The 51-year-old, from the Outer Hebrides, told Fabulous it's "important to keep the traditional recipes alive".
He picked up some of his top tips and passion for retro Scottish bakes from his aunt Bellag who, at 97-years-old, still whips up treats in the kitchen.
In a recent Instagram clip, he revealed his simple four-step recipe to create the "Scottish classic" empire biscuit.
Coinneach said: "Originally known as the Linzer Biscuit, these have become an iconic part of any Scottish teatime.
"Also popular in Northern Ireland, where they are named German Biscuits, these melt-in-the-mouth shortbread biscuits are traditionally sandwiched with raspberry jam and topped with a thick icing."
And people can't get enough of his simple, mouth-watering bake that's transported them back in time.
"LOVE THESE, MY CHILDHOOD IN BISCUIT FORM", one person cried.
A second wrote: "My mum used to make trays and trays of these for parish sales. I can remember her sandwiching them all together and then having different combinations of glacé icing and toppings)."
A third chimed in: "Thanks...great to see the best biscuit in the world being home baked."
"If ever there was a bake that transported me back to my gran's house it's this", insisted a fourth.
You can make school cake in the air fryer with just 6 ingredients - it's ready in minutes & perfect for an after-school snack
A fifth echoed: "Thanks for bringing back some wonderful memories of my mum, who often made these when I was young."
Meanwhile, a sixth said: "Ohh my favourite of all sweet treats..the noble Empire Biscuit...."
But Coinneach sparked debate when he revealed he ditches the traditional glacé cherry on top for a Jelly Tot - insisting that there "is no doubt" that it completes the sweet treat perfectly.
Some clearly agree, as one wrote: "Jelly Tots everytime. Cherries are only for "Proper Adults" eg. My Grandpa in my mind. I never want to grow up."
"On balance am a jelly tot man, although I think it's the quality of the biscuit that's the deal breaker", echoed a second.
Others, however, have defended the fruity topping with cries of "Noooooooooooooooo it's a glacé cherry for me" and "Cherry all the way".

Regardless of your topping preference, you'll want to give this simple bake a try. Here's Coinneach's simple recipe...
Method
Ingredients (makes 12)
For the biscuit:
50g softened butter
100g caster sugar
1 egg
½ teaspoon vanilla extract
450g plain flour
For the topping:
250g icing sugar
3 tablespoons water
Raspberry jam, for spreading
Jelly Tots
Cream together your butter and sugar, then mix in the egg and vanilla extract. Sift in the flour in batches and mix well until combined. Lightly flour a work surface and roll out the dough to a 1cm (½') thickness. Use a round cutter on the biscuits. Place on a baking tray, leaving a bit of space between biscuits to spread. Pop in the fridge for at least 1 hour to firm up. Preheat the oven to 160°C fan and bake for 10 minutes or until baked but still light in colour. Leave to cool completely on a wire rack. To make the topping, place the icing sugar in a bowl and gradually mix in the water. Spread the icing on half of the biscuits and spread 1 tablespoon of jam on each of the remaining biscuits. Place the iced biscuits on top of the biscuits with jam. Top each biscuit with a Jelly Tot and share.

Billionaire owner of Willie Mullins' ‘very classy' new £300,000 horse confirmed and Cheltenham Festival target decided

She really could be anything MONEY TALKS Billionaire owner of Willie Mullins' 'very classy' new £300,000 horse confirmed and Cheltenham Festival target decided Click to share on X/Twitter (Opens in new window) Click to share on Facebook (Opens in new window) THE billionaire owner of Willie Mullins' 'very classy' new £300,000 horse has been confirmed. And her Cheltenham Festival target has already been decided. Sign up for Scottish Sun newsletter Sign up 1 Willie Mullins and billionaire Ryanair boss Michael O'Leary had a public falling out a few years ago but they are big mates again now and could have a superstar on their hands in the shape of £300,000 Poetisa Credit: Sportsfile - Subscription The latest Horse Racing Ireland update showed Ryanair boss Michael O'Leary's Gigginstown House Stud as the owner of Poetisa. Mullins and right-hand man Harold Kirk saw off Nicky Henderson to land the Cheltenham winner at the Goffs sales in May. Formerly trained by Toby Bulgin, Poetisa won a mares' bumper at the home of jumps in April. Sent off 20-1 under former champion jockey Brian Hughes, she stayed on well up the hill after meeting trouble to win by a neck. Poetisa commanded a price tag of £42,000 as a three-year-old but her value soared after the Cheltenham victory. And Mullins clearly liked what he saw, with her pedigree suggesting big things lie in store in the future. Poetisa is from the same family as multiple Grade 1-winning superstar Macs Joy. The Jessica Harrington-trained hurdler won over half a million quid from 31 career races, which included nine victories. And O'Leary will be hoping for something similar from his newly-acquired mare. Gigginstown House were also listed as the new owners of French import Mino Des Mottes, who it is thought is also in training with Mullins. But it's Poetisa who Kirk has big hopes for. And he had already decided her target for the Festival when splashing the cash a few months ago. The bloodstock expert said: "She's a Cheltenham winner already and she'll only improve. "She was very classy when she won. She's a lovely mare and hopefully she'll go down the mares' route over hurdles as there's a big programme for these mares now." Poetisa can be backed at 10-1 for the Mares Novices' Hurdle, with Mullins' Champion Bumper winner Bambino Fever the 3-1 favourite. Her images, taken with the help of a mirror in a white-walled dressing room, saw her accessorise with a pair of sunglasses and pendant necklace. Yet after hitting upload, the 2013 BBC show star and CBB contestant was hit with a slew of vile remarks, which ranged from calling her "malnourished" to urging her to eat a "Greggs steak bake." One unkind Instagram user wrote: "I mean this genuinely, and I'm no Greek god but you genuinely look unhealthy and very malnourished…" A second posted: "Appreciate you feel good and happy but younger girls watching and aspiring may follow suit and this isn't good for anyone…" A third then put: "Babe always thought you were fit, but a little tooooooo slim my love xxx." One then added: "Could do with a good meal. May I suggest a Greggs steak bake followed by a Vanilla slice." Another remarked: "You need a good feed girl." Yet after spotting the comments on her feed, the brunette took the keyboard bullies to task directly. Luisa Zissman breaks down in tears over 'majestic' horse's death and says she got him stuff because she 'couldn't bear not to see him again' She headed to her Instagram Stories for a text post which read: "The comments on this holiday bikini pic. "Imagine I went round calling of you biscuit eating McDonald's loving lazy people fatties' and insisted her body is the result of 'energetic, health and mostly clean living'. Luisa, who is more than entitled to defend herself from the hurtful remarks, wrote: 'If you got off your a***s and stopped shoving s**t in your mouths you wouldn't be as fat and fat wouldn't be normal. "Just because the majority of people are overweight does NOT mean it's healthy." She added: "Shocking that when people see a healthy body with a healthy BMI in a healthy weight range they think it's not normal." STANDING ON BUSINESS Luisa continued to fight her corner on her second Instagram Stories slide. In it, she wrote in white text on a black background: "And no, I'm not sorry for my comments it's TRUE. "I'm stronger than most of you mo*fos, I can do endless press ups, pulls ups, I lift weights… "I can do sit ups until the cows come home and all you can do is comment that I'm unhealthy when you're craving Greggs at 8am when your lazy a***s wakes up…. 'So go f**k yourselves. The world is a sad place when everyone is normalising being a fat b*****d and having your organs surrounded by layers of fat is normal. "OBESITY IS THE NHS BIGGEST COST. Then you all moan you can't get a doctors appt." FAN SUPPORT Away from the trolling, Luisa's fans and famous faces were quick to support her. One pal posted: "Having met you in real life last week, I know you look fit, healthy and strong! Haters gonna hate." Former MIC star Ashley James then posted: "Looking at the comments - normalise not discussing people's weight." A fan then posted: "I just saw the response to the dumbass comments on this post and its made me love you even more! "Yea Luisa! Yes! bloody love you and your raw comebacks! You look and ARE amazing!!!" After her Apprentice fame, Luisa went on to star in Celebrity Big Brother 13 where she came fourth. The Milton Keynes born star then became a panelist on spin off show, Big Brother's Bit On The Side before launching her own podcast with Anna Williamson.
