Holland America Line is introducing a refreshed experience at its Pan-Asian Tamarind specialty restaurant. More than a dozen dishes will debut on the menu, alongside several popular appetizers, main courses, and desserts that are known favorites of guests.
New sharing-style appetizers will be introduced, with options including bao buns and Korean beef tacos. Vegetarian and vegan dishes also are featured, offering a wide selection for all palates.

In addition to the new menu, table setting will be refreshed to include more color and textures. The staff uniforms will also be updated to a sleek, elegant black dress accented by a plum-colored cummerbund.
Revitalized menu builds on 'savor the journey' identity
Tamarind's revitalized menu celebrates the tastes and traditions of regions around the world. The Tamarind dining experience connects guests to Asian culture through localized cuisine and a culturally enriched ambiance. Dishes on the menu feature seafood that is part of the cruise line's global fresh fish program, which offers more than 80 varieties of fresh fish sourced locally from across a worldwide network.
"The new Tamarind menu continues to celebrate the vibrant flavors of Asia with a fresh vision, while staying true to the restaurant's roots," according to Michael Stendebach, vice president of food, beverage and rooms division for Holland America Line. "We're continuing the build upon the innovation that has defined this venue since the beginning. The new menu is nicely balanced, maintaining many guest favorites while introducing some exciting new dishes."
Five ships to roll out new menu by June 2025
The eatery is aboard five ships and serves cuisine that combines ingredients and flavors from Pan-Asian culinary traditions, according to a recent press release. The new menu is scheduled to roll out on the following ships:
Rotterdam
Nieuw Statendam
Koningsdam
Eurodam
Nieuw Amsterdam
Additionally, beginning in October 2025, a "Taste of Tamarind" pop-up experience is available on Westerdam while in Asia and on Noordam while in Australia, as well as on Grand Voyages and select Legendary Voyages.

Thai beef salad featuring rare-seared beef, cilantro, scallions, cucumber, fresh mint, and toasted peanuts in kaffir lime dressing
Vegan Tom Kha Thai coconut soup with kaffir lime, mushroom, bean sprouts, and chili oil
Taste of Tamarind, which is a selection of popular starters, crafted for sharing and curated to the number of guests at the table. This platter features shrimp tempura, Korean beef bulgogi taco, lumpiang Shanghai, and satay sampler.

Wok-seared lobster with Asian greens, ginger, sweet chili, and soy (supplemental fee)

Side dishes on the menu include steamed jasmine or brown rice, egg fried rice, Asian eggplant, box chop and sake-braised oyster and shiitake mushrooms.
"The entire culinary team worked on the menu refresh, but Fleet Chef Ming Wong led this change and used her Malaysian heritage to heavily influence many of the dishes," continued Stendebach. "Our goal is to keep the dishes and flavors as authentic as possible, and chef Ming ensured that our guests would have a true Asian experience."
Tamarind's premium dining experience is available for a supplemental charge or as an included dining option with the cruise line's "have it all" package.

The U.S. stock market appears a little too optimistic. All three major indexes climbed Wednesday, with the S&P 500 and Nasdaq Composite enjoying their third consecutive session in the green. The S&P, in fact, is around 2% away from its all-time high, which it reached in February. That's despite the shadow of U.S. President Donald Trump's "reciprocal" tariffs still haunting the economy. As the 90-day tariff pause ticks down, America, so far, has just one deal, struck with the U.K., and an agreement with China that, while reaffirmed by both sides after two days of negotiations in London, is still preliminary and keeps tariffs at double-digit levels. Corporations are seemingly bracing for economic fallout already. Layoffs have been accelerating this year. Google and Paramount on Tuesday joined Microsoft, Citigroup and Disney in announcing headcount cuts. (However, it should be noted that layoffs, rather perversely, tend to push up stock prices because they are a cost-cutting measure.) And the bond market, the sterner sibling of the stock market, might put a check on investor enthusiasm. If there are unexpected results from U.S. inflation data and Treasury auctions on Wednesday and Thursday, yields could rise again, not only putting pressure on stocks, but also the broader economy in terms of higher borrowing costs. The stock market, then, seems to be betting on more trade breakthroughs and favorable inflation data. But the bond market and CEOs might not be so sure about that. U.S. and China reach trade frameworkThe U.S. and China have reached a consensus on trade, representatives from both sides said, following a second day of high-level talks in London, according to an NBC transcript. "We have reached a framework to implement the Geneva consensus and the call between the two presidents," U.S. Commerce Secretary Howard Lutnick said. That echoed comments from the Chinese side, shared via a translator. S&P 500 notches three-day win streakU.S. stocks rose Wednesday. The S&P 500 advanced 0.55% and the Nasdaq Composite climbed 0.63%, the third day of gains for both indexes. The Dow Jones Industrial Average added 0.25%. The pan-European Stoxx 600 index closed mostly flat after struggling for direction most of the day. The U.K.'s FTSE 100 added 0.24%, an inch away from its record in March. Shares of Tesla regain groundTesla shares rose 5.7% Tuesday to close at $326.09, leaving the stock about $6 short of where it was trading last Wednesday, when it sank 14% after CEO Elon Musk publicly feuded with Trump. Bond market in focus The U.S. Bureau of Labor Statistics releases data on May's consumer prices on Wednesday, then producer prices on Thursday. At the same time, the government will hold sales of long-duration Treasurys on the same days. Together, those results could have important implications for the direction of the economy and the reaction of the Federal Reserve and its approach to interest rate policy, reported CNBC's Jeff Cox. Fund houses warn of 'capital outflows'Trump's "One Big Beautiful Bill Act" aims to penalize foreign-owned firms operating in the U.S. and that are from countries with "unfair foreign taxes" under a provision known as Section 899. The Investment Company Institute, which represents fund houses in the U.S., is lobbying Congress for an amendment, warning Section 899 could cause investors to "retreat quickly from US equities," leading to "capital outflows." Google offers buyoutsGoogle on Tuesday offered buyouts to employees in several divisions. Affected units include knowledge and information — which houses the company's search, ads and commerce divisions — and central engineering units as well as marketing, research and communications teams, CNBC has learned. Google has done multiple buyout offers in a few units this year, making it a preferred strategy to reduce headcount. The Asian supermarket and food hall designed to transform Burnsville Center remains in the pipeline, three years after the plans were unveiled. The Windfall Group initially said the the development, known as Pacifica of Burnsville, could open as soon as January 22, 2023, in celebration of Lunar New Year – a date that came and went while the project was beginning to move through the city's formal planning process. In December 2023, the Windfall Group said the destination was on track to open at the end of the first quarter in 2024. A March 2024 press release advertised the food hall would indeed open very soon - before summer. Now, over one year later, the project remains under construction and no opening date is set. "The community is very antsy for this project," Burnsville City Council Member Vince Workman told developers last week. "We're almost to the finish line," Christina Le, one of the project's developers, reassured city officials. The Burnsville City Council voted unanimously June 3 to once again amend the city's $1.1 million grant tied to the redevelopment to allow more time for construction. The extension sets a Jan. 31, 2026 deadline for exterior renovations, with interior work on the project set to wrap up this month. "Yes, we have had our delays and so forth but we did not take any shortcuts," Le told the City Council. "We did not diminish any quality in the work that we've done. We've kept the quality high." The Windfall Group, an international developer, is also behind Pacifica Square in Aurora, Illinois, which is billed as one of the largest "one-stop" Asian lifestyle centers in the country. The development in Burnsville is planned to be anchored by the upscale Asian supermarket chain, Enson Market, and a feature a nine-vendor food hall, called Ate Ate Ate. In a letter to the City Council dated March 5, Eddie Ni, with the Windfall Group, indicated plans to construct a two-story addition to incorporate patio dining and a landscaped plaza have been nixed. "Instead of constructing a 15,000-square-foot addition, we aim to create affordable and inviting spaces for tenants while preserving parking," the letter reads. "The two restaurants originally planned for the addition will now occupy vacant mall units." Ni also noted progress on Enson Market have been impacted by shipment delays from overseas. Ate Ate Ate is designed to emulate Asia's atmospheric street markets, with a stroll through the food hall taking guests from morning cafes, to lunchtime spots and, finally, the evening-inspired segment, which will be complete with vibrant lights and live music. Hospitality HQ, the food hall's operator, will oversee the curation of vendors. The current vendor line-up includes Soga Mochi Donuts, which became Minnesota's first mochi donut business when it brought its Japanese-style treats to St. Paul in 2021. Bulgogi, bibimbap and other Korean favorites will be served at Hang Sang Korean Cuisine and Nepal-style dumplings filled with seasoned meat and veggies will be the focus at Amazing Momo. Other vendors include Asian-inspired ice cream shop ODAY Creamery, Niko Niko Boba, Mason's Famous Lobster Rolls and spots serving ramen, hand-crafted sushi rolls and sashimi and Mediterranean fare, according to Le. A central bar, called Urban Oasis, will offer self-serve beer and wine, she added. "This really means a lot to us that you've been patient and waited this long," she told the City Council.
