Mary Berry's classic lemon drizzle cake recipe has been a hit for decades, and now the former Great British Bake Off judge has shared her popular traybake version Lemon drizzle cake remains a firm favourite amongst bakers, but Mary Berry has transformed it into a brilliant traybake version that's absolutely perfect for summer get-togethers. The recipe notes explained: "This really is a top favourite. It is always moist and crunchy. "The cake needs to be still warm when the topping is added so that it absorbs the lemon syrup easily, leaving the sugar on top. Do allow the cake to cool a little, though, if it is too hot, the syrup will tend to run straight through." This treasured recipe hails from Mary Berry's Baking Bible book, and has been winning hearts since the 1960s, reports the Express. This is how you can replicated Mary Berry's lemon drizzle traybake at home: Mary Berry's lemon drizzle traybake Ingredients For the cake 225g butter, softened 225g caster sugar 275g self-raising flour Two teaspoons of baking powder Four eggs Four tbsp of milk Two lemons, grated rind For the crunchy topping 175g granulated sugar Juice of two lemons Method Begin by preparing your 12x9 inch traybake tin with baking parchment, ensuring you press it firmly into each corner. Next, heat your oven to 180C or 160C (fan). Combine all the cake ingredients in a generous bowl and whisk together for approximately two minutes until thoroughly combined. Pour the batter into your lined tin, making sure to scrape every last bit from the bowl and smooth the surface with a spatula. Pop into the centre of your heated oven for roughly 35 minutes, or until the sponge bounces back when gently touched. Let the traybake have a breather in the tin for a bit before gingerly transferring it to a wire rack. For the crowning glory, combine the lemon juice and sugar, then dollop this over the bake while it's still slightly warm. Once it's cooled down, chop it into squares and savour with custard, ice cream or just as it is.

Crank up your oven to 180C (or Fan 160C/Gas Mark 4). Grease and line two sandwich tins with baking paper, the Express notes. 2. Begin by melting instant coffee in a bowl with a tablespoon of piping hot water until it's smooth as silk. 3. Heave all your ingredients - the baking spread, caster sugar, self-raising flour, eggs, and baking powder into a sizeable mixing bowl. Toss in the coffee concoction and whisk it like your life depends on it until the mixture is lustrously smooth. 4. Split the batter evenly between the two prepared tins and slide them into your preheated cooker. Let them bake for 25 to 30 minutes, just until they've puffed up proudly. 5. Let the cakes cool in their tins for a while, then carefully turn them out onto a wire rack, making sure to take off the baking paper. 6. For the icing, mix the butter, icing sugar and coffee essence in a bowl until you get a smooth, creamy mixture. Once the cake is completely cooled, sandwich the two layers together with the icing and position it on a serving plate. 7. Your delicious coffee cake is now ready. For the final touch, sprinkle a bit of icing sugar over the top before serving. Mary Berry is a 90-year-old English food chef, writer and TV presenter. She has published more than 75 cookery books, including the best-selling Baking Bible in 2009. She released her first book in 1970. Mary Berry's exciting new project to celebrate 90th birthday milestone
The baking queen is working on something special with the BBC Mary Berry is showing no signs of slowing down at 90 as the Queen of puds lands another BBC show. After celebrating the milestone birthday in March, Mary is filming a special series in celebration of her life and favourite recipes. It's set to feature some special guests too. Cameras have started rolling on Mary Berry 90, which will be shown on the Beeb later this year. A source said: 'Mary is a national treasure so what better way to celebrate her than a new series. It'll be a tribute to the Mary's joy of cooking and sharing good food.' It will feature some of the icon's favourite memories plus her best-known fuss-free recipes for every occasion. It's being made by the production company and much-loved team at Sidney Street who are behind her series Foolproof Dinners. It ties in with her cookbook of the same name. It will be a six-episode series, coming to screens in Autumn 2025. Much-loved Mary has enjoyed a glittering career, gracing our TVs for five decades and selling more than 12 million cook books. The former Great British Bake Off host studied at Le Cordon Bleu in Paris before becoming food editor at Ideal Home magazine. She's published more than 75 cookery books, including her best-selling Baking Bible in 2009. Her first book was The Hamlyn All Colour Cookbook in 1970. Hosting several television series for the BBC, most famously The Great British Bake Off with Paul Hollywood until 2016, her most recent series, Mary's Foolproof Dinners, saw her cooking and conversing with celebs. She was made a dame for services to culinary arts in 2021. She picked up her honour at a ceremony with King Charles - then a Prince - at Windsor Castle. In a message for her 90th birthday, Prince William - his son - left Mary in tears with his well wishes. He said: "I want to wish you a very happy 90th birthday. You are a true national treasure and we've loved working with you over the years. Have a fantastic day today. I dread to think who's cooking your cake and the criticism they might get but good luck and I hope it goes really well." Dame Mary has also marked her birthday by joining Instagram for the first time. Still approaching life with vigour, she sprinkles joy on everything she does. And the secret to her long and healthy life? Mary says her genes are good, with her mother, Marjorie, living to be 105. 'She didn't go to gyms and I couldn't agree with her more,' laughed Mary. Mary, who has been married to Paul Hunnings for 67 years, this week picked up the Special Award at Fortnum's Food and Drinks Awards.
