HeidelbergTime: 30-40 minServings: 4 servings 2-3 tsp sunshine seasoning(see below) 4-5 boneless skinless chicken thighs(5 ounces each) Olive oil ½ cup of honey 2 Tbsp yellow mustard ¼ tsp red pepper flake Preheat oven to 400 degrees. Rub spice blend over both sides of chicken and coat with olive oil. Place chicken on a foil lined baking sheet and bake until done, approximately 20-25 minutes. Mix honey, mustard, and pepper flake until combined. Brush all over chicken. Enjoy! Ingredients: Ginger, Thyme, Red Pepper, Turmeric, Allspice, Cilantro, Garlic, Onion, Curry Powder & Smoky Paprika 1. Combine all of the spices in a small bowl. HeidelbergTime: 10-15 minServings: 4 servings 1 pound ground chicken 1 large egg ¼ cup oats 1 small onion, grated Cloves garlic, minced 4 oz feta cheese crumbled ¼ cup sun dried tomatoes, finely chopped ½ tsp dried dill or 1T chopped fresh dill 1 Tablespoon Chef's Tuscan seasoning(if you don't have, oregano will work) ½-1 Teaspoon kosher or sea salt 1-2 Tablespoons olive oil or avocado oil for cooking In a large mixing bowl, combine ground chicken, egg, oats, grated onion, minced garlic, sun-dried tomatoes, dill, oregano, salt, and black pepper. Mix by hand until just combined. Then gently fold in the crumbled feta cheese. Divide the mixture into 4 equal portions, and shape into burger patties. Heat a skillet or grill pan over medium heat and add the olive oil or avocado oil. Cook the patties for about 5-6 minutes per side, or until cooked through. Serve in toasted pretzel burger buns or lettuce wraps with tzatziki sauce on top. Enjoy! Chef note: Suggested toppings: sliced cucumbers, tomatoes, or red onion for extra added freshness.
