The setting is timeless yet unpretentious — think low lighting, locally crafted ceramics, and the subtle hum of live acoustic music drifting through the warm island air. The menu leans into seasonal Mediterranean cuisine, with a focus on traditional techniques and biodynamic ingredients. Paired with a crisp natural wine, the meal felt less like a restaurant service and more like a soulful, shared ritual. As the evening sun slipped beneath the horizon, it was clear that Savina isn't just about food — it's about reconnecting with the land, the season, and the simple beauty of slow dining done right. It felt like the chic, coastal answer to a Soho House morning. Lunch at Cálido was perhaps the most surprising: a vibrant fusion of Mediterranean and Asian influences. Think tuna poke with preserved lemon, citrusy ceviche sprinkled with edible flowers, and sake-infused mocktails garnished with shiso. We followed it with a relaxed dip at the poolside DA'MAR, where wood-fired pizzas and natural wines added to the breezy, boho vibe. Hilton's to open Curio Collection hotel in UK in 2026

Hilton is continuing the expansion of its Curio Collection hotel brand in the UK with the signing of the Derby London City, which is set to open in early 2026. This development, signed under a franchise agreement with real estate developer and operator Dominus, marks the brand's tenth property in the UK. It also reflects Hilton's growing luxury and lifestyle portfolio, which recently celebrated its 1,000th hotel launch worldwide. Hilton UK, Ireland and the Nordics development vice-president Nick Smart said: 'Curio Collection by Hilton's continued expansion in the UK is a testament to the popularity and commercial success of our forward-thinking lifestyle brand.' The hotel will be owned by Dominus and managed under its Dominus Hospitality platform. The project involves transitioning a previous office space on Great Tower Street into the latest hospitality venture. Located in London's financial district, the Square Mile, the Derby London City aims to serve the needs of business travellers with 237 guest rooms, including ten suites. The property will offer an all-day dining restaurant, a 24-hour gym, meeting rooms, and private dining facilities. Dominus CEO Preet Ahluwalia said: 'As owners and operators of Lost Property St Paul's, we knew we could leverage our expertise, in partnership with Hilton, to deliver another Curio Collection hotel in a prime location. 'Since we acquired the site on Great Tower Street in 2023, we've taken a sustainable design approach to refurbishing and upgrading the existing building, to create a hotel that pays tribute to the past and offers an exceptional guest experience in the heart of London.' The property is set to support the City of London Corporation's Destination City programme, which aims to promote the Square Mile as a location for both business and leisure. City of London Corporation Planning and Transportation Committee chairman Tom Sleigh said: 'The City of London's new hotel stock will play a major role in realising the 'Destination City' growth strategy, by helping to accommodate the rapidly rising numbers of visitors and workers coming to the Square Mile, every day.' Hotel del Coronado, part of Curio Collection by Hilton, has announced the completion of its extensive restoration, with the revitalisation of the Victorian building. The move marks the final step in Blackstone Real Estate's plan to preserve the hotel's legacy. Exceeding $550m, the project has revitalised the building, introducing modern amenities while maintaining its historical charm. Blackstone Real Estate Americas Asset Management head Rob Harper said: "Blackstone has been dedicated to preserving Hotel del Coronado's iconic status as a National Historic Landmark while ensuring it remains a timeless destination for future generations.' The restoration of the Victorian Neighborhood is comprehensive, including a total refurbishment of the front porch, lobby, main entry, and drive experience. All Victorian guest rooms, the garden courtyard, and event spaces such as the Crown Room have been updated. Additionally, two new dining destinations, Nobu Del Coronado and Veranda, have been added to the hotel's offerings. Burton Studios served as the architect of record for the Victorian Garden Courtyard, and Heritage Architecture & Planning's David Marshall offered historical architecture consultation. The project also saw a partnership between Wimberly Interiors, WATG, and GSB. Each of the hotel's guest rooms is unique, with redesigned bathrooms that feature vanities and classic checkerboard marble flooring. In addition, the restorations of the Crown Room, Coronet Room, and Ocean Ballroom integrate historical elements with modern technology and design, including a preserved 1888 fresco and updated lighting and sound systems. ALL I can hear is the rustling of the tamarisk trees, splashing water and the occasional scrape of a patio chair. My inability to relax on holiday is certainly being tested. I could get used to this. 5 5 That's the ethos of the Numo Ierapetra Beach Resort tucked into the southern curve of Crete — slow and easy living. Having joined the Hilton's Curio Collection last year, the adults-only 5H resort still feels sparklingly new, despite having opened its doors in 2021. I spent the next few days in utter bliss. Barely an hour after checking in, my first stop was the spa for the hotel's complimentary 15-minute massage. I was surprised at how such a short session was one of the best I've ever had. The stubborn knots lining my shoulder blades were easily unkinked within a few minutes. The relaxation continued at the hotel swimming pools, with two to choose from. The main, bigger pool is the most popular, lined with sun loungers covered in squishy striped covers you sink into as you sunbathe, or snooze. Live DJ sets and even saxophone players sprang up throughout the day, but they did not feel overwhelming. There is just a laid-back, beach club vibe. I became a frequent visitor to the pool bar too, making it my mission to try all the signature cocktails. The Numo Tequila Sunrise was a firm favourite. The TUI guide to Crete from best beaches to passport rules The smaller, tucked-away swimming pool is the place for a quiet escape, with no music and just serene, bright-blue water overlooked by the mountains. While Crete doesn't have private beaches, the dark sandy one behind Numo feels secluded enough when swimming in the Mediterranean Sea. Fish tacos But the star of the show was my grandly named King Evergreen Absolute Suite, which was surrounded by a huge outdoor deck with its own plunge pool. Rooms are inspired by the tamarisk trees that line the coastline, with muted green, grey and brown decor. Even the entry-level rooms come with this modern palette and a balcony or terrace. My suite was definitely a step up, though, with a cosy lounge area, spacious bedroom and huge open-plan bathroom complete with a roll-top bath. A day of drinking wine on the patio meant I needed to line my stomach, and stays at the Numo Ierapetra Beach Resort can include breakfast or half-board with dinner. The buffet restaurant Tamarisk has some of the best views of the house, with the pool to one side and the beach to the other. But what the buffet lacks in size, it makes up for in taste. One evening, my rich lamb was accompanied by spinach orzo, and a cabbage and kimchee salad. The next day, I gorged on creamy pasta with barbecued chicken and a variety of Greek salads. The spread at breakfast includes fresh hot pastries, bread, fruit and cooked options. There is also a speciality restaurant called Menoa, serving Peruvian cuisine such as fresh fish tacos, and you will get a discount if staying half-board. Guests can head to Kafené, the onsite cafe and gift shop, for an authentic Greek coffee made by heating it in sand. I was amazed by how quiet the resort felt, despite being at full capacity. And there is more than enough to keep you busy. A highlight was the outdoor cinema, screening films such as Mamma Mia! and Barbie every evening. You can spend the afternoon browsing the hotel's clothes shop before a personal training session at the gym. While the resort does its best to stop you from wanting to leave, we took a day trip to nearby Kristas. One of the oldest villages on the island, it has pretty, winding alleyways and hundreds of plants surrounding doorways. 5 5 It is also the best place for a souvenir, with locally made jewellery and clothing stores alongside more touristy trinket spots, selling magnets and pottery. It is only as the midday heat started getting to me that I was tempted back to the hotel for a dip in the ocean before yet another delicious dinner. I had certainly never felt so zen. Who needs yoga when you can head to Numo instead?
