Chef Brando Moros Came to Egypt & Cooked Its Camels (The Michelin Way)

'Cooking with this view is just such an amazing experience,' Chef Brando Moros of 11 Woodfire said, standing in Ramla by Marakez's open kitchen, the North Coast's limestone edges dropping away to a tide that moves slow and silver. 'Beautiful beaches, beautiful nature, beautiful sea… I'm in paradise cooking.' From tonight through August 12, the Colombian-born head chef of Dubai's Michelin-starred 11 Woodfire joins WHEN WE EAT and Ramla's Signature Dinner Series - a gathering that brings world-class chefs to one of Egypt's most striking dining rooms. Ramla's long tables stretch beneath the open sky, the hum of conversation folding into the rhythm of the waves. Moros's style is rooted in clean, honest plates, where ingredients take the lead and flame becomes a storyteller. 'Barbecuing or grilling is a worldwide culture,' he said. 'Every culture has its own ingredients, its own spices. This allows me to experiment, to explore different traditions and combine flavours.'His week began with a trip to the camel market - heat pressing in, the scent of hay in the air - a moment that would follow him into the kitchen. 'It completely blew my mind. You start cooking with intention. It's not only about creating dishes, but about transmitting feelings.'Over the next three nights, each course will carry something of that intention: a trace of Colombia, a nod to the markets and spices of Egypt, and the unifying warmth of woodfire. Tezukuri: A new temaki bar by Chef Neha Mishra of Kinoya is coming soon
It's always good news when two powerhouses in the food and beverage industry team up for some food-related quests, and this new pairing featuring some top-tier names comes with the promise of an unmissable dining concept – a temaki bar by Chef Neha Mishra. Neha Mishra, chef, restauranteur, Kinoya, and Panchali Mahendra, CEO of Atelier House Hospitality, bringing to you concepts like 11Woodfire, Gerbou, Mohalla and more, are bringing a brand new concept to the city. Like many great ideas, this one was born on a whim, at Mishra's birthday last year, where a spread of DIY temaki rolls sparked inspiration between the pair. Now, they're turning that spark into a full-fledged concept dedicated to all things temaki. Say hello to Tezukuri – temaki bar and kissa speakeasy, coming soon in Q3, 2025. How it came to be We all know and love Kinoya, having started as a supper club and now making waves not only in Dubai, but also in London, for some of the best, heart-warming, soul-repairing Japanese ramen around town, casually scoring a Bib Gourmand on the Michelin Guide and the third spot on MENA's 5o Best. This will be a name completely independent of that identity, a new brand sharing no resemblance to any of Kinoya's offerings. Set to be all about temaki, the venture will be a new Japanese dining concept, emphasizing temaki and a unique speakeasy bar with a specialised cocktail offering. The menu will feature a diverse selection of temaki, freshly prepared to preserve flavour and texture. The set-up of the venue and the concept will be such that diners will be able interact with chefs during meal preparation, making for a refined, interactive dining experience. When to expect the opening? While we wait eagerly for the exact opening date to be announced, we can pacify ourselves with this information – it's being expected that the opening will be between August and September, explained Mishra in an Instagram post announcing the upcoming collaboration. 'We are excited to introduce this interactive dining concept, which combines culinary artistry with engaging experiences. Tailored to resonate with the city's appetite for innovative Japanese cuisine, doing this with one of the most talented chefs in the city, and my friend, is going to be a fun ride,' said Panchali Mahendra, in an official press statement. 'As a gaijin who has dedicated their life's work to the pursuit of understanding and creating (my own adaptation of) Japanese cuisine, this feels like a natural progression. Other than being a chef, creating concepts and being an operator appeals to me equally — this time from a unique perspective of being a conductor of the orchestra and allowing the craftsmanship to come from the masters. Singaporean chef Akmal Anuar's Malay restaurant in Dubai earns spot on Michelin Guide, Lifestyle News
Accomplished Singaporean chef Akmal Anuar, who already owns 10 restaurants around the world, has added another accolade to his already impressive list of achievements. The F&B entrepreneur's restaurant Harummanis has been officially recognised in Dubai's latest Michelin Guide. The Dubai-based restaurant took to social media last Friday (May 23) to announce the news. The caption read: "We are officially in the Michelin Guide!" In the post, the restaurant extended its heartfelt thanks to those who have supported it over the years—from guests and staff to family and friends. Harummanis has come a long way since its humble beginnings in 1992 as a local hawker stall in Teck Whye Lane serving authentic Malay cuisine. It has since gone international, and the Dubai-based restaurant continues its mission to bring Malay flavours to the world stage. At the heart of its success is Akmal's dedication to honouring the culinary legacy of his parents, who run the hawker stall. Through Harummanis in Dubai, he offers a contemporary interpretation of traditional Malay recipes. "Today marks the day that I've fulfilled myself as a chef, son and a dad. "To see my parents attend and be up on stage with them and receive their first Michelin award is a beautiful thing," he wrote. While this is a first for Harummanis, it isn't Akmal's only experience with Michelin prestige. His other Dubai-based restaurant Goldfish was awarded the Bib Gourmand for the fourth year running. His other Dubai-based restaurants include one-Michelin starred 11 Woodfire, the Japanese-Italian fusion Osteria Funkcoolio and patisserie Sam Tarts. What to expect at Harummanis According to the official Michelin Guide website, dishes at Harummanis are praised for their "perfectly spiced" and "balanced" flavours. Standout dishes that diners can look out for include the six-hour cooked rendang made with 20 spices and ayam geprek complemented by sambal belacan. It is best to come in a group as dishes are made for communal dining. If a trip to Dubai for a meal there isn't feasible for you, there's good news.
