Quintonil: Mexico's boundary-pushing culinary love story

The Sun6 days ago
MEXICO CITY: Behind the global acclaim of Quintonil, ranked third in 'The World's 50 Best Restaurants,' lies a love story between two gourmets passionate about redefining Mexican cuisine.
Named after an aromatic Oaxacan plant, the restaurant merges traditional flavors with modern techniques, earning praise for its 'boundary-pushing' dishes.
Alejandra Flores, co-founder of Quintonil, embodies Mexican hospitality, describing service as 'a dance' or even 'an embrace.'
The intimate dining space, far from ostentatious, reflects the understated elegance that has drawn international diners to Mexico City.
Head chef Jorge Vallejo, formerly of Pujol, credits his mentor Enrique Olvera for elevating Mexican gastronomy.
'Twenty years ago, people knew very little about what Mexican cuisine really is,' Vallejo said.
Today, Quintonil showcases Mexico's diverse culinary heritage, from street tacos to refined dishes like vegetable mole with asparagus.
With 98% of ingredients sourced locally, Quintonil highlights seasonal produce alongside staples like corn and tomatoes.
Vallejo's dedication to local suppliers includes white beans from Sinaloa, reinforcing the restaurant's commitment to authenticity.
The Michelin Guide praises Quintonil's 'constantly evolving' tasting menu, featuring innovative pairings like crab with blue corn tostada and pipian verde infused with galangal and lemongrass.
The restaurant's success, according to critics, lies in its 'enticing melding of local product, execution, and creativity.' - AFP

Paris Seine swimming draws 35,000 despite rainy July

THREE Seine swimming sites in Paris have attracted more than 35,000 visitors since opening in early July, despite frequent summer rainfall, city officials confirmed. The historic return of public swimming to the river marks the first time in over a century that Parisians and tourists have been able to bathe in the Seine following a massive cleanup effort. Wet weather forced temporary closures for 13 days in July, including one site near the Eiffel Tower. 'We knew that the weather would be a variable factor,' said city official Pierre Rabadan. 'But we are extremely satisfied.' The 19th-century sewage system often overflows during heavy rain, sending wastewater into the Seine. However, a new retention basin has successfully prevented overflow this summer. Despite initial delays, enthusiasm remains high, with a record 5,700 swimmers on July 13. The initiative stems from Paris' Olympic legacy, where triathletes and open-water swimmers competed in the cleaned-up river. Authorities invested €1.4 billion ($1.6 billion) to improve water quality ahead of the Games. The free swimming spots will remain open until August 31. - AFP

Milan-Cortina 2026 Winter Games on track despite challenges

Six months before the Winter Olympics kick off, Italian organisers assure that preparations remain on track despite past hurdles. Andrea Varnier, CEO of the Milan-Cortina 2026 Organising Committee, stated, 'Preparations are progressing steadily and according to the timeline we have set.' The Games will begin with curling on February 4, followed by the opening ceremony on February 6. The event emphasises cost efficiency, with a budget of 5.2 billion euros ($6 billion), significantly lower than previous editions like Sochi 2014 ($40 billion) and Beijing 2022 ($38 billion). Existing venues will be prioritised, including Verona's ancient Roman amphitheatre for the closing ceremony, reducing both expenses and environmental impact. Challenges remain, such as constructing a new bobsleigh track in Cortina after political insistence, but organisers remain confident. 'We are moving forward with confidence,' Varnier said. Accommodation plans are also secured, with athlete villages set for completion by October. Medal designs were unveiled in July, with improved durability to avoid issues seen in Paris 2024. The only uncertainty? Snowfall. Italy's weather service cannot yet predict conditions, but organisers remain unfazed: 'We'll be ready.' - AFP
