The massive dog, which was on a "chain-style lead", pounced on her on a path near Smithpool Park at 4.20pm on June 26.
Staffordshire Police are appealing for witnesses to the attack.
The man walking the dog, which was on a chain-style lead, is described as wearing a grey hooded sweatshirt and dark trousers.
A Staffordshire Police spokesman said: "We are appealing for information after a woman was bitten by a dog in Stoke-on-Trent.

Two arrested for ‘murder' after student, 20, killed in Cambridge as witnesses describe ‘screaming'
TWO men have been arrested in connection with the murder of a student.
