You might have seen it popping up in reels or food blogs, bread kunafa, the easy twist on a beloved Middle Eastern dessert. And yes, it's as doable as it looks.
Kunafa, also spelled knafeh, konafa, kunefe, kenafe, or knefeh, has deep roots in the Arab world. The name itself is thought to come from the Arabic word
kanaf
, meaning 'to shelter' or 'to protect', a nod, perhaps, to the way the two layers of dough encase the cheese inside.
Over time, kunafa has traveled far beyond its origin, adapting with each kitchen it enters. The version making the rounds now is a simpler, quicker one, bread kunafa. It's likely you already have the ingredients at home. Here's how to make it.
Ingredients
To make this simple bread kunafa at home, you'll need a few basic ingredients.
2 slices of bread(or 250 gms if you are using breadcrumbs)
1 slice of processed cheese or roughly 1/4 cup shredded mozzarella
1/2 cup (about 100 grams) of melted butter
Sugar Syrup made from equal parts sugar and water (1/2 cup each) + 1 tsp lemon juice
Dry fruits for garnishing
170g thick cream or fresh cream
A dash of rose water or orange blossom water
Crushed thin vermicelli or coarse kunafa dough (about 1/2 cup)
How to make the viral bread kunafa
Start by combining sugar and water in a pan.
Bring to a boil and let it simmer until slightly thickened, around 5 minutes should do. Add lemon juice at this stage. If you like, stir in a little rose water or orange blossom water for aroma. Set it aside to cool.
There are two ways to go here. If you're using sliced bread, trim off the crusts. For breadcrumbs, pulse the bread in a food processor until fine.
If you're using breadcrumbs, combine them with the melted butter or ghee until well-coated and slightly clumpy.

Using sliced bread:
Place a slice of cheese between two trimmed slices of bread. If you want a crunchy layer, dip this sandwich in beaten egg and milk, then roll it in crushed vermicelli or kunafa dough.
Using breadcrumbs:
Grease your pan, either a small baking dish or a thick-bottomed pan if you're cooking on the stove. Press two-thirds of the breadcrumb-butter mix into the base and slightly up the sides. Add a layer of cream (optional) and then the cheese.
Finish with the rest of the breadcrumb mix on top and press gently.
Cooking the Kunafa
Stovetop:
Melt a bit of butter in a pan. Cook the bread kunafa on low heat until the base crisps up and the cheese melts. Flip carefully if needed.
Oven method:
Bake in a preheated oven at 180°C (around 356°F) for about 25 to 30 minutes, or until golden brown on top.
At last when the kunafa is warm, pour sugar syrup, as per your liking, and finally garnish it with dry fruits for the perfect bite.

Govt to start safe septic tank cleaning drive from Aug 15

Bhubaneswar: In a bid to ensure safety of sanitation workers, the housing and urban development department has decided to launch a comprehensive awareness drive on safe septic tank cleaning across the state starting Aug 15. Announcing this on its social media handle X (formerly Twitter), the urban development department stated that it will be a 15-day long IEC campaign, which will cover all 115 urban local bodies of the state. "A 15-day IEC campaign on safe septic tank cleaning will be launched across all ULBs from August 15. A preparatory meeting was held under the chairpersonship of Usha Padhee, principal secretary, H&UD department, with ULB officials through video conferencing," the announcement reads. The department has stated that the campaign will focus on community awareness, safe desludging, and promoting mechanised cleaning to ensure safety, dignity, and zero manual entry in septic tank operations. It also specified the safety measures to be followed for the septic tank cleaners and barred manual scavenging. However, due to lack of awareness and implementation issues, the state in the past witnessed several tragic incidents involving the sanitation workers. "We are aware of the situation and the risk core sanitation workers take during their day-to-day job. The awareness drive to be launched by the department will cover all these issues and raise awareness on safety," an urban development department official said. He said during the awareness drive, the civic body officials will also be sensitised on the safety of the sanitation workers. 1 2 Nagpur: The under-construction slab of the rear gate of Koradi temple crashed late Saturday, injuring 17 labourers, who were extricated from the rubble and rushed to hospital. Though there were no casualties, the accident sent shockwaves through the city's key pilgrimage centre, which was being redeveloped by Nagpur Metropolitan Region Development Authority (NMRDA). The development agency's commissioner Sanjay Meena said, an inquiry will be conducted and action taken against the contractor, if found guilty. The crash happened on the temple's rear side, which has been cordoned off and is currently inaccessible to devotees. Officials said, at least 15 workers were atop the scaffolding when it gave way. Rescue operations were launched swiftly with teams from National Disaster Response Force (NDRF), city police, fire brigade, revenue department, and NMRDA pressed into service. Nagpur collector Vipin Itankar confirmed 17 workers sustained injuries and nobody died. "We are following protocols of rescue, treatment, and rehabilitation," he told reporters at the spot. Itankar stated he was in touch with guardian minister Chandrashekhar Bawankule, a key patron and driving force behind turning the temple into a major tourist draw. Jaipur: Lesser Florican (Sypheotides indicus), once a vibrant emblem of Rajasthan's monsoon grasslands, has now almost vanished from its core breeding grounds in Ajmer, Kekri and Shahpura. This breeding season, wildlife researchers found only a single male, a steep fall from five in 2024 and 39 in 2020, signalling a catastrophic 97% decline in the wild. A recent landscape survey by the Bombay Natural History Society (BNHS) confirmed the grim numbers. The lone male, belonging to the smallest member of the bustard family and locally called Kharmor, was spotted near Bandanwara. "The situation is alarming. These endemic birds return to Rajasthan every monsoon to breed, usually arriving by late June after crops are sown. This year, only one was recorded," said BNHS researcher and wildlife scientist Sujit Narwade. In 2023, the forest department declared a 931-hectare conservation reserve in Arwar village, Ajmer, for the Lesser Florican — one of four bustard species in India, all on the IUCN Red List. Historically, the bird's breeding and non-breeding habitats were semi-arid grasslands. Today, invasive shrubs have overtaken much of this land, making it unsuitable. Experts warn that Rajasthan still has about 5,000 hectares of pastureland in this region, and timely restoration could benefit conservation. Shrinking grasslands due to agriculture, mining and overgrazing have forced the species to adapt to farmlands, coexisting with local communities. Yet, pesticides have turned these unprotected agropastoral areas into unsafe breeding zones. IUCN member Dau Lal Bohra said , "The proposal to declare certain lands as Biodiversity Sites allowing regulated agriculture while protecting the birds remains stalled," he said. With this, future of forest department's conservation breeding programme at Shokaliya, Ajmer, in partnership with the Wildlife Institute of India, also looks bleak as the wild population teeters on the brink. "In two years, 11 eggs have hatched successfully — but with numbers in the wild at rock bottom, the survival of this grassland dancer remains uncertain," said a forest official.
