Pinjarra's Exchange Hotel sizzles into steak sanga finals

A Pinjarra pub is raising the stakes with a unique steak sanga offering that's become a juicy contender in WA's premier steak sandwich competition.
The organisers of the Australian Hotels Association (WA) and Little Creatures WA's Best Steak Sandwich contest named The Exchange Hotel as one of the four country WA finalists in this year's event.
The three others were Margaret River's Settlers Tavern, The Miners Rest, and Australind's Treendale Farm Hotel — with Treendale winning last year.
The Exchange Hotel's offering is packed with chargrilled local lamb, a quirky twist on the expected beef cut.
The mouthwatering lamb is then topped by cooked tomato, a capsicum and pomegranate molasses, red onion, sumac and house-made feta mint yoghurt, all served on a garlic butter Turkish roll.
Exchange head chef Chef Dave Brown said the lamb comes from Midway Farm stall down the road and is 'especially nice'.
'It's Middle Eastern style, which I think is what helped us along, because it's a bit different,' he added.
'99 per cent of people love it and all of the feedback I got was about how different and exciting it is compared to normal.
'We're in a position out here where we can get away from a lot of the basic pub stuff, but I don't get too far away from it. '
The Exchange is currently selling more than 100 of the unique lamb sandwiches a week, on top of selling about 250 of the classic beef steak sandwiches.
Four Perth metropolitan finalists were also named — Carrington's Bar & Grill in Hamilton Hill, Print Hall in Perth, The Central in Butler, and The Last Local in Canning Vale.
Carrington's Bar & Grill is the defending metro champion.
The finalists will compete for the titles of country WA champion on June 24 and Perth metro champion on June 25 at the 2025 AHA Hospitality Expo at Crown Perth.
They will present their steak sandwiches to a panel of judges who will assess tenderness, presentation, originality, flavour, chips, sauces and value.
AHA(WA) chief executive Bradley Woods said the standard of entries continued to impress, with more than 70 venues entering and showcasing exceptional levels of flavour, creativity and presentation.
'WA's Best Steak Sandwich is more than just a competition — it's a sizzling showcase of foodie passion and the incredible talent we have in our pubs and hotels across the State,' he said.
'The energy this year has been fantastic. Venues have thrown themselves into it, especially on social media — rallying their communities and bringing some serious steak sandwich spirit to the competition.
'We're looking forward to seeing what the finalists bring to the stage during the live cook-off to determine the winners.'

One fast food chain has brought out a crossover menu item that some Australians are declaring to be 'the best', while others have been left unimpressed. KFC has released the Zinger Kebab, which is only being sold until September 8, and features a Zinger fillet, tabouli, garlic sauce, lettuce, Supercharged Sauce and a flatbread. Kayla Schembri said it 'might just be KFC's best menu item yet' and that her followers 'weren't ready' for it. 'I love that it comes in a kebab wrapper, that's so cute,' she said. 'Oh my god, this looks so good.' After taking a bite, Ms Schembri said it tasted like a big version of the slider and she was 'really down for that'. 'The filling is just super fresh,' she commented, adding that the garlic sauce was 'incredible'. Meanwhile, food content creator Dub Eats Everything said while it was likely to bring lines to KFCs around the country, he wanted to try it for himself to see if it was 'worth it'. 'That garlic sauce and tabouli hits you in the face as soon as you bite in,' he told followers. 'I would like a bit more chicken in there. It's giving heavy Middle Eastern vibes. The Supercharged Sauce adds a nice kick too.' He even added some chips to the kebab and said he'd like if the flatbread was more toasted. Overall, he declared it didn't contend with the brand's other releases but it was full of flavour. Katie Gulle also was one of the first to dig in. 'It definitely doesn't taste like a kebab, like it's just the bread. It's giving a chicken wrap. But it's really yum,' she said. 'I saw some people's and it was just bread and chicken, like there was no sauce, but there is heaps of sauce on mine. Overall, she said she 'really enjoyed it'. Nick Vavitis, who owns brownie company Choclt also weighed in, saying it wasn't often that he went to KFC but for a Zinger Kebab and a snack pack he was willing to make an exception. After taking a few bites, he delivered his verdict. 'I don't know if I just got a really bad one or there wasn't enough tabouli in it but when I eat a kebab I'm thinking spices like garlic, paprika and onion,' he said. 'Mine's actually really, really bland. I'm not getting much flavouring at all. You'd at least want a really strong garlic taste from a kebab. I'm not even getting that.' Mr Vavitis then moved on to the snack pack, commenting it was 'way better' as he could taste all the sauces. 'At KFC, we're passionate about crafting unforgettable taste experiences and innovating our iconic flavours, and the Zinger Kebab is a testament to that,' Sally Spriggs, KFC Australia's group marketing director, said. Sexy and delicious, this Mozart opera is made for our times

In 1781, Wolfgang Amadeus Mozart – one of the most profound geniuses the human race has produced – sat as a servant at the table of the Archbishop of Salzburg, above the cooks but below the valets. Already a much-travelled and admired child prodigy, he felt the humiliation acutely. He could hardly have imagined that within a year he would have left the Archbishop's service, propelled literally by a boot up the backside from the Archbishop's secretary, and be revelling in the massive success of his first really great opera, The Abduction from the Seraglio. He had taken his first trailblazing steps from musician as servant to musician as entrepreneur. Now, 244 years later, Victorian Opera is launching a new production of the opera, very much designed for 2025 Melbourne, with a shortened title, a brand new libretto and some musical cuts and additions. Abduction is what director Con Costi calls a 'delicious dark rom-com'. The original story tells of two women, Konstanze and Blonde, abducted and taken to a Turkish harem. When their boyfriends, Belmonte and Pedrillo, try to steal them away, they are caught, but released, along with the women, by the merciful pasha. In Costi's retelling, the pasha becomes a Great Gatsby figure who holds elaborate and debauched parties, which the two women enter voluntarily due to possible dissatisfaction with their metrosexual boyfriends, who venture in to 'save' them. Costi has Belmonte ask his sidekick: 'Do you think they are having doubts?' Pedrillo replies: 'Surely not. I mean look at us – we're young, we meditate, we moisturise.' Delightful gentle mockery that is definitely not in the original text, but highlights Costi's trajectory. 'At its heart, it is a sex comedy,' says Costi, 35. 'It's some of the most exciting, dynamic and beautiful music Mozart has in his canon. Then the characters are incredibly rich and witty and funny, and dealing with an extremely contemporary conundrum: how best to live.' Victorian Opera has gone with a vibrant young cast to keep the energy high. Pasha Selim, a non-singing role, is played by Lyndon Watts, 30, who made his name as Aaron Burr in Hamilton, then as Candide in last year's VO production. He is equally noted in the realms of theatre and musical theatre. Have others traversed such a wide path? 'Melbourne is full of them, actually,' he says. 'In the art spaces in Australia, you have to diversify or there's not enough work. I am surrounded by a lot of artists who straddle various worlds.' This is Watts' first mainstream opera, and he is excited. 'I'm sort of pinching myself to be part of this incredible music. It's a dream – it's like doing Shakespeare, it's like the mastery of Hamilton or Sondheim,' he says. Mercy and empathy are the keys to opening the Pasha's character, he says. 'As long as you're honouring the human being, if it's larger than life or different from the original, I enjoy it for what it is.' Emerging soprano Cleo Lee-McGowan, also 30, has the most difficult role, Konstanze, with its formidable technical and emotional demands. 'It's a beast of a role,' she says. 'It's very long and it's very high, but it's also very low. Mozart wrote it for a friend [the diva Caterina Cavalieri] to showcase her virtuosity and the extremes of the human voice, so the challenge is how do I achieve these extreme technical demands while also keeping the beauty.' Her answer is not to think about it too much but to dive into the character and trust her musical preparation. 'I prepare brick by brick, focusing on the coloratura [virtuoso] passages and working out where I can take a breath, where I can reset, and just figuring out a strategy to get through this marathon. I must say it's the most challenging role I've ever sung, and possibly will sing.' Lee-McGowan says the original setting may be strange, but it's highly relatable. Konstanze and Blonde are asking questions every young person is asking and probably through every stage of life: 'Who am I, and what do I really want?' The pair are the first of Mozart's canny, complicated women, prominent in his later operas, Costi says. 'You can't help but notice the music and the time that he gives to the female characters across his operas. He gives so many women … musical dignity, and that's why he is the great enlightenment humanist composer.' Costi says the big question he took a long time to grapple with, is what is the genre? The opera is not just a comedy but at times deeply serious, reflective and moving. 'It's not just a raucous comedic opera buffa, but it's not an opera seria where we are dealing with the plight of emperors and kings and queens.' Both forms had strict conventions which Mozart defied to produce something new. 'The game I really want to play with the audience is this oscillation between things that are comedic and witty, and you're hopefully laughing, but at the same time grappling with quite serious things. 'It's an exciting challenge of really gear-shifting between comedy and human beings at the end of their tether. It has the tropes for romantic comedy, but there's so much threat and menace hanging over the world that they're in – I can't really think of a parallel.' There is a joy, he says, in embracing what is wild and dark about being human and also unravelling the complications of control in a relationship. 'Where does love and commitment transform into something controlling? These things are very interesting to me, particularly in the contemporary climate of a modern Victorian age of ethics and etiquette.' Costi says the contemporary, cult-like, world he has chosen lets him reflect the sexual allure, danger and strangeness of a harem. Loading He is categorical that his revision is not about having the audience going away talking about the director – a charge levelled at some directors in Europe. 'I'm an opera fan. I'm a Mozart obsessive,' he says. 'Wunderkind directors throwing arbitrary grenades at things for shock value is actually kind of passé. That was interesting in the 1980s. There's now something much more interesting in how do I actually tap into what I think is the intention of the composer and the essential qualities of what makes this a fantastic opera, but treating opera as a living, dynamic medium.' This production, he believes, is an ideal introduction for people who are not regular opera goers. 'I like to think there's something in it for connoisseurs and for first-time opera goers. I want both to leave having had an exciting and fun and moving experience.'

Kurt Sampson, one of Australia's most accomplished chefs, passes away aged 57

In 1992 he moved to Perth and became sous chef at 44 King Street where he worked alongside a pre-Star Anise David Coomer and underneath head chef Russell Blaikie. Next came Melbourne and our man's Malouf era. First it was a stint at forward-thinking pub O'Connells Hotel, then being tapped to run MoMo: Malouf's fine diner at Melbourne's Grand Hyatt. Somewhere along the way, Sampson also found time to help his mentor produce cookbooks, something I discovered in 2023 when I stumbled on a second-hand copy of Greg and Lucy Malouf's Moorish (Hardie Grant, 2001) in which Sampson gets a shout-out in the book's thank you notes. Perth came calling a second time and Sampson returned west in 2009 to reunite with Coomer and, together with a pre-Greenhouse Matt Stone, opened Pata Negra: a spirited tapas bar with a strong North African influence. After leaving Pata Negra, Sampson teamed up with Bread & Circuses duo Siobhan Blumann and Hamish Fleming where, between 2014 and 2023, he oversaw the food at yesteryear watering hole The Dominion League, Middle Eastern stronghold Propeller and neighbourhood small bar Saint Brigid. While Dominion League's fried chicken ribs and Saint Brigid's potato scallops had their fans, it was Sampson's menu at Propeller that confirmed his status as one of Perth's most singular cooking talents. Offal and unglamorous ingredients were a strength, from the liver and toast on the breakfast menu to dainty quail's eggs sharpened with harissa. An all-offal long table dinner held in 2016 that started with minted lamb's brain omelette and finished with langues de chat ('cat's tongue biscuits' in French) remains a fond memory. Yet despite a tireless work ethic and knack for wrangling max flavour from unlikely sources, Sampson's legacy is defined as much by the way he treated people as the way he handled ingredients. Having had the pleasure of getting to know Sampson proteges over the years, similar stories keep resurfacing. Stories of a teacher who took joy in passing on knowledge. Stories of a leader that had the back of all his charges. (Albeit a leader that possessed an X-Men-esque superpower of being able to strike you down with a perfectly timed one-liner.) Stories of a committed father that pushed constantly to support his family. Stories of a chef that his peers all hailed as a chef's chef: the ultimate peer-given accolade in cooking circles. But as is often the case with chef's chefs, the glow of the spotlight made Sampson uncomfortable: a shame, I think, as his input was always thoughtful and smart. When it came to receiving praise, Sampson would typically deflect and direct people's attention elsewhere. To the farmer, to the rest of the kitchen crew, to the front-of-house. While I'm not convinced that he necessarily hated having all eyes on him – although he probably did – I suspect that he felt more comfortable getting on with things behind the scenes. He was, after all, someone that didn't do shortcuts and thought nothing of changing menus last minute to make the most of produce that he was excited about. A minute spent answering a journalist's questions was a minute fewer he could put towards butterflying boxes of garfish. As mentioned previously, while food was central to Sampson's identity, his dream post-MND diagnosis was to reconnect with New Zealand and share his homeland with his family. A 2023 fundraiser made this possible and the Sampsons have spent the better part of two years exploring the many forests, beaches and mountains of Aotearoa. Relocating to New Zealand, naturally, also allowed Sampson to (re)immerse himself in rugby culture, from cheering on The Highlanders of Otago. Kurt Sampson was born on April 29 1968 in Napier, New Zealand but spent most of his childhood in Gisborne, a major city three hours north of his birthplace.
