Meet Youssef Nafaa, chef and founder of Houston-based Moroccan eatery ZOA.
Dig in: After about 35 years of being a chef, Nafaa, who is from Morocco, still "creates the recipes and sets the standards — I have the pounds to prove it, I taste everything," he says.
Catch up quick: As CEO of Bella Restaurants Group, Nafaa is also the founder of Italian restaurant Mia Bella, creperie Coco and tapas spot Mi Luna.
ZOA, which opened in 2020, is named for Nafaa's three sons: Zack, Omar and Adam.
We talked to Nafaa all about what makes ZOA a Houston favorite.
Why did you start ZOA?
I was thinking about the concept of a fast-casual Moroccan restaurant 13 years ago.
I wanted to make it simple: Anything that we make is fresh, nothing is out of a can or package. We only use olive or avocado oil, no preservatives. And I was keeping in mind myself — who has sensitivity to many foods — when I was making the menu.
How do you build trust with your customers?
For me, I take things to heart. Our food is very [reasonably-priced] but it's fresh. When you have our bowl, I promise you you'll come back.
How do customers find ZOA?
Our reviews are amazing. It's word of mouth and social media.
What advice do you have for aspiring small food business owners?
If you don't enjoy it, don't get into it. You have to have the passion, the desire to serve.
Once you think about making money, that's when you lose.
What's next: The first ZOA location opened in 2020, and Nafaa is preparing to open a fourth location close to Memorial City Mall this fall.
After that: Nafaa's lawyer son, Aaron, is looking to launch ZOA in cities including D.C. and Dallas.

More than two dozen states, along with the District of Columbia, are suing biotechnology company 23andMe over plans to auction off personal genetic information without their customers' knowledge or consent. The lawsuit, which was filed Monday by twenty-seven states in the U.S. Bankruptcy Court in the Eastern District of Missouri, says that the California-based firm, which filed for bankruptcy in March, cannot sell off customers' sensitive data without obtaining consent from each of the individuals. 'New Yorkers and many others around the country trusted 23andMe with their private information and they have a right to know what will be done with their information. My office is joining 27 other attorneys general to protect people's most private information and to make sure 23andMe abides by the law,' New York Attorney General Letitia James (D) said in a news release on Tuesday. The human genetics firm, founded in 2006, filed for Chapter 11 bankruptcy in March in U.S. federal court in Missouri. The company gained popularity for its at-home DNA tests. Customers had to send saliva samples by mail and then they would get genetic reports. 23andMe has collected biological samples and genetic information for more than 15 million consumers. Regeneron Pharmaceuticals, another biotechnology company, said last month that it would purchase for $256 million. When it filed for bankruptcy, 23andMe said the personal information of customers could be accessed, transferred or sold as part of a transaction, but the potential buyers will have to comply with its privacy policies. Regeneron Pharmaceuticals said it would follow the outlined policies and the laws on-hand. Customers can erase their data from the 23andMe site. House lawmakers launched an investigation a month after the biotech company filed for bankruptcy, expressing concerns over the individuals' data and added that some users were unable to delete their information off the website.

Ricardo Builds a Smarter, Simpler EV Motor That's Easier on the Planet

Most electric vehicle motors today rely on rare earth materials—like neodymium and cobalt—that are expensive to mine and tough on both the environment and global supply chains. Add in the use of copper, which is energy-intensive to produce, and it's clear there's room for improvement in how we build the motors that power the future. Ricardo, a UK-based engineering firm known for its sustainability chops, is stepping up with something refreshingly different: a new electric propulsion motor called Alumotor. What makes it special? It skips the rare earths and copper entirely. Alumotor isn't just a clever name — it's also the core of the design. Instead of copper, Ricardo's team used lightweight aluminum for the motor's hairpin windings. That makes the unit less resource-intensive, easier to recycle, and more cost-effective to produce. Even with those changes, performance didn't take a hit. In fact, this oil-cooled synchronous reluctance motor delivers up to 214kW of power and over 92% efficiency—numbers that stack up well against many traditional EV motors. That kind of output is a great match for light commercial vehicles and off-highway applications, and it's flexible enough to scale across other platforms, too. This is more than just a lab experiment. Ricardo's motor has already been tested and shown promising real-world results. And because it doesn't rely on rare or conflict-prone materials, it could help make EVs more sustainable, more affordable, and easier to build at scale. For everyday drivers, that could mean cleaner vehicles with lower production emissions and fewer worries about global material shortages affecting what shows up at the dealership.
