
Eating one type of food linked to '41% higher cancer risk'
Eating more processed junk food has been linked to a 41% higher risk of cancer.
An international research team tracked the health and diet of more than 100,000 Americans with an average age of 63 and looked at their chances of developing lung cancer. Over an average of 12 years 1,706 people developed the disease. People who consumed the highest amounts of Ultra Processed Foods (UPFs) were 41% more likely to develop lung cancer compared with those who consumed the least. The findings were adjusted to factor in whether or not people smoked tobacco. A quarter of cases occur in non-smokers.
UPFs are food products that have undergone multiple industrial processes and contain ingredients not typically found in home cooking. Additives include preservatives, emulsifiers, artificial colours and flavours which are used to enhance taste, texture and prolong shelf life.
The types of UPFs consumed most were processed meats like sausages and burgers as well as soft drinks.
Author Dr Kanran Wang, of Chongqing University Cancer Hospital in China, said: "Although additional research in other populations and settings is warranted, these findings suggest the healthy benefits of limiting UPF. Limiting UPF intake globally could contribute to reducing the burden of lung cancer."
Brits consume a greater proportion of UPFs than any nation apart from the US. Estimates suggest they make up more than half of the average UK citizen's diet. However most have no idea what this internationally recognised food category includes.
Most supermarket sliced bread is a UPF as well as shop-bought sandwiches, wraps, pastries, instant noodles, crisps, formed ham, breakfast cereals, cheap yoghurts and ice cream.
UPFs have unhealthy artificial additives to boost flavour and shelf life including emulsifiers, sweeteners, stabilising gums, flavour compounds and colouring agents. These are typically not used in home cooking but can be cheaper in mass produced food than natural ingredients.
Previous research has suggested that people who eat more UPFs are 24% more likely to have a heart attack or stroke.
Lung cancer is the most common cancer in the world. And in 2020 alone there were an estimated 2.2 million new cases and 1.8 million deaths from the disease worldwide. The latest study drew on data from the US Prostate, Lung, Colorectal and Ovarian (PLCO) Cancer Screening Trials.
Researchers focused in particular on UPF that included sour cream, as well as cream cheese, ice cream, frozen yoghurt, fried foods, bread, baked goods, salted snacks, breakfast cereals, instant noodles, shop-bought soups and sauces, soft drinks, sweetened fruit drinks, hamburgers, hot dogs and pizza.
The average study participant had just under three servings of UPFs each day. Consumption ranged from half a portion a day in those who ate the least, up to six servings a day in those consuming the most UPFs.
The authors said that they did make adjustments to their findings based on whether or not people smoked but they did not make adjustments for smoking intensity, which may have an impact on findings.
It is an observational study so they point out that "causality cannot be determined". The results are published in the journal Thorax.
Commenting, Prof Sam Hare, consultant radiologist at the Royal Free London NHS Trust, said: 'A quarter of lung cancer cases occur in non-smokers so we do need research exploring whether other factors are associated with lung cancer. We also know immunity is linked to cancer biology so it is a good idea to do research into factors like diet. However further work is needed to establish direct causation between UPFs and lung cancer.'
Tom Sanders, Professor of Nutrition at King's College London, said: 'Unhealthy diets often go hand in hand with smoking habit and low socioeconomic status. There appears to be no plausible mechanism to explain why ultra processed food should affect risk of lung cancer.'

Sorry America, but it's not Australia's fault that your healthcare system is failing you
If I were president of the United States, I would certainly be concerned about the cost and performance of the country's healthcare system. The grim statistics are well known. As of 2022, the US spent $12,555 per person on healthcare, almost twice as much as other wealthy countries, including Australia. That gap alone cancels out about half of the difference in income per person between the US and Australia, according to World Bank estimates. Higher expenditure on healthcare would not be a problem if it delivered a healthier population. But this is not the case. The US has one of the lowest life expectancies of any rich country. And even though more Americans die young, those who survive have worse health than elsewhere. Americans suffer from chronic diseases like diabetes, asthma and depression at around twice the (age-adjusted) rate of other rich countries. This gap is too large to be accounted for by specific causes like gun violence or drug overdoses, or even unequal income distribution. The US has worse health outcomes at every point on the income distribution scale than other rich countries, even though those at the upper end have much higher incomes. The US saw declining life expectancy in the years after 2014 and, unlike other countries, saw a late, limited recovery from the increased death rate after the onset of the Covid pandemic. There's not much hope for rapid progress in US health outcomes. The destruction of US public health infrastructure through budget cuts, the gutting of key agencies such as the Center for Disease Control and the appointment of notorious anti-vaxxer RFK Jr as secretary of health and human services will only make matters worse. It's unsurprising then that President Donald Trump is looking at the cost side of the equation. As might be expected he has raised, again, the perennial grievances of US health policy. This is the fact that Americans pay far more for prescription medicines than do citizens of other countries where prices are controlled through mechanisms like Australia's Pharmaceutical Benefits Scheme (PBS). And, given his grievance-based approach to the world in general, it is no surprise that his latest statement on the topic describes Australia and other countries as 'freeloaders' on the US. The US government is, of course, entirely within its rights to set its own policy regarding the pricing of prescription drugs. The US Department of Veterans Affairs already has a program similar to the PBS, under which it pays about half as much of the typical US price. There is no reason this couldn't be extended to the entire US Medicare system, except that the result would be to close down 1,000 or more private plans, each with their own lobbyists. And with a bit more effort, the US could establish its own version of the PBS, covering all Americans. Quite possibly, faced with lower prices in the US, pharmaceutical companies might demand higher returns from other countries including Australia. But a systematic reform of this kind is beyond the capacity of the Trump administration. Instead we have seen the typical Trumpian claim that other countries are benefiting unfairly from medical research done in the US. This was arguably true in the second half of the 20th century when the US was the undoubted centre of global medical research, most notably through the National Institutes of Health. But funding for the NIH (adjusted for inflation) peaked in 2004, and has suffered from decades of financial stringency. Meanwhile, the US share of genuine innovations, measured by 'new molecular entities' has declined and is no longer notably larger (relative to GDP) than that of leading European innovators. The development of semaglutide (Ozempic and Wegovy) treatments for obesity and diabetes by Danish firm Novo Nordisk is a notable example of a drug of particular importance to the US being developed in Europe. More generally, if Trump wants to import ideas like the PBS into the US system, Australia has plenty to offer. Australia's Medicare system, combining a single-payer universal scheme for standard healthcare with private insurance and fee-for-service medicine as an upper tier, could provide a politically palatable way of delivering the US demand for 'Medicare for all' without destroying the private sector. But of course, this isn't the Trump way. What we will doubtless see, as in the recent tariff negotiations, is a series of bullying demands, resulting in triumphant announcements of magnificent deals, which turn out, on closer inspection, to be largely illusory. The bigger lesson for Australia in all of this is that, as with China, we need to treat the US not as an ally or friend but as a trading partner which will seek to push us around whenever possible. The correct response, again as with China, is to stand our ground until the other side sees the pointlessness of bullying and the mutual benefits of free exchange. Fred Sirieix challenges Brits to blind taste test as majority dislike foods they haven't tried
A remarkable six out of 10 Brits admit to rejecting foods they've never actually tried, according to new research. The study found that the typical Brit has eight foods they refuse to eat, with five of these being dishes they've never tried. The survey was commissioned by Boursin Plant-based, who partnered with television food expert Fred Sirieix to conduct blind taste tests at food festivals across the summer. Sushi, black pudding, and kimchi are among the foods people most commonly dislike without trying first, along with plant-based alternatives to cheese and anchovies. Tofu, liver, and plant-based equivalents to milk also featured in the top 10. Remarkably, 65 per cent of those surveyed regard themselves as adventurous diners, whilst 74 per cent declared they would be open to sampling new foods. Fred Sirieix commented: "Brits claim to eagerly embrace culinary trends and global flavours, but they can be particularly prejudiced when it comes to certain foods, and this is one of the biggest barriers to discovery. "Many ingredients including plant-based alternatives to cheese have huge negative preconceptions. But despite many claiming they'd be able to differentiate plant-based from dairy, even the most discerning foodies were fooled by this plant-based alternative to cheese when we let taste do the talking." Despite these figures, only 17 per cent actually admitted to being fussy eaters. However, six in ten would openly say they didn't like something if they were served something unappetising. On the flip side, 28 per cent would be willing to give it a go, which in the case of 53 per cent has paid off as they admit they have changed their minds about something they thought they hated once they tried it. The main reasons for sampling unfamiliar tastes include blind taste tests or discovering the health benefits of a food. Fred Sirieix, on behalf of Boursin, added: "People are very clearly confident in their ability to tell dairy from plant-based alternatives but as we saw from experience, this was not actually the case. "In reality, less than 10 per cent of people at the Foodies festival were able to differentiate between Boursin plant-based and dairy. "It just goes to show - there's a whole world of flavours out there waiting to be explored if you're brave enough. "Even ingredients you might dismiss because of previous experiences, judgements, or assumptions can still surprise you if prepared in the right way. "So, embrace the challenge and let the taste do the talking." This means they could be missing out on a range of potential health benefits that a diet high in fibre can bring – from improved digestive health to reduced risk of bowel disease or diabetes. Whilst nearly two thirds of people (65.3 per cent) said they are aware that fibre improves digestive health and nearly half (49.5 per cent) are aware it can reduce the risk of bowel disease. And less people (35 per cent) are aware that a high fibre diet can reduce the risk of type 2 diabetes and cardiovascular disease. Advertisement Fibre has been found to reduce the risk of bowel cancer by promoting regular bowel movements, potentially reducing exposure to carcinogens, and supporting a healthy gut microbiome. Whereas fibre is believed to reduce the risk of type 2 diabetes and cardiovascular disease primarily by improving blood sugar control, reducing cholesterol levels, and aiding in weight management. In 2015, the UK government boosted its recommended fibre intake guidelines, taking it from 24g to 30g, recognising the crucial role of fibre to people's health. But the average Brit eats just 16g of fibre a day, with only 4 per cent achieving the daily recommendation. Advertisement Eating at least five portions of fruit and vegetables a day, incorporating a range of pulses and choosing wholegrain options can all help people get to 30g of fibre. For example, simply adding a portion of frozen peas to your dinner will increase your fibre by nearly 5g. Diagnosed with bowel cancer at 22 Swapping from white to wholemeal toast can add more than a gram per slice, and if you added a tablespoon of peanut butter that's another gram of fibre. Fibre is best found in fruits, vegetables, wholegrains, legumes, and nuts and seeds. Since the initiative began in 2021, participating brands have brought 400 new products and recipes to supermarket shelves. Kate Halliwell, Chief Scientific Officer, FDF said: "Boosting the amount of fibre in your diet is an easy win for your health. And food and drink brands are working hard to make it even simpler to do by developing recipes that help us all to get more fibre.
