What students eat: I conducted a survey at a South African university's cafes – the results are scary

University students have limited spending money and their schedules are packed. Many are adapting to new lifestyles on campus. Eating a healthy diet is crucial: a poor diet leads to reduced concentration, lower grades and increased stress.
Campus cafés, especially at universities that are some distance from supermarkets, often sell mainly fast food such as white bread sandwiches, hot chips and doughnuts. It's easy to eat on the go, but places nutritious choices out of reach.
I'm an urban geographer who researches the relationship between food, health and place. My work examines how urban agriculture, informal food systems and everyday urban infrastructures shape well-being, sustainability and spatial justice in African cities.
Research has already found that through pricing, menu design and information provision, campus cafés play a decisive role in shaping dietary behaviours among young adults. I wanted to find out how students at the University of the Western Cape in South Africa choose what to eat when they're on campus, what they see as healthy food and what stands in the way of them buying nutritious meals.

The university is one that was underfunded during apartheid. Until 1994 it primarily taught students who were Black and people of Colour. Today, it serves about 23 000 students, many of whom are drawn from low-income backgrounds, and has few supermarkets within walking distance. The campus cafés are a key food supply area for students.
My research found that at the University of the Western Cape, only 32% of the food offered at the student café was healthy. It also cost more than the fast food. The students I surveyed knew healthy food was important. But only a small minority consistently chose nutritious meals. Nearly 40% of the group reported that the healthy options were too expensive.

When students face the twin challenges of financial hardship and inadequate access to affordable, nutritious food, this deepens inequality. It also undermines their efforts to succeed. Even worse, it can cause students to develop long term, unhealthy eating habits that damage their health.
Unless affordability, availability and awareness of healthy food choices are addressed together, students will struggle to eat well and to perform at their best.
Universities must implement targeted food subsidies, introduce clearer nutritional labelling, and expand healthy menu options to make nutritious eating more accessible and appealing to students.
Students speak out about their food choices
I conducted a survey that sampled 112 students in five campus cafés at the university. These cafés are mainly used by students in the 18-24 age group.
My survey revealed that 75.9% of students considered healthy offerings at least 'somewhat important' when choosing where to eat. Yet only 6.3% always selected nutritious options; 28.6% rarely or never did so.
Meanwhile, 38.4% of students described nutritious meals as 'expensive' and another 8% found the healthy options 'very expensive'.
My research also found that University of the Western Cape students ate very little fruit and vegetables. Just 41% of the students I surveyed ate two or more servings a day and 9.8% admitted they ate none.
I also did a detailed menu audit at one café to see what was on the menu. I found that only 32.6% of 46 distinct items met basic 'healthy' criteria (they were low in saturated fats and made up of whole-grains or vegetables).
The majority of students (55.4%) had not noticed any campus healthy-eating campaigns, but agreed (57.1%) that balanced meals boosted academic performance and overall well-being:
I feel much more focused and energetic when I eat well, which helps me do better in my studies and feel healthier overall.
Only a small handful of the students said they could afford healthy campus café meals:
I choose cafés based on food quality. If the food is fresh and tasty, I'll pay more, but it needs to be worth it.
What needs to happen next
High prices for nutritious items, narrow menu selections and barely visible information about nutrition are preventing students from eating healthy foods on campus.
Campus café offerings tend to mirror the broader inequities of national and global food systems. Food environments of big institutions like universities can prop up food inequality, even if these universities are committed to social justice.
Universities should adopt these steps to make healthy food available to students:
Subsidised meal plans and discounts: Introducing a tiered subsidy for students from low-income backgrounds would directly reduce costs. For example, meal vouchers could make salads, whole-grain sandwiches and fruit bowls as affordable as a pastry or soft drink.
A wider range of food on the menu and smaller portions: Partnerships between university caterers and local cooperatives or farmers could expand the range of fresh produce. Smaller portions or 'light' meal options could be sold at lower prices to suit tighter budgets. Regularly rotating healthy specials and clearly labelling ingredients and calories would help students become accustomed to choosing healthy meals.
Visible nutrition campaigns: Digital and printed standout posters about healthy foods could be placed around campus. Universities could hold social-media challenges and pop-up tasting events. Integrating simple tips into lecture slides or student newsletters would also help by repeatedly exposing students to healthy food tips.
Peer-led workshops and cooking classes: These should be arranged to empower students to take ownership of their diets and learn about budgeting, meal planning and quick, nutritious cooking skills. Peer facilitators can demystify healthy eating and create a supportive healthy eating community.
Seeking feedback: To see if their healthy food campaigns are working, universities should survey students, and analyse sales data from the cafés to see what's being eaten. They should get feedback from students through focus groups that identify emerging needs and ensure that campaigns and projects reflect the realities of students' lives.
My research suggests that by tackling cost, choice and communication together, universities can transform their cafés from sites of compromise into engines of student well-being. Such interventions would unlock academic potential and set young people on healthier life paths. This is an outcome as enriching as any degree.

More than 600 malnourished children have died in northern Nigeria in six months after failing to receive proper care as foreign aid dries up, a medical charity has said. Doctors Without Borders (MSF) said northern Nigeria, which already is struggling with insurgency and banditry, is "currently facing an alarming malnutrition crisis." In the first half of 2025, its teams treated nearly 70,000 children for malnutrition in Katsina state, nearly 10,000 of whom had to be hospitalised. During the same period, cases of nutritional oedema -- the most severe and deadly form of malnutrition among children -- jumped by 208 percent from the same period in 2024. "Unfortunately, 652 children have already died in our facilities since the beginning of 2025 due to a lack of timely access to care," the charity, which is known by its French initials, said in a statement released Friday. Huge cuts in foreign aid sparked by US President Donald Trump's decision to slash spending overseas have combined with spiking living costs and a surge in jihadist attacks to create a dire situation in northern Nigeria. Ahmed Aldikhari, MSF's country representative in Nigeria, said the cuts from the United States -- but also from Britain and European Union -- were hampering treatment and care for malnourished children. He said "the true scale of the crisis exceeds all predictions". An MSF survey of 750 mothers showed more than half of them were "acutely malnourished, including 13 percent with severe acute malnutrition". Katsina state nutrition officer Abdulhadi Abdulkadir, acknowledged the severity of malnutrition in the state, but said the numbers released by the medical charity might be "too high compared to reality" and had not been validated by his administration. - 'Serious cases of malnutrition' - "Yes, definitely there are deaths as a result of malnutrition," he told AFP, promising to provide official figures next week. The MSF figures cover the entire north of the country which includes more than a dozen states. Abdulkadir said the northern parts of his state, bordering Niger and straddling the semi desert Sahel region, have the most severe malnutrition because food production is limited by the harsh climate. Food production in the fertile south of the state is being hampered by criminal gangs called bandits who raid villages, making farming dangerous, he said. "This has aggravated the issue of malnutrition," he said. Criminal gangs have spread throughout the country, targeting rural areas with kidnappings for ransom. Katsina state government provided 500 million naira ($330, 000) towards nutrition programmes last and has doubled the amount this year, said Abdulkadir, the government official. Across the country of roughly 230 million people, a record nearly 31 million face acute hunger, according to David Stevenson, chief of the UN's food agency in Nigeria. Ultra-processed foods are undergoing increased scrutiny as Health and Human Services Secretary Robert F. Kennedy, Jr. and his supporters blame these often tasty snacks for contributing to chronic diseases in the U.S. But what is ultra-processed food? There still isn't a universal definition. While many ice creams, chips and sodas are considered ultra-processed, there's also a wide array of other foods that can be included in a healthy diet that fall into the same category, such as tofu, some canned fruits and vegetables, protein bars, cereals and nut milks. 'These are all quite processed and some of them can be classified as ultra-processed foods but because of their nutrient profiles, they might be better for us and not associated with the worst health outcomes,' said Michele Polacsek, professor of public health at the University of New England and an expert on promoting healthy food choices. Does that mean these foods will be targeted, too? Probably not, said Marion Nestle, a nutrition expert and emeritus professor at New York University. 'That would be impossible because of the way that Americans eat,' she said, as research shows over 70% of American calories come from ultra-processed foods. Ultra-processed foods, or UPFs, are foods that have been made by food companies using manufactured ingredients, rather than actual foods. If you've ever taken a look at some food labels, you may not recognize many of the ingredients listed. These are likely ultra-processed ingredients that are used to make food "taste better, look better and last longer on the shelf," Nestle said. Research has shown UPFs replace healthier foods and encourage people to eat more calories, Nestle said. Ultra-processed foods have been linked to about 30 health conditions, including obesity, diabetes, heart disease, certain cancers and mental health disorders, according to a 2024 study published in the British Medical Journal. In May, Kennedy and his 'Make America Healthy Again' commission targeted ultra-processed foods in a 69-page report. The U.S. Department of Health and Human Services announced the administration is seeking information and data to help develop an official definition for ultra-processed foods, according to a July 23 statement. While it's a good first step, Polacsek said not all UPFs are the same and there isn't enough data to determine which ingredients or processes in packaged foods lead to negative health outcomes. 'We don't have all the evidence we need,' she said. 'We need a lot more research on this.' It would be a mistake to create policy based on the data available on ultra-processed foods, Polacsek said. But if the administration makes policy decisions based on a universal definition, she hopes agencies will also allocate funding to research how it's impacting public health and the food industry. Fast-food chain named one of the least nutritious in America In the meantime, Nestle recommends minimizing the amount of ultra-processed foods you eat but also reminds consumers that some contain nutrients that can be incorporated into a healthy diet. In a 2023 study, researchers at the U.S. Department of Agriculture led a study that showed how it was possible to build a healthy diet with 91% of the calories coming from ultra-processed foods. However, study authors noted the diet was particularly high in sodium and didn't contain enough whole grains. 'The basic principle of healthy eating is variety,' Nestle said. 'If you eat a lot of different kinds of food, and most of them are minimally processed, you're doing fine.' 'Food is one of life's greatest pleasures, it's really important to enjoy what you eat.' I take pride in counseling patients on ways to empower their health, improve their blood sugar and enjoy the pleasures of eating by focusing on foods that are nutritious and delicious. Breakfast can be especially impactful as it sets the tone for the day ahead and offers a wonderful opportunity to nourish our bodies. Although I do not have diabetes, I do manage other chronic health conditions. To feed my body the nutrients it needs to feel its best and stay healthy, I try to fill my plate with plenty of fiber, unsaturated fats, antioxidants and lean protein. That means lots of fruits, vegetables, nuts, seeds, whole grains and legumes. My food choices are determined by my level of hunger, cravings and schedule. So, I don't always eat the same thing every day. However, my go-to breakfast choices are always rich in fiber and contain plenty of colorful fruits and vegetables. Typically, I prefer savory options, such as this White Bean & Avocado Toast. It starts with a base of crusty, whole-grain Ezekiel bread and is topped off with mashed avocado plus protein-rich white beans. Then, I put my own spin on it by finishing it off with a handful of bright microgreens and a dusting of 'everything but the bagel" seasoning. It's tasty and it keeps me full, energized and satisfied for hours. Read on to learn more about why I'm such a big fan, plus why I think you will be too. Why This White Bean & Avocado Toast is My Go-To Breakfast It's Big on Flavor First and foremost, this meal is delicious! The whole-grain toast provides a nice crunch and pairs perfectly with the creaminess of the avocado and white bean mixture. A topping of nutrient-dense microgreens and a dash of seasoning leaves me feeling satisfied and nourished, which is a great way to start the day. Plus, it's ready in 5 minutes flat. It's High in Fiber Fiber is one of the most important nutrients for blood sugar management as it slows down carbohydrate absorption and improves the body's ability to use insulin effectively. It also has lots of other health benefits. For instance, it helps your gut bacteria produce health-promoting substances called short-chain fatty acids. It also helps lower cholesterol and keeps you full after meals. Plus, it's great for keeping your digestive system regular, which also gets your day off to a good start! This recipe provides 11 grams of fiber per serving thanks to a combination of whole grains, veggies and beans. That's nearly 40% of the 28-gram Daily Value. And if you choose to add microgreens or another vegetable, like tomatoes, cucumbers, artichokes or mushrooms, you can bump the fiber and flavor up even more. It's Rich in Plant-Based Protein Protein is important for a healthy immune system, strong muscles and satiety, to name a few. And protein from plants, like the beans in this recipe, is especially beneficial. Plant-based proteins are naturally low in saturated fat. That's important for all of us since saturated fat can raise cholesterol, increasing the risk of heart disease. However, it's especially advantageous for people with diabetes, as they are especially prone to heart disease. While research is mixed, older evidence also suggests that eating too much saturated fat can contribute to insulin resistance. This recipe provides 12 grams of protein, all of which is plant-based. Yet, it only has 1 gram of saturated fat. It Provides Whole Grains Research has shown that people who eat lots of whole grains may be less likely to develop diabetes. Starting your day with a slice of whole-grain bread will increase your fiber intake and provide B vitamins, which may both help regulate blood sugar. While Ezekiel bread is an excellent choice, there are lots of whole-grain breads that work beautifully with this recipe. If you're not a fan of Ezekiel bread, try whole-wheat or rye bread. It Starts the Day with Produce Most Americans don't come close to eating enough fruits and vegetables. That can make it hard to get enough blood sugar-regulating fiber. Insufficient produce consumption may also limit our intake of vitamins, minerals and antioxidants. Considering you never know what the day will throw your way, starting your day with a serving of vegetables is a great way to frontload these nutrients early on. Other Breakfast Options for Healthy Blood Sugar If you're looking for a breakfast that's big on flavor and supports your blood sugar, try one (or all!) of these recipes. Quinoa & Chia Oatmeal Mix: For a high-fiber, low-fat, cozy breakfast, swap your traditional oatmeal for this whole-grain blend of quinoa, oats and rolled barley. Each serving provides 6 grams of blood sugar-stabilizing fiber and protein. Antioxidant-rich cinnamon offers additional blood sugar support. Spinach-Avocado Smoothie: This smoothie is a great choice when you need a healthy breakfast in a hurry. It's packed with protein (18 grams!) and its 8 grams of fiber provides more than a quarter of your daily fiber requirement. It also boasts 32% of your daily magnesium, a mineral that's critical for healthy blood sugar. Carrot Cake Energy Bites: These make-ahead energy bites are rich in nutrient-dense dates, pecans, chia seeds, oats and carrots. Cinnamon, ginger and turmeric provide antioxidants plus loads of flavor, eliminating the need for added sugars. Enjoy a few on their own or toss them into unsweetened yogurt for a nutrient-packed breakfast. Summer Skillet Vegetable & Egg Scramble: The eggs in this recipe give you vitamin D, another nutrient that plays a role in blood sugar regulation. A generous mix of veggies provides a wide variety of antioxidants plus 4 grams of fiber per serving. Our Expert Take Breakfast is one of my favorite meals. It provides me with the energy I need to perform at my prime, physically, mentally and emotionally. One of my favorites is White Bean & Avocado Toast topped with microgreens. Not only is it delicious and satisfying, it's packed with fiber and protein to keep my blood sugar on an even keel all morning long. I also love that it starts my day with whole grains, veggies and beans–foods almost all of us could all use more of. As much as I love a savory breakfast, when I crave something sweet, I'll whip up a chia pudding with walnuts and berries, or a breakfast porridge featuring quinoa, ground flaxseed, blackberries and cinnamon.
