I love cooking a variety of dishes at home but one that we all love takes me back to my childhood: stuffed tomatoes with minced meat, roasted in the oven with pilaf rice. I use big, juicy tomatoes stuffed with minced veal, finely diced vegetables like onions, carrots, garlic, and mushrooms, along with some Parmesan cheese and chopped parsley. I place them in a dish with partially cooked rice, and as they bake in the oven, the juices from the tomatoes and meat mixture are absorbed by the rice. These locally farmed bivalves from the UAE's eastern coast are shucked to order and served in the traditional way with a selection of condiments, including mignonette, and cocktail sauce. For spectacular hand rolls: Kokoro Hand Roll Bar Making waves in Alserkal Avenue, Kokoro Hand Roll Bar is all about, you guessed it, addictive open-faced temaki (hand rolls). It was fun and cute. Thanks to its runaway success, what was once a charming fish shack in a Jumeirah car park has evolved and now operates out of Dubai Fishing Harbour. Freshly-caught fish is seasoned well and cooked simply – it's as straightforward as that but, boy, does it deliver on taste and memories. For knock-your-socks-off feta brûlée: Three by Eva In a city filled with Middle Eastern food institutions, Three by Eva –opened in 2021 – may still be one of the new kids on the block. But thanks to its smash-hit homage to homely Arabic cuisine, crafted by mother and daughters Eva Halasa, Emilie, and Lilian, it has already cemented itself as an icon. One standout dish? The unforgettable feta brûlée – a marriage of feta, dates, and thyme, with the cheese caramelised into a delicate, crackling coat. It's a flavour tripwire of sweet and savoury, best enjoyed with their homemade walnut and dates sourdough bread. This gorgeous dish (and its flame-torched top) is just one of the many must-try items at the Al Wasl eatery – now also available at their new home in Time Out Market – proving why Three by Eva remains one of Dubai's most beloved homegrown spots. Opened in February, this architecturally-stunning Nad Al Sheba gem is celebrating local flavours with a contemporary touch, blending Emirati tradition with modern technique. Championing the UAE's growing farm-to-table movement, chef Ionel Catau and Emirati pastry chef Sahar Al Awadhi source well over half of their ingredients locally. Fujairah prawns, kissed by the grill and brightened with za'atar salsa verde, sit alongside a staple chicken machboos, topped with locally grown vegetables and spiced in homage to the UAE's deep-rooted culinary ties with India, among other mezze treats and mixed grills. For street-side shawarma: Set Alsham Shawarmas come in many forms – chicken or beef, packed with pickles and veggies, slathered in hummus or dripping with garlic sauce. In Dubai, finding a great shawarma is never a challenge, but some stand out above the rest. We're especially partial to the Syrian-style meat shawarma from Set Alsham on Beach Road. Wrapped in their house-made saj bread, grilled to crispy perfection, and served with a special garlic sauce, it's a shawarma experience worth seeking out. Since kunafa is so dear to our hearts, we'll happily order a 1kg wheel (Dhs105, good for up to six people) from Feras, a Dubai institution that has been serving truly magical kunafa for decades. It starts with clarified butter-soaked filo dough, layered with mild cheese curd, then baked to golden perfection. For the perfect steak frites: CQ French Brasserie As you've probably noticed, we're in the midst of a steak frites renaissance, with restaurants offering everything from casual, neighbourhood-style dishes to indulgent, luxe versions worth every penny. Dubai's culinary scene can easily support multiple steak-frites-only spots, as evidenced by the long lines at Le Relais L'Entrecôte that opened earlier this year. However, we still have a soft spot for an old favourite, albeit with a fresh name: CQ Brasserie – formerly Couqley – the Dubai OG. It's a place that remains close to our hearts. A perfectly sourced steak frites, served with an outrageously delicious buttery sauce, paired with a bottle of wine, is just Dhs349 for two on Mondays. It's a deal that's hard to beat. That's where the colours pop and the serenity hits a whole new level, especially as the evening chill rolls in and you find yourself pulling your blanket a little tighter. Book a spot at Sonara Desert Camp, where you'll descend a massive wooden staircase into a crater, all under a canopy of twinkling fairy lights, for an unforgettable BBQ dinner. This stunning location could easily coast by on its views and serve up mediocre food, but the cuisine here is genuinely top-notch. Add in a fire show and a falconry display, and you've got a sunset dining experience you'll never forget. While there's been plenty of changeover over the years, the current lineup includes new Oriental Dining serving Malaysian and Singaporean cuisine, the popular burger joint High Joint, the authentic Tacos Los Hermanos, and the breakout hits, chef Akmal's new pizza spot Pizzeria Funkcolio, and Al Naqa Lao Kebab House, which have taken the city by storm. Basic to boujee: These Dubai chefs upgrade the humble cup noodle
These Dubai chefs show us how to crush midnight cravings – premium style… Cup noodles – the ultimate comfort/struggle/lazy meal, depending on which stage of life you're in. They're pretty damn cool as it is, on their own, but how you upgrade the cup noodle is a sign of your personality and tastes, because it is such a blank canvas. If ever, you desire to feel like you made at least some effort, this recipe book might come in handy. Chef Illia A ndriushyn of a normal day The jazz: tuna tartare, truffle oil, Beluga caviar (just casually) As much as we cook with Wagyu, truffles, lobsters, and other fine ingredients, chefs often crave a cheat meal. For me, it's usually McDonald's or Hardee's—but a cup of instant noodles is essential. The last time I had a noodle cup, I kept it simple. I used the included spices but strained the water, eating the noodles without the broth. Then, I added a smooth quenelle of tuna tartare and a dash of truffle oil. I'm sure it would be just as delicious with a generous spoonful of Beluga caviar. Elevate it, make it luxurious—but never forget the roots! @ Chef Yara ElMasry The jazz: raw egg yolks, steak, Parmesan cheese, chili crisp I love cooking myself a whole meal, but sometimes you just crave something that's familiar, quick, and a little refined all at once. And honestly, nothing delivers on that like a ridiculously good cup of instant noodles. Last time, I decided to take my noodle game up a notch. I mixed in the seasonings and raw egg yolks with a little bit of the broth to create a silky, noodle carbonara—rich, glossy, and packed with umami. Then, I topped it off with slices of perfectly medium steak, because if we're doing this, we're doing it right. The contrast of the creamy noodles with the tender, juicy beef? Unreal. It could have definitely used some Parmesan, maybe even a little chili crisp for that hit of heat. But at the end of the day, it's still instant noodles—the kind of meal that reminds you why simple food, done right, just hits different. @chef_kief The jazz: sesame oil, Chorizo beef sausage, lime wedges I used garlic, ginger, soy sauce and sesame oil, which I used to cook a mix of Asian-style vegetables with. I used the seasoning it came with to soak the noodles until they were ready then drained 90% of the liquid. In a skillet I started with the sausages (they naturally have enough fat so oil wasn't necessary) I then removed the sausages and started on my vegetables which I cooked in the same skillet. Once it was ready I added the noodles and sausage into the vegetables and gave it a toss and it was ready to serve. I topped it with chopped green onion and had some lime wedges and chilli on the side. @kishmishdubai Chef Ryan Bernardo of Rare Brasserie & Bar The jazz: edamame, shimeji mushrooms, egg, sesame oil Ah, the humble cup noodle—every chef's guilty pleasure and every late-night savior. But let's not settle for just rehydrated nostalgia. Here's how I take it from survival food to something worth savoring: I toss in julienned carrots, edamame, and shimeji mushrooms right as the noodles are cooking—because even instant broth deserves a little depth. Then, just before serving, I crack an egg straight into the hot soup and let the residual heat work its magic, creating silky ribbons of richness. A final flourish? A whisper of sesame oil to bring it all together. It's still a cup noodle, but now it tastes like it at least went to finishing school. @theraredxb Chef Naved Nasir of Khadak The jazz: onion, tomato, chilli, ginger-garlic paste, Maggi masala Noodles are an underrated comfort food, especially for chefs. There's something about their simplicity that makes them incredibly satisfying. At home, my daughter loves Maggi, and we often make it together. But when I take on cup noodles, I like to build deeper flavors while keeping it quick and right balance of spice makes it just perfect. Heat ghee/oil in a small pan. Add the sliced onions and sauté until golden brown. Stir in the ginger-garlic paste and green chilli, cooking for another minute until fragrant. Add the chopped tomato and cook until soft. Sprinkle in the Maggi masala and mix well. Transfer the cooked mixture into the noodle cup. Pour in boiling water and stir well to blend the flavors. Cover and let it sit for 2–3 minutes.
