
Get your bold flavours fast with these two simple Asian dishes
This week's column focuses on speed, turning to some Chinese takeaway classics to showcase how to produce quick and delicious dining in record time. 'Chow mein' covers a wider description of regional Chinese dishes that involves stir-frying noodles in spices and seasoning with a variety of meats, seafood or in today's case: vegetables.
This is the sort of dish that leans heavily on the store cupboard for rapid-fire flavours. It was also a staff food favourite where I worked for a period. It certainly ticks all the relevant boxes: quick, cheap, nutritious, delicious. I've been fortunate enough to travel throughout Asia, where a bowl of noodles on the side of the street, late at night, is one of life's great culinary joys. Spending a little extra on some local, seasonal vegetables will make the world of difference here. While I've used kale and chard leaves, you can substitute these and follow the same cooking method. The sauce uses soy, hoisin, some wine and sesame oil thickened with cornflour to pack a punch. It is a winner when you're on the go.

The second dish is one of the world's most popular: sweet-and-sour chicken. This isn't exactly authentic, probably comprising elements from various regions of Asia. The concept is simple: fry meat, fish or vegetables in cornflour before glazing in a simple sauce made from sugar and vinegar. It's also common as a dipping sauce for lots of dishes. Many western recipes incorporate fruit such as pineapple or pear, so I've done the same here. Using up the pineapple juice is also a great way to bulk up the sauce alongside sweet chilli.

I've also added a great hack for perfectly steamed rice using a Pyrex bowl, boiling water and any traditional steamer. This is the only way I cook rice at home; it offers consistent results and avoids the need to scrape burnt rice from the bottom of your pot after a day of soaking it in the sink. Always a bonus.

Carl O'Brien: ‘Is the Leaving Cert one of the toughest exams in the world?'

Our only question is: have they not heard of the Leaving Cert? READ MORE Today, thousands of students sat an intensive French exam followed by a gruelling history exam. That wasn't unusual: most candidates face two three-hour exams on multiple days over the course of the Leaving. A very small number, on occasion, have had three exams in a single day due to subject clashes. It's around now, in particular, that students may be feeling the emotional and physical toll of it all. The State Examinations Commission says it is mindful of 'candidate wellbeing' and has extended the exam timetable in recent years to a 15-day timetable. 'The extended timetable has been designed to alleviate pressure on candidates by eliminating subject clashes as much as possible,' it says. 'There has been a very particular focus on ensuring that there is a minimal chance that a candidate will have to take three examinations on one day.' The only bright spot on the horizon is that Leaving Cert reforms, due to roll out over the coming years, will result in fewer exams and more continual assessment. Too late, unfortunately, for the class of 2025. The best advice for students for now is to maintain a healthy routine: get enough sleep, eat well, stay active and taking regular breaks. My colleague Jen Hogan has gathered some very good advice from the experts , such as focusing on the effort and not the outcomes. For parents, the best advice is to keep being the calm in the storm; encourage short-term focus; celebrate the small wins; and remind them that there are many, many routes to success beyond the Leaving Cert.

Temu's version comes in hundreds of pounds cheaper than similar furniture from other retailers, such as Sofa Club where it will set you back an eye-watering £699. Why is Temu so cheap? TEMU exploded onto the scene in late 2022, with people all over social media raving about the low prices. The company is a Chinese-owned digital marketplace - essentially an online shopping app where people are connected to the retailer directly while the app takes care of the shipping element. The frenzy over the app is not completely unfounded either as it offers a wide variety of products, including fashion, make-up, electronics and furniture. The loophole is called the de minimis exception and it means they can ship goods valued up to $800 (£643) to the US without it being inspected or taxed by US customs. Temu connects customers directly to manufacturers and only manages how the items are sent to customers. It means Chinese vendors can essentially sell their products directly to customers and ship it without building a network of warehouses across the globe. By doing this, they cut down on huge costs and ensure the product itself isn't marked up extra. While many of the products seen on the Temu app are from brands with extensive, original collections, many more are dupes of designer brands. One person couldn't believe the speedy delivery, as they wrote: ''Wait 2 days??? that's impressive.'' They're too messy. Drippy, sticky; forever associated in my mind with my schoolmates' grubby little fingers clawing at the thick glossy skin at breaktimes or on the bus. Ugh! Somebody give that child a wet wipe. But for the Irish writer and critic Katie Goh, the messiness of the orange is exactly the point. As her superbly reflective, restive, and revealing book shows, this fruit that many of us take for granted has a fascinating and thoroughly messy history. Its millenniums-long narrative criss-crosses the globe from western China to southern California and back again, cropping up all over the place, especially in accounts that the author refuses to clean up or sanitise – of colonial expansion, racialised bigotry, and capitalist exploitation. 'The orange is a souvenir of history,' she writes, 'entangled with the story of migration, of exile, and of invasion'. It's tangled up with her own story, too. She started writing the book in the aftermath of a mass shooting in Atlanta on March 17th, 2021, that left six Asian women dead at the hands of a white male supremacist. Anti-Asian sentiment had risen sharply during the pandemic, but this was a terrifying escalation. She remembers: 'The morning after a white man murdered six Asian women, I ate five oranges.' READ MORE Out of this moment, charged with shock and horror, where the eating of oranges was like grieving, like a tribute to those who were murdered, came an impulse to trace the roots of her identity in parallel with the oranges she held in her hands. Goh was born and raised outside Belfast, the child of an Irish mother and a Chinese father, in a place that was 99 per cent white; so white, she says, that she could count on the fingers of one hand the non-white children in her school. When she was growing up, she felt her difference acutely but couldn't really inhabit it. Being mixed-race, she found herself pulled in two directions, falling between categories – 'not Asian or White but Other'. She also had an inkling that she was queer, 'not Straight or Gay but Other'. Lingering in this space of otherness instilled in her a lifelong feeling of dislocation, and a desire for connection 'to a place, to a history, to a sense of belonging'. Foreign Fruit tracks her pursuit of that connection alongside a global history of the orange, which becomes for her 'a talisman, a compass, an anchor, a map', inextricable from its origins in Chinese antiquity. The first mention of oranges can be found in the Shūjīng, the ancient Chinese documents compiled by Confucius as early as 500 BC, and Goh's book starts in China, with a trip to Fujian, where her father's people once lived before they emigrated to Malaysia. From the sparsely populated villages of her ancestors, she travels to the heaving streets of Chang'an, the world's marketplace, haggling with a fruit vendor in the town 'where the Silk Roads begin and end and where they begin anew'. Returning to Europe, in the Netherlands, she reflects on the spoils of colonial warfare and greed represented by a Willem Kalf still life of an orange and a lemon dating from 1660. In Vienna, she visits the Schönbrunn Orangerie, an ostentatious symptom of the 'citrusmania' that spread across Europe in the 17th and 18th centuries. Crossing the Atlantic, she delivers a detailed and emotional investigation of the orange's history in California that confronts the violent impact on immigrant communities of the early-20th century 'orange rush'. Goh is a bold new voice in Irish writing. In less capable hands, a personal history of the orange could be an opportunity merely to write one's life in citrus, to absorb one into the other. But as the author reminds us, there are dangers in taking people for plants, which have historically threatened people of colour: eugenicists in the late-19th and early 20th centuries, for instance, endeavoured to 'control, curtail, cull' non-white populations as they did their orange groves. The sophistication of Goh's thinking shows itself in the glimmer of daylight she leaves between human and fruit. Foreign Fruit is a stunning, stylish search for origins reminiscent of books like Saidiya Hartman's Lose Your Mother, and the work of queer writers like James Baldwin, who called himself 'a stranger everywhere' and whose rootlessness was a creative wellspring. 'The borders between what is native and what is foreign become hazier as we step back into the past,' remarks Goh, and her forays across the world and through time attest to the power and the imaginative richness of movement, migration, messiness – the in-between of assumed positions.
