to snap up a pair (or two). These shorts layer well with hoodies, vests and jumpers, and they're selling fast ahead of spring and summer. If you want first dibs on the most popular sizes and colours, it's worth adding to the cart before the warm weather rush. More than just a great fit Frankster's popularity isn't just down to comfort and cut. The brand stands for something more. Ten per cent of profits are donated to Movember, the Aussie-founded global charity tackling men's mental health, suicide prevention and prostate cancer. Plus, Frankster shorts are made using certified sustainable cotton, so every pair is produced ethically and with care for the environment, something more men are starting to pay attention to when they shop. From quiet launch to fan favourite In just a few short months, Frankster has gone from start-up to fan favourite. The original shorts line continues to fly off the shelves, while new colour drops are selling out faster than expected. September brought four new shades into the mix, and a brand new sports shorts range is dropping in October, designed for everything from Sunday footy to smashing out a gym session. It's clear that Frankster isn't trying to make shorts for every type of man. It's making the right shorts for the men who live in them.

The post also shows a smiling selfie of the new parents carrying their newborn. The former AFWL star turned Channel 7 announced her pregnancy in January, saying her and her husband Keegan Brooksby were 'on cloud nine'. 'Keegan and I have shared a very busy year, but 2025 is set to be our biggest and best yet. We could not be happier to welcome our first child into the world, later this year,' Holmes told The Herald Sun. Holmes made the discovery she was pregnant after incredibly running the New York Marathon in November, with the news coming as a total surprise. 'We are so excited and grateful to be in this position, as we know how difficult it can be for so many people. We're on cloud nine and can't wait for this next chapter.' 'We discovered that I was pregnant a few weeks after returning home from running the New York Marathon,' Holmes continued. 'As you can imagine, it was a bit of a shock given what I had just put my body through, but I'm in awe of what the human body can do. 'Keegan and I told our families at Christmas, which was a really special time for us all. We wanted to share our news with as many people as possible in person, so we've spent the last few weeks doing that. There were plenty of tears, that's for sure. 'I've been lucky enough to enjoy a beautiful start to my pregnancy, and we're soaking up every moment.' The 33-year-old was an inaugural member of the Adelaide Crows' AFLW team and since hanging up the boots, has been a key part of Seven's AFL and AFLW commentary team. As well as being a beloved commentator, Holmes has also appeared on reality TV shows Survivor and SAS Australia. Her partner, Brooksby, is also a former AFL player. He joined Gold Coast via the 2015 rookie draft and played 14 games in his three seasons at the club. He spent one year at West Coast in 2019, where he didn't manage to make an appearance, before playing one more AFL game at Hawthorn. The couple have been together since 2017 after matching on a dating app. Brooksby popped the question in Uluru in 2020 before the pair tied the knot in 2023.
