Bordeaux is embracing organic for a different class of red

Bordeaux and bio – the French term for 'organic' – are not words that are often seen in the same sentence. The world-renowned wines from the 7,000 or so chateaux that define this part of southwest France have an image of quality that is based on tradition rather than trends. So it is not surprising to learn that even today, official figures from the Bordeaux Wine Council reveal that only about 25 per cent of Bordeaux wines come from vineyards that are certified organic.
Nevertheless, as I discovered on a series of recent road trips, behind the conservative, old-fashioned image, tremors of radical change are rippling through France's most famous vineyards. Innovative vignerons are crossing once-sacred boundaries, not just responding to consumer demand for
organic wines , but embracing cutting-edge biodynamic production techniques and the unpredictable zero-sulphites world of natural wines. And it is no longer rare to see terracotta amphorae and ceramic jars standing alongside conventional oak casks.

The Bordeaux vineyards are spread over an area of 110,000 hectares, and to explore these new trends, my designated driver and I travelled through the lavish chateaux of the Médoc, Sauternes and Saint-Émilion, visited wineries in Blaye and Entre-Deux-Mers, and even ventured to little-known vineyards in remote corners of the Bordelais (a term used to describe the wine-growing region around the city of Bordeaux).
In addition to families who have been making wine here for centuries, we met dynamic female vigneronnes and enthusiastic newcomers who had abandoned business careers to become winemakers. And for the wine-loving traveller, tourism here has moved on from formal cellar tastings to envelop everything from wellness vinotherapy to vineyard picnics and escape games.
Heading north from the city of Bordeaux and along the left bank of the Gironde estuary, we soon reach the prestigious Médoc vineyards, which produce wines that you find in gourmet restaurants around the world:
Margaux , Saint-Julien, Pauillac.
Each chateau seems more opulent and sumptuous than the last, surrounded by perfectly manicured vineyards – so the anarchic vines of elegant 18th century Château Anthonic, broken up into small plots by hedges, ditches, woods and fruit trees, could not look more out of place.

Those familiar with renowned French chef Alain Ducasse will recognise his hallmark contemporary French haute cuisine. Having grown up on a farm in the Landes region of France, Ducasse places a strong emphasis on fresh, seasonal ingredients and using local produce wherever possible. With more than 30 restaurants under his belt today – across seven countries, spanning from Paris to Tokyo – Ducasse opened his eponymous restaurant in Macau in 2018, as part of the Morpheus Hotel inside the City of Dreams integrated resort. Photo: Alain Ducasse at Morpheus Awarded two Michelin stars, Alain Ducasse at Morpheus is overseen by the legendary chef himself, joined by chef de cuisine Cedric Satabin. Having worked for almost four years as chef de partie at Le Louis XV – Alain Ducasse in Monaco, chef Satabin joined the Macau restaurant in 2018. One of the first recipes Satabin learned during his time in Monaco was the signature seasonal vegetable 'cookpot' – a dish showcasing seven seasonal vegetables, cooked and served differently at each of Ducasse's restaurants. 'This dish was created back in 1987 for Le Louis XV – Alain Ducasse at Hotel de Paris Monte-Carlo in Monaco ,' says Satabin. 'At that time, vegetables were not commonly considered as ingredients. This recipe was from his first vegetarian menu, Les Jardins de Provence [the Provence's Garden].' Alain Ducasse's restaurants use seasonal ingredients and local produce whenever possible. Between hosting the Olympic and Paralympic Games, reopening the doors to Notre-Dame Cathedral and marking 80 years since the Normandy landings, 2024 was a banner year for tourism in France. More than 100 million travellers visited the country, spending a record €71 billion (US$84 billion) – 12 per cent more than in 2023. And the bulk of them, unsurprisingly, spent considerable time in Paris. There is reason to visit the French capital this summer too – from the David Hockney retrospective at the Louis Vuitton Foundation to the Centre Pompidou's final exhibitions before a five-year renovation begins in September. But there are always reasons to tack on a stay outside the city, either within the Ile-de-France region that surrounds Paris or slightly further afield. Here are five countryside and seaside properties that can be easily added to any Parisian sojourn. 1. Le Doyenné Travel time from Paris: 45-60 minutes by car or 35 minutes by train from Gare d'Austerlitz. If you only have a night to skip town, use it wisely and take the train 40km (25 miles) south of Paris to the village of Saint-Vrain.
