Crispy French fries, creamy mashed potato, the everyday aloo gobi or the wholesome aloo ke parathe – the ubiquitous potato transcends cuisines, courses and cultures. On International Day of the Potato (May 30), how about celebrating the versatility of the humble spud with a delectable spread - from amuse-bouche to mignardise (pronounced mean-ya-deez, one-bite desserts usually served at the end of the meal)?
On the versatility of potato, Chef Ishijyot Surri says, 'Different cultures around the world use potatoes in diverse ways.
Potatoes can be boiled, fried, baked, or even mashed, and they absorb flavours beautifully. So, every culture has its own version of their recipes.' Adds Mikhail Shahani, chef, co-founder & product head at a biryani brand, 'In India, we are embracing regionality — Bengali aloo bharta with mustard oil is now making it to menus as a small plate or the Maharashtrian batata rassa elevated with smoked chilli oils.
Traditional dishes like aloo dum are also being elevated with techniques like double-cooking or smoke infusion using mustard husks.'
'Globally, chefs are showcasing potatoes as the star while also intersecting it with sustainability. Chefs are creating hyper-seasonal potato dishes that rely less on imported ingredients and more on local biodiversity,' says Mikhail Shahani, chef, co-founder & product head at a biryani brand.
Chef Vidhi Doshi adds, 'Potatoes are gaining gourmet level 'main character' energy. From Michelin star restaurants serving vada pav and dum aloo in genius ways to using different cooking techniques like sous vide, foam, confit, there's just so much potential with this versatile ingredient.'

Experts believe that while potato is widely used across the world in different cuisines, the spud is making its presence felt in interesting gourmet dishes. 'In India, potatoes are being served with goat cheese or are rolled into sushi-style servings. Internationally, people are using Columbian heritage potatoes and making colourful potato foams or baking potato bread. Every chef has their own signature way of accentuating the flavour and texture of the product.
Today, potatoes need not only be an accompaniment but can be showcased as the star of the dish,' shares chef Surri.

'Potatoes are entering the beverage space both as a starch base and a flavouring agent,' shares chef Mikhail, adding, 'Mixologists are now exploring potato-whey spirits, infused with botanicals.'

File FIR against power station related to land mortgage in Kabini: MLA
Mysuru: HD Kote MLA Anil Chikkamadu instructed officials to file an FIR against Kabini Subhash Power Station in connection with allegations of obtaining loans by mortgaging govt land in Kabini. The issue was discussed in a Karnataka Development Programmes review meeting held in HD Kote, concerning accusations that the Kolkata-based Subhash Power Station Corporation Limited attempted to illegally acquire govt land within the Kabini reservoir. Following complaints of public outcry about the misuse of govt land from the public and people from various quarters of society, the MLA directed Saragur tahsildar Mohankumari and officials concerned with Cauvery Neeravari Nigam Limited to look into such complaints. Even though state govt permitted the company to set up the power corporation after providing it land on a 30-year lease, the company is accused of transferring 13 acres into its name. It also obtained necessary khatas, RTCs, and fraudulently borrowed loans from several nationalised and private sector banks. Executive engineer of Kabini reservoir, Beechanahalli, Chandarashekhar, said he would verify this complaint and initiate action after discussing the issue with his higher-ups. Senior manager of Subhash Power Station Corporation Limited V Senthilkumar denied such allegations levelled against the company and said they are ready for investigation as they did not commit any wrongdoing. They haven't obtained any loans after mortgaging property belonging to the state irrigation department. The company has also written letters to the state revenue department, local tahsildar, and even irrigation department officials of Kabini reservoir to rectify the error if the company's name is mentioned in RTCs and other land records.

MC prepares Rs 10cr plan for public services at Manimajra housing project site
1 2 Chandigarh: With the Chandigarh municipal corporation eagerly pursuing the matter related to disposal of the Manimajra land parcel for a residential housing society project, its engineering department has finalised a comprehensive plan worth approximately Rs 10 crore for establishing essential underground and overhead services in pocket number 6 of Manimajra. A detailed agenda is scheduled for discussion during Tuesday's monthly general house meeting, seeking members' approval to initiate tender processes for basic service provisions. Various divisions of MC's engineering department, including Building and Roads, Public Health, Electrical, and Horticulture, have collaborated on this project. Officials from each division conducted thorough assessments of their respective domains, culminating in a consolidated financial estimate for the site development. "Providing roads infrastructure, water supply network, sewage lines, electrification, and horticulture work are some of the key basic public services required at the spot before doing any other works there. Thus, the matter was discussed at the level of the senior officers, following which the financial estimates were prepared.
